Crunchy Chicken Salad<br />

Serves: 5, ¾ cup each<br />

2 cups cooked chicken, chunked<br />

½ cup diced celery<br />

¼ cup chopped onion<br />

¼ cup plain yogurt or<br />

low-fat salad dressing<br />

¼ cup green pepper, diced<br />

½ cucumber, diced<br />

½ cup grapes, cut in halves<br />

1 small apple-peel on, diced<br />

15-20 crackers<br />

Directions:<br />

Combine the chicken, celery, onion,<br />

pepper, cucumber, grapes and<br />

apple with yogurt or salad dressing.<br />

Serve on crisp salad greens and<br />

place 3-4 crackers on each plate.<br />

Per serving: 180calories; 5g fat; 180 mg sodium<br />
