*10-107 Water<br />

A sufficient quantity of drinking water shall be available for <strong>food</strong> preparation, wiping cloth<br />

solutions, <strong>and</strong> sanitization of <strong>food</strong>-contact surfaces. The water supply system hoses, piping, <strong>and</strong><br />

fixtures shall be fabricated of approved <strong>food</strong>-contact materials. The water supply system must be<br />

installed to preclude the backflow of contaminants into the drinking water supply.<br />

10-108 Wet Storage<br />

Packaged <strong>food</strong> may be stored in direct contact with drinking ice or drinking water if the<br />

packaging, wrapping, or container is not subject to entry of water. The storage of <strong>food</strong> <strong>and</strong>/or<br />

beverage, in undrained ice is prohibited.<br />

*10-109 Waste<br />

All sewage, including liquid waste, shall be disposed of according to law. Waste water shall not<br />

be discharged onto ground or into storm drainage system. Drainage from clean drinking ice may<br />

be discharged onto the surface of the ground provided it does not create a nuisance.<br />

*10-110 H<strong>and</strong>washing<br />

A. A minimum of five (5) gallons of drinking water shall be provided for h<strong>and</strong> washing.<br />

The required volume of water will be based upon menu, equipment, <strong>and</strong> hours of<br />

operation. Push button spigots on the water supply containers are not permitted.<br />

B. Soap <strong>and</strong> dispensed paper towels shall be provided at each h<strong>and</strong> washing station.<br />

C. A h<strong>and</strong> washing station that is capable of providing h<strong>and</strong>s-free continuous flowing warm<br />

water of adequate pressure shall be provided.<br />

D. A basin that is capable of capturing h<strong>and</strong> washing waste water <strong>and</strong> conveying it into a<br />

closed waste water container shall be provided.<br />

*10-111 Screening <strong>and</strong> Enclosures<br />

Screening or other provisions may be required to prevent the entrance of pests <strong>and</strong> debris.<br />

*10-112 Grounds<br />

Areas within the Temporary Retail Food Establishment shall be free from st<strong>and</strong>ing water, mud,<br />

dust <strong>and</strong> fecal material. Additional ground covering material may be required such as removable<br />

platforms, duckboards, wood chips or other suitable material.<br />

*10-113 Overhead Protection<br />

Overhead protection shall be provided <strong>and</strong> be made of wood, canvas, or other materials that<br />

protect the interior of the <strong>establishment</strong> from weather, or other contamination. Any grease<br />

producing equipment or equipment with open flames shall not be located under overhead<br />

protection.<br />
