Too <strong>of</strong>ten, visitor anglers to<br />
the ocean tend to put away<br />
ttjeir fishing tackle well too<br />
early. For many reasons, fan<br />
tends to bring about bursts <strong>of</strong><br />
competitive activity. Days<br />
are shorter; football starts;<br />
hunting season looms around<br />
the corner; storm windows<br />
need tending and yard work<br />
and leaf raking all interplay.<br />
Fishing somehow gets<br />
dropped down a notch or two<br />
in the priority scale.<br />
Sometimes, it falls right <strong>of</strong>f to<br />
zero. But <strong>for</strong> that group <strong>of</strong><br />
anglers who migrated permanently<br />
to a place near the<br />
ocean, It's a different approach<br />
entirely. Fishing tends<br />

In the making <strong>of</strong> wine, Nature Is the<br />

grapes <strong>of</strong> richness and infinite variety.<br />
It Ii after the harvest that man takes<br />
over the juice <strong>of</strong> the grapes to ferment<br />
and blend and match his skin with that<br />
<strong>of</strong> Nature's in creating wine.<br />
But in the making <strong>of</strong> cordials and<br />
liquers, man has a much wider field In<br />
which to exerclsi his Ingenuity, His end<br />
product Is designed to please the eye...th» palate...and In<br />
most cases the sweet-tooth.<br />
In simplest terms, a cordial or llquer (the terms ire<br />
synonymous) is an alcoholic beverage prepared by combining<br />
a spirit (most <strong>of</strong>ten brandy) with selected<br />
flavorings, and then adding sugar syrup in excess <strong>of</strong> JVa<br />
percent <strong>of</strong> the volume <strong>for</strong> sweetening.<br />
The cordial family has two main branches: the natural<br />
colored or "frgit" liquers and the "plant" liquers, mostly<br />
colorless.<br />
The method used in making the fruit cordials Is much<br />
like making f*a and Is called maceration. An example:<br />
fresh apricots and perhaps some dried fryit, are placed In<br />
a vat containing ISO to 130 pro<strong>of</strong> brandy. Fora half year or<br />
more the fruit Is left to steep in the brandy until It has absorbed<br />
almost all the aroma, flavor and color from the<br />
fruit. The brandy is then drawn <strong>of</strong>f and filtered; the<br />
remaining fruit mass, still containing some <strong>of</strong> the liquid,<br />
is extracted to the last drop by distillation, which In turn Is<br />
added to the original Infused brandy, giving It mare<br />
character.<br />
The flavored and naturally colored brandy Is sweetened<br />
to the desired richness by addition <strong>of</strong> pure sugar syrup. A<br />
year in vat storage and it is ready <strong>for</strong> marketing. Some <strong>of</strong><br />
the liquers produced through this maceration process are<br />
apricot, blackberry, cherry, ereme de cassis, peach »nd<br />
slow gin.<br />

Baked Bananas Chartreuse<br />
To provide servings <strong>for</strong> tix, you'll need; & firm<br />
bananas • peeled and cut In half lengthwise; 4 tblspns.<br />
sweet butter, melted; S tblspns, green Chartreuse; IVi<br />
CIS. lime juice, freshly squeezed; Vs cup brown sugar,<br />
firmly packed; 6 walnuts, shelled and chopped.<br />
Arrange bananas In a shallow baking dish In a single<br />
layer. Melt the butter In a heavy saucepan. Remove from<br />
flame, cool slightly', and add the Chartreuse, lime juice<br />
and brown sugar, mixing until thoroughly blended. Pour<br />
over the bananas and sprinkle with walnuts. Sake,In<br />
preheated 325 degree- oven <strong>for</strong> IS minutes. Serve Immediately.<br />

cool nights make ideal<br />
vacation, fishing and sleeping<br />
