French Toast Casserole<br />
Assemble on Christmas Eve and pop it into the oven when you get up<br />
and enjoy your gifts while breakfast is baking.<br />
1-1/2 lb loaf <strong>of</strong> French bread, sliced 1-inch thick<br />
8 eggs 3 cup milk<br />
4 tsp sugar 3/4 tsp salt<br />
1 tbsp vanilla extract 2 tsp butter<br />
Optional: cinnamon<br />
Garnish: maple syrup, honey or sliced strawberries<br />
DIRECTIONS:<br />
1. Generously butter a<br />
13”x9” pan or spray<br />
with non-stick vegetable spray.<br />
2. Arrange bread slices in a single layer over bottom <strong>of</strong> pan.<br />
3. Beat eggs, milk, sugar, salt and vanilla together and pour over<br />
bread. Dot with butter; sprinkle with cinnamon if desired.<br />
Cover and refrigerate overnight.<br />
4. Bake at 350 degrees for 45 minutes, until puffy and golden.<br />
Serve with maple syrup, honey or sliced strawberries.<br />
Serves 8<br />
