SPIRIT OF IOWA n Rub the ham with the paste. n Put the ham cut-face down in a roasting pan. n Add the root beer up to 2 inches on the ham. n Bake according to the ham wrapper instructions. BOURBON GLAZED CARROTS 1/2 cup butter 2 pounds carrots, peeled, cut into equalsized pieces 1/2 teaspoon salt, or more to taste 1/2 cup bourbon whiskey 1/3 cup brown sugar 1 pinch cayenne pepper, or to taste freshly ground black pepper to taste 2 sprigs fresh thyme leaves for garnish (optional) Directions n Melt butter in a heavy skillet over medium-high heat. When butter foams up, add carrots. n Season with salt and cook, stirring, until liquid from carrots evaporates and carrots begin to brown around the edges, 5 or 6 minutes. n Reduce heat to medium-low and carefully pour in bourbon. n Cook and stir until bourbon is almost evaporated, about 2 minutes. n Sprinkle in brown sugar. Stir until carrots are almost cooked through, about 5 minutes. n When carrots are nearly tender, raise heat to medium-high to thicken the glaze, 15 to 30 seconds. n Season with cayenne pepper and ground black pepper. n Transfer to serving dish and garnish with fresh thyme leaves, if desired. TOMATO VINAIGRETTE 3/4 cup olive oil 1/4 cup apple cider vinegar 1 shot of River Pilot Vodka 1 clove garlic, chopped 1 teaspoon dried oregano 1/2 teaspoon salt 1 fresh red tomato, chopped 1/4 teaspoon pepper Directions n Add all ingredients to blender, food processor or use a jar and an immersion blender. n Blend until smooth and no large chunks of garlic or tomato remain. n Store in a container with a tight-fitting lid for up to five days in the refrigerator.
