Taking into consideration that 1880 may give a distorted picture because of the small<br />

number of workers, Farming (Figure XIII) has a steadily increasing trend through the years.<br />

As previously stated, the reason may be found in the fact that many Italians made up their<br />

minds and decided to stay in the United States for good. They did not need to earn as much<br />

money as possible in the shortest time possible to go back to Italy, and at the same time they<br />

were more willing to invest money in buying farms.<br />

Food and drink selling (Figure XIV) has a steady trend through the years, although it<br />

is important to note that the number of liquor dealers goes up and down in correspondence<br />

with particular moments in the country, such as Prohibition (see previous paragraphs).<br />
