GRATIN dAUPHINOISE<br />

(SCALLOPEd POTATOES)<br />

Function: BAKE<br />

Temperature: 175˚C (350˚F)<br />

Cooking Time: Approximately 1 hour<br />

yield: 6- 8 servings<br />

INGREdIENTS<br />

¼ kg (250g) Yukon gold potatoes<br />

salt and pepper<br />

1 Tablespoon butter, small dice<br />

½ cup (125ml) chicken stock<br />

1½ cups (375ml) cream<br />

½ cup shredded Fontina cheese<br />

METHOd<br />

1. Butter bottom of an 11" x 7" x 2" (28cm x<br />

19cm x 6cm) baking dish.<br />

2. Peel and thinly slice potatoes. Layer<br />

one-third of potato slices, slightly<br />

overlapping each o<strong>the</strong>r. Sprinkle<br />

potatoes with salt and pepper and dot<br />

with one third of diced butter. Repeat<br />

layering two more times.<br />

3. Combine chicken stock and cream and<br />

pour over potatoes. Cover with foil.<br />

4. Set wire rack to bottom rack height<br />

position. Turn FUNCTION dial to<br />

BAKE, Set Temperature to 175˚C<br />

(350˚F) and TIME to 1 hour. Press<br />

START/CANCEL button to activate.<br />

5. Remove foil and top gratin with cheese.<br />

Leave gratin on baking dish and<br />

turn FUNCTION dial to GRILL. Set<br />

TEMPERATURE to HI and set TIME<br />

to 7 minutes (approximately). Press<br />

START/CANCEL button to activate.<br />

Bake until <strong>the</strong> cheese is melted and<br />

golden and potatoes have cooked<br />

through and are soft.<br />

ROASTEd CORN ON THE COB<br />

Function: ROAST<br />

Temperature: 220˚C (425˚F)<br />

Cooking Time: Approximately<br />

15-18 minutes<br />

yield: 5 Roasted Corn on <strong>the</strong> Cob<br />

INGREdIENTS<br />

2½ Tablespoons softened butter<br />

5 corn on <strong>the</strong> cob<br />

5 Tablespoons freshly grated Parmesan Cheese<br />

Salt and pepper to taste<br />

5 pieces of foil 10” squares (25cm)<br />

METHOd<br />

1. Brush ½ Tablespoon of softened butter<br />

on one of <strong>the</strong> cobs. Place corn onto one<br />

of sheets of foil. Evenly sprinkle with 1<br />

tablespoon Parmesan Cheese all around<br />

<strong>the</strong> corn. Lightly season with salt and<br />

pepper and enclose in a foil packet<br />

tightly. Repeat with remaining corns.<br />

Place all cobs onto Breville enamel<br />

baking tray.<br />

2. Set wire rack to bottom rack height<br />

position. Turn FUNCTION dial to<br />

ROAST. Set TEMPERATURE to 220˚C<br />

(425˚F) and TIME to 15 minutes<br />

(approximately). Press START/CANCEL<br />

button to activate. Roast corn on <strong>the</strong> cob<br />

until tender and crisp.<br />
