Sweet Potato Crunch<br />
Sprinkle the top with mini marshmallows and place under the broiler<br />
until melted and golden for an extra-special treat.<br />
4 sweet potatoes, peeled, boiled and mashed<br />
1 cup margarine, melted and divided<br />
3 eggs 1 cup sugar<br />
1/2 cup milk 2 tsp vanilla extract<br />
1 cup brown sugar, packed 1/2 cup all-purpose flour<br />
1 cup chopped pecans<br />
DIRECTIONS:<br />
1. Combine sweet potatoes,<br />
eggs, sugar, 1/2 cup<br />
margarine, milk and<br />
vanilla; mix well. Pour into a<br />
2-quart casserole dish; set aside.<br />
2. Mix brown sugar, flour, pecans and remaining margarine<br />
together; sprinkle on sweet potato mixture.<br />
3. Bake at 350 degrees for one hour.<br />
