The second edition of Hokol Vuh was hosted
at Hacienda Aké, in Tixkokob, Yucatan, on
November 23, 2019. It was a sensory
experience where each dish is a special
creation inspired by the Mayan culture, paired
by Moët & Chandon and prepared in an open
kitchen format.
La segunda edición de Hokol Vuh se celebró en
Hacienda Aké, en Tixkokob, Yucatán, el 23 de
noviembre de 2019. Era una experiencia
sensorial donde cada plato es una creación
especial inspirada en la cultura maya, combinada
por Moët & Chandon y preparada en un formato
de cocina abierta.

Hokol Vuh’s project is much more than a
celebrity chef dinner, it is a program run by
the Haciendas del Mundo Maya Foundation
which encourages farmers to improve their
yields, conserving their practices and species,
especially the indigenous corn varieties and
generating opportunities for access to the
Yucatecan gastronomy market.

El proyecto de Hokol Vuh es mucho más que
una cena de chefs famosos, es un programa
dirigida por la Fundación Haciendas del Mundo
Maya, que alienta a los agricultores a mejorar
sus rendimientos y volúmenes, conservando sus
prácticas y especies, especialmente las indígenas
variedades de maíz y oportunidades de acceso al
mercado de la gastronomía yucateca.

Melipona
The Stingless Mayan Bee La Abeja Maya Sin Aguijón
This unique and amazing genus of stingless
bees is considered sacred by the Maya who
cultivated them for many centuries. Due to
the healing properties of the honey the Maya
used it along with other products that this
bee produces, pollen, wax and propolis.
Melipona hives live in hollowed-out tree
trunks. For cultivation, bee hive part of the
tree trunk is removed and placed nearby the
house or garden. Melipona bees do not form
honeycombs, they build honey filled wax
spheres, which are gently punctures by a
sharp wooden stick and honey is drained.
Este género único y sorprendente de abejas sin
aguijón es considerado sagrado por los mayas que
las cultivaron durante muchos siglos. Debido a
las propiedades curativas de la miel, los mayas la
usaron junto con otros productos que produce
esta abeja, como polen, cera y propóleo.
Las colmenas de Melipona viven en troncos
ahuecados. Para el cultivo, se retira una parte del
tronco con colmena del árbol y se coloca cerca de
la casa o el jardín. Las abejas melipona no forman
panales, construyen esferas de cera rellenas de
miel, que son pinchadas suavemente por un palo
de madera afilado y se drena la miel.

the Maya, until sugar cane was brought by
Europeans in the 16th century.
A special Mayan ceremony in honor of the
Melipona bee is performed at Xel Ha
meliponario twice a year to honor ancient
Mayan Traditions.
La miel de melipona fue un edulcorante primario
para los mayas, hasta que los europeos trajeron
la caña de azúcar en el siglo XVI.
Una ceremonia maya especial en honor a la abeja
Melipona se realiza en el meliponario en Xel Ha
dos veces al año para honrar las antiguas
tradiciones mayas.
Honey boutique Casa de las Mieles Mexicanas
at hotel Diego de la Selva in Tulum is a place
for honey connoisseurs who would appreciate
the variety and rare taste of their selection.
It is a result of work of Stephane Palmieri,
president of the Melipona Maya Foundation,
who is running a project aiming to recover the
production and restore the cultivation of this
endemic Yucatecan bee.
La boutique de miel Casa de las Mieles Mexicanas
en el hotel Diego de la Selva en Tulum es un lugar
para los conocedores de la miel que apreciarían
la variedad y los sabores de su selección. Es
el resultado del trabajo de Stephane Palmieri,
presidente de la Fundación Melipona Maya, quien
está ejecutando un proyecto con el objetivo de
recuperar la producción y restaurar el cultivo de
esta abeja endémica yucateca.

The 13th edition of this sacred Mayan journey will be held
in 2020 on May 23 - 24.
It is an ancient ritual performed by the Maya, crossing in
their canoes to Cozumel to honor the goddess of fertility
Ixchel. Over 300 volunteers train to participate in this
challenging adventure.
