Shrimp Seviche<br />

2 pounds large, shelled cooked shrimp, tails <strong>of</strong>f<br />

4 tbsp “A Taste <strong>of</strong> Thai” garlic chili pepper sauce (or to taste)<br />

1/2 cup ketchup (or to taste)<br />

2 tomatoes 2 avocados<br />

1 small bunch cilantro 1 small red onion<br />

DIRECTIONS:<br />

1. Place shrimp in large serving bowl.<br />

2. Chop up tomatoes (drain all fluid).<br />

Chop up avocados (not too soon before<br />

serving as they will turn brown). Chop<br />

cilantro and slice red onion thin. Combine<br />

chili pepper sauce with ketchup. Adjust to<br />

your taste. This pepper sauce is VERY<br />

HOT. Make enough sauce to coat shrimp<br />

and other ingredients.<br />

3. Stir into shrimp, being careful not to make “mush” <strong>of</strong> the<br />

avocados. Enjoy! Everyone always likes this recipe – share<br />

it with friends.<br />

Santa’s Favorite Sugar Cookies<br />

Spend an afternoon making cookies with the kids...<br />

they’ll love adding the colorful sprinkles!<br />

1 cup powdered sugar 1 cup sugar<br />

1 cup butter-flavored shortening 1 cup oil<br />

1 tsp cream <strong>of</strong> tartar 1 tsp salt<br />

1 tsp baking soda 2 tsp vanilla extract<br />

4-1/2 cups all-purpose flour 2 eggs<br />

colorful sugar, sprinkles and jimmies<br />

DIRECTIONS:<br />

1. Cream sugars, eggs, oil and shortening<br />

in a large bowl. Sift together dry<br />

ingredients in a separate bowl, then<br />

add to creamed mixture. Stir in vanilla.<br />

Cover and refrigerate dough for 2 to 3 hours.<br />

2. Roll chilled dough into 1-1/2 inch balls;<br />

place on lightly greased baking<br />

sheets. Flatten each with a glass<br />

bottom that has been dipped in sugar.<br />

3. Sprinkle colorful sugar, sprinkles and<br />

jimmies over cookies.<br />

4. Bake at 350 degrees for 10 to 15 minutes or until edges are<br />

lightly golden. Cool cookies on a wire rack.<br />

Makes 2 to 3 dozen<br />
