A native of Bordeaux, Chef Jean Claude was<br />
imbued with fine dining and cooking from<br />
an early age as he grew in his family’s catering<br />
business.<br />

After training at Ecole Hôtelier in Bordeaux… military<br />
service… working in the famed three Michelin star<br />
restaurant of the Troisgros family (early disciples of<br />
nouvelle cuisine) in Roane, France… and culinary recognition<br />
elsewhere in France, Senegal, and other international<br />
venues... Chef Jean Claude Dufour traveled to St. Barthélemy.<br />
Working for 10+ years as Executive Chef at two island 5-star<br />
luxury hotels, he chose to open L’Esprit in 2011, forging an<br />
entrepreneurial, epicurean path of restaurant ownership.<br />
In intervening years, Dufour – at 6 feet, 6 inches – soared<br />
to acclaimed status as his kitchen has become a towering<br />
island presence. It was for this reason, thus, that Chef Jean<br />
Claude was chosen by the island’s President to prepare a<br />
luncheon for sixty guests in connection with a visit of French<br />
President Emmanuel Macron in 2017. As something of a<br />
family enterprise, “JC,” as he is known to many, is supported<br />
outside the kitchen by his wife, Sonia. Working behind-the-<br />

de la nouvelle cuisine) à Roanne, en France… Et après s’être forgé<br />
une réputation culinaire en France, au Sénégal et dans d’autres<br />
coins du globe… Le chef Jean-Claude Dufour aura finalement fait<br />
route pour Saint-Barthélemy. En 2011, après plus de dix ans passés<br />
en tant que chef exécutif dans deux hôtels cinq étoiles de l’île, il aura<br />
choisi d’ouvrir L’Esprit, empruntant ainsi la voie de l’entrepreneuriat<br />
et de l’épicurisme comme propriétaire de restaurant.<br />
Au cours des années suivantes, Dufour — du haut de ses deux<br />
mètres — s’est vu hissé au rang de célébrité tandis que sa cuisine<br />
devenait incontournable sur l’île. Si bien qu’en 2017, le chef Jean-<br />
Claude fut choisi par le Président de la Collectivité pour assurer la<br />
préparation d’un déjeuner de soixante couverts, à l’occasion de la<br />
visite du Président de la République française, Emmanuel Macron.<br />
Véritable entreprise familiale, « JC », comme beaucoup l’appellent,<br />
