Sono i classici tortelloni reinventati dallo chef Marco Toffolin, della Locanda da Lino a Solighetto, uno dei più noti ristoranti dell’area storica del Prosecco Superiore Docg, che ha scelto di utilizzare in modo originale prodotti tipici della pedemontana trevigiana per un primo ad effetto “amarcord”. Si parte dal ripieno, alla cui base c’è uno degli ingredienti storici della cucina veneta: la polenta, realizzata però qui con un tipo particolare di mais, il biancoperla, varietà della pianura trevigiana, in particolare nella sinistra Piave, riscoperta di recente, tanto da diventare Presidio Slow Food. La polenta bianca che ne risulta è una rara prelibatezza considerata oggi di gran pregio. Assieme alla polenta troviamo un altro prodotto antico, il Morlacco, formaggio tipico degli alpeggi del Monte Grappa. Prodotto tradizionalmente con latte di vacche di razza burlina, ha un sapore sapido e persistente che ne fa un elemento cardine della migliore tradizione gastronomica della Pedemontana del Grappa e dell’intera Marca trevigiana. E per chiudere c’è l’aggiunta della ricotta affumicata, formaggio della piana del Cansiglio ma con una produzione anche nel Solighese. Si ottiene con un antico metodo di conservazione che prevede l’affumicatura della ricotta fresca ed ha un tipico sapore antico di affumicato. Va consumata preferibilmente grattugiata su pasta, gnocchi e verdura cotta. Insomma, la storia e la tradizione che si fanno cucina. A trio of traditional products for a simple yet tasty dish: that’s the classic tortelloni reinvented by chef Marco Toffolin of the Locanda da Lino at Solighetto, one of the best-known restaurants in the historic area for Prosecco Superiore D.O.C.G., who has decided to use in an original way typical products of the Treviso foothills to make an “old-style” pasta dish. He begins with the filling, which is based on one of the historic ingredients of the Veneto’s cuisine: polenta, made here though with a particular type of maize, Biancoperla, a variety of Treviso’s plain. Grown especially on the left bank of the Piave, it has recently been rediscovered and has become a Slow Food Protected Product. The white polenta made from it is a rare delicacy and considered to be of very high quality. Together with the polenta we find another traditional product, Morlacco, a typical cheese from the Alpine pastures of Mount Grappa. Produced according to tradition with the milk of cows of the Burlina breed, it has a tangy, persistent taste that makes it a fundamental feature in some of the outstanding dishes of the cuisine of the Grappa foothills and of the entire Treviso area. And finally there is the addition of smoked ricotta, a cheese from the Cansiglio plain but also produced around Soligo. It is obtained using an ancient conservation method, which calls for fresh ricotta to be smoked and it has a typical old-fashioned smoky flavour. It is ideal grated over pasta, gnocchi or cooked vegetables. So here we have history and tradition transforming themselves into haute cuisine. ■ TORTELLONI AL MORLACCO E MAIS BIANCOPERLA INGREDIENTI PER 4 PERSONE / INGREDIENTS FOR 4 PEOPLE 500 gr. di farina 00/plain fl our 4 uova intere e 2 tuorli/4 whole eggs and 2 yolks 250 gr. di farina mais biancoperla/Biancoperla maize fl our 150 gr. di Morlacco trevigiano/Morlacco cheese ricotta affumicata/smoked ricotta burro, timo, sale e pepe/butter, thyme, salt and pepper PROCEDIMENTO / COOKING INSTRUCTIONS Preparate la pasta fresca con la farina le uova e un pizzico di sale. Fatela riposare mentre preparate il ripieno facendo una polentina con la farina mais biancoperla in cui farete sciogliere il morlacco. Salate, pepate e fate raffreddare. Stendete la pasta, tagliatela a quadrotti, ponete al centro una noce di ripieno al morlacco e richiudete a tortellone. Cuocete i tortelloni in acqua bollente, scolateli e saltateli in padella con burro fuso e foglioline di timo fresco. Disponeteli su di un piatto cospargeteli di ricotta affumicata e servite ben caldo. Prepare the fresh pasta with the fl our, eggs and a pinch of salt. Allow it to rest while you prepare the fi lling, making polenta with the Biancoperla cornfl our, into which you melt the Morlacco cheese. Add salt and pepper and allow to cool. Roll out the pasta, cut it into squares and put in the centre of each one a knob of the Morlacco fi lling and close it to form a tortellone. Cook the tortelloni in boiling water, drain them and sauté them in a frying pan with melted butter and some fresh thyme leaves. Place them on a dish or plate, grate smoked ricotta over them and serve piping hot. 47
