INSECT, RODENT AND ANIMAL CONTROL<br />

8-1 PREVENTION<br />

8-101 Outer Openings, Protected<br />

A. Openings to the outdoors shall be protected against the entry of insects <strong>and</strong> rodents by:<br />

1. Closed, tight-fitting windows; <strong>and</strong><br />

2. Solid self-closing, tight-fitting doors; or<br />

B. If windows or doors are kept open, the openings shall be protected against the entry of<br />

insects <strong>and</strong> rodents by:<br />

1. 16 mesh to 1 inch (16 mesh to 25.4 mm) screens,<br />

2. Properly designed <strong>and</strong> installed air curtains to control flying insects, or<br />

3. Other effective means.<br />

C. Paragraph B of this section does not apply in customer areas if flying insects <strong>and</strong> other<br />

pests are absent due to the location of the <strong>retail</strong> <strong>food</strong> <strong>establishment</strong>, the weather, or other<br />

limiting conditions.<br />

D. Doors used only for delivery or emergency exit are not required to be equipped with selfclosing<br />

devices, but shall remain closed at all other times.<br />

E. All foundations shall be rodent-proof. Openings between the floor <strong>and</strong> bottom of outer<br />

doors, when closed, shall be no greater than one-fourth inch (1/4") (0.635 cm).<br />

8-102 Controlling Pests<br />

The presence of insects, rodents, <strong>and</strong> other pests shall be controlled to minimize their presence<br />

on the premises by:<br />

A. Routinely inspecting incoming shipments of <strong>food</strong> <strong>and</strong> supplies;<br />

B. Routinely inspecting the premises for evidence of pests;<br />

*C. Using methods, if pests are found, such as trapping devices or other means of pest control<br />

as specified in sections 8-103 <strong>and</strong> 8-104;<br />

D. Eliminating harborage conditions; <strong>and</strong><br />

E. Eliminating infestations.<br />

8-103 Insect Control Devices, Design <strong>and</strong> Installation<br />

A. Devices used to electrocute flying insects <strong>and</strong> that may impel insects or insect fragments<br />

shall be:<br />

1. Designed to have escape-resistant trays; <strong>and</strong><br />

*2. Installed so that:<br />

a. The devices are not located over a <strong>food</strong> preparation area; <strong>and</strong><br />
