(whisky) prawn<br />

cocktail<br />

ingredients<br />

For the prawns<br />

• 6 tiger prawns, shells removed, heads removed,<br />

de-veined<br />

• 1 tomato, chopped<br />

For the Marie-rose sauce<br />

• 4 tbsp ready-made mayonnaise<br />

• 2 tsp tomato purée<br />

• 3-4 drops Tab<strong>as</strong>co sauce<br />

• 1 lemon, juice only<br />

• ½ onion, finely chopped<br />

• 1 tsp <strong>malt</strong> whisky<br />

To serve<br />

• Ice<strong>be</strong>rg lettuce, w<strong>as</strong>hed and dried, inner leaves only<br />

• pinch paprika<br />

preparation method<br />

For the prawns, bring a saucepan of water to the boil,<br />

add the prawns and cook for 5-6 minutes until pink.<br />

Drain and refresh in water until cool, then mix w<strong>it</strong>h<br />

the chopped tomato.<br />

For the Marie-rose sauce, mix the sauce ingredients<br />

in a bowl until well combined.<br />

To serve, stand the lettuce leaves around the insides<br />

of a serving gl<strong>as</strong>s, then spoon the prawn and tomato<br />

mixture into the bottom of the gl<strong>as</strong>s and pour over the<br />

Marie-rose sauce. Sprinkle w<strong>it</strong>h the paprika.<br />
