ualtiero Marchesi ha stipulato<br />
G un patto con la vita.<br />
Non invecchia chi continua ad interessarsi<br />
ai giovani, chi offre loro<br />
qualcosa di più che una fetta del<br />
proprio tempo, in modo che il tempo<br />
impiegato, piccolo o grande che<br />
sia, si trasformi in spazio e, da spazio,<br />
in un possibile incontro. «Molti<br />
dei ragazzi che sono passati dalla<br />
mia cucina sono oggi dei cuochi, degni<br />
di questo nome, capaci, in base<br />
alle proprie attitudini, di formare<br />
altre persone, altri entusiasti».<br />
Quella di Gualtiero Marchesi per<br />
la cucina è stata una vocazione,<br />
nata attraverso i genitori che possedevano<br />
l’albergo ristorante Al<br />
Mercato, in via Bezzecca, a Milano,<br />
e poi messa continuamente in discussione.<br />
La passione per il disegno e per la<br />
musica, l’opera in particolare, c’erano<br />
già come la fame di letture e il<br />
lavoro, impostato con rigore e sensibilità<br />
distingueva quel ristorante<br />
dagli altri, spingendo Gualtiero Marchesi<br />
a pensare in meglio.<br />
Il ristorante familiare nonostante<br />
i suoi successi, condivisi con ospiti<br />
come Mario Monicelli, Giovanni<br />
Testori, Gianni Agnelli, Luchino Visconti,<br />
Federico Fellini, Francesco<br />
Monzino lo vede emigrare, a quarant’anni,<br />
sposato e padre di due<br />
figlie, in Francia.<br />
Due anni di studio a bottega dai<br />
fratelli Troisgros, al ristorante Ledoyen<br />
a Parigi e al Chapeau Rouge<br />
di Digione, gli aprono gli occhi e la<br />
mente alle novità che di lì a poco<br />
daranno sostanza e forma alla Nouvelle<br />
Cuisine. «Tornai a casa - ricorda<br />
Marchesi - solo quando fui sicuro<br />
di aver imparato la semplicità».<br />
Apre il suo primo ristorante milanese<br />
nel 1977, conquistando la prima<br />
stella Michelin, seguita, l’anno<br />
successivo, da una seconda.<br />
A due anni dall’apertura, i gastronomi<br />
Gault e Millau, in una intervista<br />
al Time lo annoverano tra<br />
i quindici ristoranti al mondo che<br />
preferiscono.<br />
La terza stella arriva nel 1985, primo<br />
in <strong>Italia</strong> ad ottenerla. Nel 2008,<br />
sarà anche il primo, e questa volta<br />
al mondo, a riconsegnarle tutte,<br />
convinto che, ormai, si tratti di un<br />
gioco al rialzo, dove si sale e si scende<br />
per tenere alto il buon umore e<br />
le fortune dei critici.<br />
Vent’anni dopo Bonvesin de la<br />
Riva, Gualtiero Marchesi apre il suo<br />
ristorante in Franciacorta, all’Albereta<br />
di Erbusco.<br />
Un viaggio dalla città alla campagna<br />
che non sarà di sola andata, e<br />
che dopo varie tappe a Parigi, Roma<br />
e Cannes, lo scopre a ripensare a<br />
Milano nel 2008, con il Ristorante<br />
Teatro Alla Scala Il Marchesino, ora<br />
Ristorante Marchesi, nel tempio italiano<br />
della Musica lirica, per proporre<br />
la sua cucina totale.<br />
Innumerevoli sono i riconoscimenti<br />
e i premi, meritati nell’arco<br />
di una carriera lunga più di sessant’anni,<br />
ma quello che più sente<br />
suo è il ruolo di rettore di Alma, la<br />
Scuola Internazionale di Cucina <strong>Italia</strong>na.<br />
Arrivato al traguardo degli ottant’anni<br />
si è reso conto che il suo<br />
compito è creare una Fondazione<br />
che possa custodire e valorizzare il<br />
suo “sapere” e che sia attiva nella<br />
diffusione “del bello e del buono”<br />
approfond ispirazioni artistiche<br />
fondamentali per la cucina creativa.<br />

ones, who is able to offer<br />

just a bit of his time, so that<br />
the time spent, whether a lot or<br />
a little, can be transformed into<br />
space and then into an encounter.<br />
«Today, many of the people that<br />
passed through my kitchen are<br />
now cooks, worthy of that name, always pre-<br />
capable, based on their attitudes,<br />
to train other people, other enthusiasts».<br />
Gualtiero Marchesi had a calling for<br />
cooking, born through his parents,<br />
owners of the hotel and restaurant<br />
Al Mercato, in via Bezzecca, Milan, a<br />
calling which he put into question<br />
over time. His passion for drawing,<br />
for music, opera in particular were<br />
sent like the hunger for reading and<br />
work set with rigor and sensibility<br />
that distinguished that restaurant<br />
from the others, pushing Gualtiero<br />
Marchesi to think better.<br />
The family restaurant, despite his<br />
success, sh ared with guests like<br />
Mario Monicelli, Giovanni Testori,<br />
Gianni Agnelli, Luchino Visconti, Federico<br />
Fellini, Francesco Monzino,<br />
saw him emigrate at the age of forty,<br />
married and with two daughters,<br />
to France.<br />
Two years of workshop studies<br />
among the Troisgros<br />
brothers, at the Ledoyen<br />
restaurant in<br />
Paris and at the<br />
Chapeau Rouge<br />
in Dijon, open<br />
his eyes and<br />
mind to the<br />
news that<br />
will soon<br />
give form<br />
and substance<br />
to the<br />
Nouvelle Cuisine.<br />
«I went back<br />

when I was sure to have<br />
learnt simplicity». He opens<br />
his first restaurant in Milan in 1977,<br />
obtaining his first Michelin star, and<br />
then the second one the following<br />
year.<br />
Two years after the opening, the<br />
gastronomes Gault and Millau, in<br />
an interview for Time magazine,<br />
include him among their favourite<br />
fifteen restaurants in the world.<br />
The third Michelin star arrives in<br />
1985, the first in Italy. In 2008, he will<br />
be the first, this time in the world,<br />
to give them all back, now convinced<br />
that it has all become a game,<br />
where you go up and down a ladder<br />
to keep the critics in a good mood<br />
and in good fortune. Twenty years<br />
after Bonvesin de la Riva, Gualtiero<br />
Marchesi opens his restaurant in<br />
Franciacorta, “L’Albereta” in Erbusco<br />

A journey, from the city to the countryside,<br />
that will not be a one-way<br />
journey but, after a few stops in Paris,<br />
Rome and Cannes, in 2008 it takes<br />
him back to Milan, to the <strong>Italia</strong>n<br />
temple of Opera, with the Ristorante<br />
Teatro Alla Scala Il Marchesino,<br />
now Ristorante Marchesi, where<br />
he proposes his total cooking style.<br />
The awards and prizes he got along<br />
his career, lasting longer than 60<br />
years, are countless, but what he<br />
cares the most about is his role as<br />
Rector of Alma, the international<br />
School of <strong>Italia</strong>n Cuisine.<br />
After having reached the age of<br />
eighty years old he realized that<br />
his mission was to create an institution<br />
capable of preserving and<br />
enhancing his “knowledge”, active<br />
in spreading “the beautiful and the<br />
good” and deepening the artistic<br />
inspirations and essentials for creative<br />
cuisine.<br />

<strong>Italia</strong> sono andati sempre ciascuno per i fatti propri. È emersa<br />
con chiarezza la necessità di fare qualcosa di più unito, di superare<br />
gli schemi a cui siamo ancorati per raccontarci e promuoverci<br />
insieme».<br />
«Quello che mi fa onore - ha dichiarato Stefano Tredici - è<br />
che la Puglia è una regione con persone che hanno voglia di<br />
fare e di emergere. Il bello è che ho sentito fin dal primo momento<br />
una grande sintonia fra cos’è Borgo Egnazia e il pensiero<br />
di <strong>Italia</strong> a <strong>Tavola</strong> ed Euro-Toques».<br />
«Mobilitazione crescente dei cuochi e di tutti coloro che si<br />
occupano di enogastronomia - ha affermato Pecoraro Scanio<br />
- per promuovere un turismo sempre più di qualità e sostenibile<br />
in <strong>Italia</strong>. Dal convegno è scaturito quanto sia importante la<br />
realtà associativa, e quanto sia importante attribuirle un ruolo<br />
centrale in un Paese individualista come l’<strong>Italia</strong>».<br />
«Ciò che serve alla Puglia, e all’<strong>Italia</strong> in generale - ha commentato<br />
l’assessore Capone - è una logica di squadra. Gli operatori<br />
del settore turistico, dell’ospitalità e dell’enogastronomia,<br />
spesso si sono sentiti soli. Dare a tutte queste realtà un coordinamento<br />
è fondamentale per rilanciare il nostro sistema».<br />
Seppure non presente al convegno, il sottosegretario al<br />
ministero dei Beni culturali e del Turismo, Dorina Bianchi, ha<br />

Comincia all’Antica Osteria del Ponte<br />
a Cassinetta di Lugagnano (Mi), poi va<br />
oltre oceano, al Rex di Los Angeles, a<br />
soli 21 anni. Finalmente, nel 1993, approda<br />
in Asia, dove apre il ristorante Toscana<br />
all’interno dell’Hotel Ritz Carlton<br />

caso della miglior materia prima,<br />
di un’italianità che dev’essere ancora<br />
più italiana proprio perché all’estero,<br />
di un’evoluzione senza fine, di gusti e<br />
abbinamenti.<br />

Bombana a Pechino; l’ultima succursale<br />
del progetto si trova al Galaxy Macao.<br />

is the only <strong>Italia</strong>n one abroad<br />
with 3 Michelin stars, one of the most<br />
desired gourmet destinations in eastern<br />
Asia. This is Umberto Bombana,<br />
talented chef from Bergamo, proudly<br />
running his 8½ Otto e Mezzo at Landmark<br />
Alexandra, right in the heart of<br />
Hong Kong. He starts at the Antica Osteria<br />

The white truffle king went on<br />
to open 8½ Otto e Mezzo in Shanghai<br />
and the Opera Bombana in Beijing; the<br />
last among his projects can be found at<br />
the Galaxy Macao.<br />
Massimo Bottura is at the<br />
top of the new generation<br />
of <strong>Italia</strong>n chefs. His two<br />
restaurants, the three Michelin<br />
star Osteria Francescana<br />
and its minor brother<br />
brasserie Franceschetta 58 are<br />
both situated in Modena. Osteria<br />
Francescana gets its first Michelin<br />
star in 2002, the second one four<br />
years later, and the third one in<br />
2011. The restaurant entered the<br />
list of the best 50 restaurants in<br />
the world and for the last 7 years<br />
