Réveillon aux couleurs ukrainiennes / A Ukrainian Christmas Eve Celebration<br />
Victoria BILLO, qui a grandi à Yellow Creek, se<br />
rappelle très bien des traditions ukrainiennes du<br />
réveillon de Noël qu’elle continue à perpétuer, fidèle<br />
à ses origines. En l’honneur des 12 apôtres, 12 plats<br />
étaient préparés <strong>et</strong> servis. Ces plats, qui ne doivent<br />
contenir ni viande ni produits laitiers, sont à base de<br />
céréales, de poisson, de légumes <strong>et</strong> de fruits.<br />
La coutume de Noël veut qu’une gerbe de blé soit<br />
dressée dans un coin de la pièce pour représenter<br />
l’unité de la famille, qu’une bougie soit allumée à<br />
proximité de la fenêtre en signe de bienvenue à<br />
toute personne sans abri <strong>et</strong> qu’un couvert de plus<br />
soit dressé en souvenir des êtres chers disparus<br />
dans l’année. Aussi, le kolach, un pain de Noël<br />
tressé, est placé au centre de la table avec une<br />
chandelle en son milieu. Le blé, si emblématique de<br />
la culture ukrainienne, sert d'ingrédient de base<br />
pour le premier plat, le kutia, fait de grains de blé<br />
bouillis mélangés à du miel, des graines de pavot <strong>et</strong><br />
des noix. « Selon une vieille superstition, on lance<br />
une cuillerée pleine de kutia. Si elle colle au plafond,<br />
la prospérité est assurée pour l’année à venir! »<br />
Préparation du blé :<br />
- Rincer le blé entier puis le faire<br />
tremper une nuit<br />
- M<strong>et</strong>tre le blé dans une marmite<br />
épaisse <strong>et</strong> le recouvrir avec l’eau<br />
dans laquelle il a trempé.<br />
- Faire cuire 6 heures en le<br />
mélangeant de temps en temps.<br />
- Ajouter une demi-cuillerée de sel<br />
avant qu’il n’ait fini de cuire.<br />

remembers very clearly the Ukrainian Christmas Eve<br />
traditions which she carries on, true to her roots. In<br />
honour of the twelve apostles, twelve dishes were<br />
prepared and served. The dishes, which must not<br />
contain any meat or dairy products, are made from<br />
grains, fish, veg<strong>et</strong>ables and fruits.<br />
Christmas tradition dictates that a sheaf of wheat be<br />
placed in a corner of the room to represent the unity<br />
of the family, that a lit candle be placed in the<br />
window as a sign of welcome to any homeless<br />
person, and that an extra place be s<strong>et</strong> in memory of<br />
loved ones who departed during the year. Kolach, a<br />
braided Christmas bread, is placed in the centre of<br />
the table with a candle in the middle. Wheat, so<br />
iconic in Ukrainian culture, is a central ingredient of<br />
the first dish, kutia, made from boiled wheat kernels<br />
combined with honey, poppy seed and nuts.<br />
“According to an old superstition, you’re supposed<br />
to toss a spoonful of kutia into the air. If it sticks<br />
to the ceiling, prosperity is guaranteed for the<br />
coming year!”<br />

Préparation de la sauce :<br />
- Faire tremper des graines de<br />
pavot dans de l’eau chaude, puis<br />
les broyer<br />
- Mélanger une part d’eau, une part<br />
de miel pour obtenir un sirop<br />
- Mélanger ce sirop avec la<br />
préparation à base de graines<br />
de pavot. On peut aussi y<br />
ajouter des noix <strong>et</strong> des<br />
morceaux de pomme.<br />
- Ajouter c<strong>et</strong>te sauce au blé cuit.<br />
Preparing the wheat:<br />
- Rinse the whole wheat, then<br />
soak overnight.<br />
- Place the wheat in a heavy<br />
pot and cover with the<br />
soaking water.<br />
- Cook for 6 hours,<br />
stirring occasionally.<br />
- Add ½ tsp. salt before it has<br />
finished cooking.<br />
Preparing the sauce:<br />
- Soak the poppy seed in hot<br />
water, then grind it.<br />
- Combine equal parts water and<br />
honey to make a syrup.<br />
- Combine the syrup with the<br />
poppy seed mixture. You can<br />
also add nuts and pieces of<br />
apple, if desired.<br />
- Add the sauce to the<br />
cooked wheat.<br />
