Tann<strong>at</strong> is a tough skinned,<br />
deep red grape variety<br />
th<strong>at</strong> migr<strong>at</strong>ed from<br />
southwest France’s<br />
Madiran region to<br />
Roger Clark<br />
Uruguay and <strong>the</strong>n to Argentina. This<br />
bottling is from extremely high altitude<br />
vineyards (5,700 feet above sea level) in<br />
Argentina’s Cafay<strong>at</strong>e Valley (as odd as th<strong>at</strong><br />
may sound). This o<strong>the</strong>rwise very tannic<br />
grape is slowly and fully ripened in <strong>the</strong>se<br />
high altitude vineyards. The resulting wine<br />
shows not only a very dark color, but also<br />
wonderful balance between rich fruit,<br />
deeply infused spice, and backbone. This is<br />
a wine with sufficient hardiness to pair well<br />
with beef, lamb, or venison and <strong>the</strong> proper<br />
elegance to partner with a creamy blue<br />
cheese. As might be expected, this wine will<br />
also age well for <strong>at</strong> least 5 or more years, so<br />

Bleu d’Auvergne<br />
Now a classic French Blue, <strong>the</strong><br />
Bleu d’Auvergne was<br />
discovered by a French dairy<br />
farmer who decided to<br />
experiment with <strong>the</strong> tasty blue<br />
mold he found growing on his<br />
curd. After many failed<br />
<strong>at</strong>tempts, he found th<strong>at</strong><br />
cultiv<strong>at</strong>ing <strong>the</strong> mold on rye Calder Michienzi<br />
bread, <strong>the</strong>n pricking <strong>the</strong><br />
cheese with needles to allow <strong>the</strong> mold to reach<br />
all <strong>the</strong> way into <strong>the</strong> center of <strong>the</strong> cheese, resulted<br />
in <strong>the</strong> wonderful flavors and textures th<strong>at</strong> we still<br />
get to experience today. The rich and creamy<br />
cow’s milk of <strong>the</strong> Auvergne region provides a<br />
buttery and sweet canvas for <strong>the</strong> deeper,<br />
complex flavors of <strong>the</strong> blue veining. Biting into<br />
this cheese gives way to an intense sense of<br />
earth, grass, and nuts, but gives way to a lighter,<br />
slightly floral aftertaste. Unlike many o<strong>the</strong>r blues,<br />
<strong>the</strong> Bleu d’Auvergne isn’t overly salty or acidic,<br />
making it a wonderful choice for more casual<br />
consumption. Not to say th<strong>at</strong> it’s complexity<br />
won’t wow <strong>the</strong> biggest of cheese connoisseurs.<br />
