Braai grills are large and there’s often<br />
more than one, fired with wood or coal.<br />
Steaks, sausages (particularly the<br />
local delicacy boerewors), ribs, burgers,<br />

music is playing and the conversation<br />

and deft acidity that is fairly bright, and some<br />
smoky underbrush. On the palate it’s bright, with<br />
lively red berry fruit supported by bright berry fruit<br />
acidity and by smooth sweet tannins that have a<br />
slight burr, and flow into a clean fresh fairly tart<br />
finish. It’s quite drinkable, and will drink very well<br />
with succulent red meats or light stews … Well<br />

dark fruit. There is outstanding harmony and<br />

CEDAR �PLANK SALMON<br />
Soak the plank in water for 30 minutes<br />
before grilling, so that it doesn’t burn.<br />
Salt the heated up, smoky cedar plank<br />
to give the salmon skin added flavour.<br />
2 tbsp (25 mL) grainy mustard<br />
2 tbsp (25 mL) ketchup<br />
1 tbsp (15 mL) chopped fresh rosemary<br />
2 tbsp (25 mL) olive oil<br />
½ tsp (2 mL) chili powder<br />
Kosher salt and freshly ground pepper<br />
One 2 lb (1 kg) piece of salmon<br />
1. Combine mustard, ketchup, rosemary, olive oil,<br />
chili powder, salt and pepper. Spread over salmon<br />
and marinate for 30 minutes.<br />
2. Heat grill to high heat.<br />
3. Place soaked cedar plank on grill and leave for<br />
3 to 4 minutes or until you can smell or see smoke.<br />
Immediately turn plank, salt it liberally and place<br />
fish on top, skin-side down.<br />
4. Close cover and cook for 12 to 15 minutes or until<br />
fish is cooked through. Remove plank from grill<br />
and slip salmon off, onto serving platter.<br />
5. Serve with asparagus and mushrooms.<br />

how to shop<br />
for VINTAGES products:<br />
VINTAGES is the fine wine and premium spirits business unit<br />
of the LCBO. Products featured in this catalogue may be<br />
obtained in two ways:<br />
1. Shopping in person at a VINTAGES location on or after the<br />
Release date. Note: Supplies are limited and product<br />
availability will vary from store to store. Customers in the<br />
Toronto and Ottawa areas must shop in person.<br />
2. Ordering specific VINTAGES products through your local<br />
LCBO or VINTAGES store. This is a service we provide for<br />
our customers who live outside the Toronto and Ottawa<br />
areas only.<br />
• Important – customers must submit their ‘requests’ to<br />
their local LCBO store by 11 am the Tuesday before<br />
the Release date.<br />
•VINTAGES allocates a percentage of products in each<br />
release to fulfill ‘customer requests’. This does not<br />
guarantee availability as VINTAGES products are purchased<br />
in finite quantities and are sometimes extremely limited<br />
and/or in very high demand.<br />
• Store staff can order as many bottles as you require<br />
subject to availability.<br />
NEW – Transferring Products From Other Stores:<br />
VINTAGES customers may now ask for product including ISDs<br />
to be t ransferred between stores if stock is still available<br />
2 weeks after the release date. Please contact your local<br />
LCBO store to make arrangements.<br />
VINTAGES catalogues are available online at www.vintages.com.<br />
Our website also features product search, special offers,<br />
events, store locations and other information.<br />
