Chef Foods (<strong>Course</strong> #8030)Fee: $30.00Are you interested in how a restaurant operates? This hands‐on food preparation course teaches the skillsneeded to be successful in the "front <strong>of</strong> the house" as a manager or in the "back <strong>of</strong> the house" as a chef.Learn how to market a food product and how to sell menu items through the operation <strong>of</strong> a variety <strong>of</strong>food businesses. The culinary and hospitality industry is one <strong>of</strong> the largest employers in the nation andcareers within management from hotels to restaurants are on the rise. This course uses the NationalRestaurant Association Pro Start materials.Culinary Arts & Hospitality (<strong>Course</strong> #8032)Fee: $35.00/SemesterTranscripted CreditCulinary Arts and Hospitality challenges students to develop the skills needed to be successful in theculinary arts and hospitality industry. This year‐long course may be taken by semester.Fall Semester advanced techniques include: pr<strong>of</strong>essional kitchen basics, sanitation, recipe analysis, cookingmethods, baking shop‐, appetizers, meat preparation, gingerbread houses and holiday foods, and costcontrol.Spring Semester advanced techniques include: stocks, soup and sauces, salads, bake shop pastry, yeastbreads, fruits and vegetables, pasta and rice. Students will learn how to meet industry standards whenusing standardized recipes, plan nutritious menus, apply cooking methods and technologies and the art <strong>of</strong>service that meet the pr<strong>of</strong>essional restaurant setting. They will learn, practice and implement interpersonalskills, good communication, problem solving and teamwork throughout the course. The students willenhance their management and leadership skills by operating a food business. Field trips and guestspeakers are a part <strong>of</strong> this course. This course is required to be taken with the Career Pathways FACS Coop/Internship(#8084).Students successfully completing both semesters <strong>of</strong> this course can earn 3.0 credits at WCTC for Introductionto Commercial Cooking. Students also have the opportunity to earn national ServSafe certification.Sports, Nutrition and Fitness (<strong>Course</strong> #8046)Fee: $30.00Learn about connections between athletic performance, diet, exercise, fitness and nutrition. Analyze theimportance <strong>of</strong> healthy weight management to overall wellness for today and across the life‐span. Becomea well‐informed consumer <strong>of</strong> nutritional information by differentiating facts from fiction. Prepare foodsthat will enhance athletic performance and support weight management. Recognize the contribution <strong>of</strong>nutrition to wellness and how this allows you to be at your Personal Best. Included are speakers, field tripsto sports training centers and food preparation labs.30
