1Републички завод за статистикуStatistical Office of the Republic of SerbiaСтруктура промета у угоститељству 2010. године, посматранопо врстама обављених услуга, показује да је највеће учешће хране(40%), затим остварених ноћења (22,2%), следи потрошња пива(7,6%), потрошња осталих безалкохолних пића (6,8%) итд.Извори и методи прикупљања податакаПодаци о мрежи и промету у угоститељству прикупљени суредовним тромесечним и годишњим извештајима о пословањуправних лица и делова правних лица која се баве угоститељскомделатношћу. Подаци о предузетницима који се баве угоститељскомделатношћу прикупљају се редовним годишњим извештајемугоститељства за предузетнике, методом узорка.ОбухватностУ свим табелама, по правилу, обезбеђена је потпунаобухватност. Угоститељски објекти затвореног типа у пословнимсубјектима и другим организацијама нису обухваћени.Статистичким истраживањима угоститељства обухваћени су свипословни субјекти који су регистровани у оквиру сектора ЖКласификације делатности, као и они који су регистровани у оквирудругих сектора, а баве се угоститељском делатношћу.Од јануара 2000. године статистички подаци о угоститељскимобјектима прикупљани су по методологији која је усклађена с прописимау овој области, пре свега са Законом о туризму, као и саПрепорукама за статистику туризма Светске туристичке организације.ДефиницијеУгоститељска пословна јединица јесте угоститељскиобјекат који у пословном, грађевинском и функционалном погледучини заокружену целину, или у оквиру шире грађевинске целинеима издвојен простор и пословну функционалност потребну за обављањеугоститељске делатности. Као пословне јединице исказујусе и приватне угоститељске радње. Према врсти угоститељскихуслуга које претежно пружају и техничким могућностима и начинууслуживања, угоститељске јединице разврставају се у хотеле, мотеле,ресторане, кафане, бифее и др. Број пословних јединица дајесе закључно са стањем 31. августа.Промет у угоститељству представља књиговодственообрачунату вредност извршених угоститељских услуга (смештај,храна, пиће) и других услуга које се уобичајено обављају у угоститељству(превоз гостију и пртљага, услужне занатске делатности,продаја дувана, предмета за успомену, новина и др.). У вредностизвршених услуга укључен је ПДВ.Ради упоредивости (код дужих временских серија), вредностпромета угоститељства исказана је у ценама и динарима 2005. године.Као дефлатори за добијање ланчаних индекса у сталнимценама – за ниво територија, коришћени су одговарајући индексицена за Републику Србију.Методолошки материјалиДетаљна методолошка објашњења се налазе на веб-сајтуРепубличког завода за статистику у области статистикеУгоститељства (www.stat.gov.rs).The turnover structure in catering trades in 2010, observed bytype of services performed, shows that the largest share was that of food(40%), then of overnights (22.2%), followed by the consumption of beer(7.6%) and consumption of other non-alcoholic beverages (6.8%) etc.Sources and methods of data collectionData on the network and turnover data in catering trades havebeen taken over from quarterly and annual reports on operations of legalpersons and parts of legal persons dealing with catering trades. Data onunincorporated enterprises dealing with catering trades are obtained byregular sample-based annual survey of catering trades for unincorporatedenterprises.CoverageGenerally, full coverage in all tables has been provided. Closetype catering establishments in business entities and other organizationsare not included. Statistical surveys cover all business entities that areregistered in the scope of the section H of the Classification of Activities,as well as those registered in other sections, but performing cateringtrade activity.Since January 2000, data on catering trade estabkishments havebeen collected according to the methodology harmonized with relatedregulations, primarily with the Law on Tourism, as well as with the Recommendationsof the World Tourism Organization for Tourism Statistics.DefinitionsA catering business unit is a catering establishment which forms astructure in the business, construction and functional sense, or whichhas, within a bigger construction structure, a separate space and meetingnecessary business requirements to perform a catering activity.Private catering shops are also shown as enterprises. Catering enterprisesare classified into hotels, motels, restaurants, cafes, buffets, etc.depending on the kind of prevailing catering services, mode of servicesupply and technical possibilities. The business unit number is shown asof 31 August.Turnover in catering trades is, in terms of book-keeping, a computedvalue of rendered catering services (accommodation, food andbeverages), as well as of other services usually rendered in cateringtrades (passengers and luggage transport, craftsman services, sale oftobacco, souvenirs, newspapers, etc.). VAT is included in the value ofthe rendered services.For comparability purposes (in case of longer time series), thevalue of catering trades turnover is shown in prices and dinars from2005.
