*5-206 Drainage Of Equipment.<br />

A. Warewashing machines, refrigerators, walk-in refrigerators, freezers, walk-in freezers,<br />

warewashing sinks, <strong>food</strong>/vegetable preparation sinks, steam kettles, potato peelers, ice<br />

bins, containers of ice for use in <strong>food</strong> <strong>and</strong> beverages, ice machines, <strong>and</strong> similar types of<br />

equipment in which <strong>food</strong>, portable equipment or utensils are placed shall be indirectly<br />

connected to the waste line <strong>and</strong> shall drain into an approved receptor of such size, shape,<br />

<strong>and</strong> capacity to prevent splashing or flooding. The receptor shall be readily accessible for<br />

cleaning <strong>and</strong> inspection.<br />

B. Warewashing sinks <strong>and</strong> dishmachines installed prior to the effective date of these<br />

Regulations may be directly connected to the plumbing waste system provided there is a<br />

floor drain or floor sink installed within five (5) feet (1.5 M) immediately downstream of<br />

the sink waste line, <strong>and</strong> the fixture shall be connected on the sewer side of the floor drain<br />

or floor sink, <strong>and</strong> no other fixtures are connected to the waste line. The fixture <strong>and</strong> floor<br />

drain shall be trapped <strong>and</strong> vented as required by the 2009 International Plumbing Code or<br />

where local building departments have adopted codes equivalent or more stringent than<br />

the above, those codes shall apply (see Figure 4).<br />

C. In new or extensively remodeled <strong>retail</strong> <strong>food</strong> <strong>establishment</strong>s, each walk-in refrigerator<br />

used for iced products, hanging meats or which requires flushing shall either be equipped<br />

with a floor drain installed only with indirect waste <strong>and</strong> discharged through an air gap<br />

into an approved receptor or constructed so all parts of the floor of such walk-in<br />

refrigerator shall be graded to drain to the outside of the refrigerator through a waste pipe,<br />

doorway or other opening.<br />
