Pecorino stagionato sotto cenere<br />

come da usanza medievale. La sterilità<br />

<strong>del</strong>le ceneri assicura la genuinità <strong>del</strong><br />

prodotto e allo stesso tempo modifica<br />

le caratteristiche organolettiche <strong>del</strong><br />

formaggio diminuendo il suo contenuto<br />

d’acqua.<br />

Tempo di stagionatura: circa 90 giorni<br />

peso medio <strong>del</strong>la forma intera: 1,30 kg<br />

questo prodotto può essere porzionato, messo<br />

sottovuoto, in ATM.<br />

Pecorino matured<br />

under ashes<br />

Cenerino is a pecorino cheese matured under<br />

the ashes. Probably this kind of maturation<br />

may sound a little bit strange but it has ancient<br />

origins. As a matter of fact maturing under ashes<br />

is a medieval way to season the cheese. The<br />

sterility of the ashes ensures cheese’s genuinity<br />

and at the same time modifies its organoleptic<br />

features by lowering the cheese’s water content.<br />

Maturation period: 90 days approx.<br />
