MainStreet Libertyville Prime Rib & Yorkshire Pudding Savory Yorkshire pudding is a traditional English treat... its texture is more like a popover or soufflé than a pudding! PRIME RIB: 1 cup all-purpose flour 1 tsp salt pepper to taste 9-1/2 lb boneless rib roast DIRECTIONS: 1. Combine flour, salt and pepper; coat roast and place in a shallow roasting pan. 2. Bake at 450 degrees 10 minutes; reduce oven temperature to 325 degrees and bake 2-1/2 hours longer or until meat thermometer registers 140 degrees. 3. Place roast on a carving board, reserving drippings for Yorkshire Pudding. Cover roast and let stand 5 to 10 minutes or until thermometer reaches 145 degrees (medium rare) before carving.
