lives one of my favorite<br />

white wines in our store.<br />

Evolucio Furmint is a dry,<br />

mineral-driven white<br />

from Tokaji, Hungary th<strong>at</strong> flies under<br />

almost everyone’s wine radar. Mention<br />

Hungarian wine and most often people<br />

think of <strong>the</strong>ir famous (& expensive!)<br />

dessert wines, but thankfully <strong>the</strong>y also<br />

produce delightful dry whites from <strong>the</strong><br />

Furmint grape in <strong>the</strong>se parts. Tokaji,<br />

loc<strong>at</strong>ed in <strong>the</strong> nor<strong>the</strong>ast of Hungary, is<br />

one of <strong>the</strong> world’s oldest design<strong>at</strong>ed<br />

wine regions with boundaries set in <strong>the</strong><br />

mid-1700s. The volcanic n<strong>at</strong>ure of <strong>the</strong><br />

soil found here and <strong>the</strong> extreme<br />

continental clim<strong>at</strong>e develops perfumed<br />

wines with a stony, bright personality.<br />

Evolucio Furmint is unoaked and full of<br />

citrus, flint, lime zest, green apple…<br />

totally clean flavors. Perfect paired with<br />

ano<strong>the</strong>r favorite of mine, Fleur Verte, an<br />

herb- co<strong>at</strong>ed fresh go<strong>at</strong> cheese available<br />

right next door! The flavors will put you<br />

in a spring-like st<strong>at</strong>e of mind. I don’t<br />

know about you, but is exactly wh<strong>at</strong> I<br />

At Surdyk’s, we have seen<br />

<strong>the</strong> explosion of locallymade<br />

artisan beers and<br />

recently hand-crafted Drew Fuller<br />

spirits from local<br />

distilleries. Clearly, <strong>the</strong> farm-to-table<br />

trend has extended from food to drink,<br />

but it really began long before <strong>the</strong>se<br />

recent trends with <strong>the</strong> emergence of<br />

wines made from 100% Minnesota<br />

grown grapes. The winery th<strong>at</strong> started it<br />

all is Alexis Bailly Vineyards, whose<br />

founder David Bailly planted Minnesota’s<br />

first vineyard in 1973. I have enormous<br />

respect for David Bailly and his daughter<br />

Nan for taking a huge risk and doing<br />

wh<strong>at</strong> most experts considered<br />

impossible, which was to grow grapes<br />

and make fine wine in one of <strong>the</strong><br />

harshest winter clim<strong>at</strong>es in <strong>the</strong><br />

agricultural world. Through careful<br />

research, innov<strong>at</strong>ive farming, and<br />

winemaking techniques, David produced<br />

wines th<strong>at</strong> have been recognized for<br />

numerous regional and intern<strong>at</strong>ional<br />

quality awards. One of Alexis Bailly’s<br />

white wines th<strong>at</strong> I love is <strong>the</strong> 2014 Seyval<br />

Blanc, which is named for <strong>the</strong> French<br />

horticulturist who developed <strong>the</strong> variety<br />

during WWI, and which David hoped<br />

could survive <strong>the</strong> harsh MN winter.<br />

Fortun<strong>at</strong>ely, David’s intuition proved<br />

correct, Seyval Blanc thrived, and is now<br />

Alexis Bailly’s premium dry white wine. It<br />

shows bright, crisp citrus fruit, lively<br />

acidity, and a dry, elegant finish. This<br />

wine will pair perfectly with lighter meals<br />

like salads, grilled chicken and pan-fried<br />

fish, go<strong>at</strong> cheese, as well as garlicky<br />

pesto. I heartily recommend th<strong>at</strong> you try<br />

this wonderful wine, which serves as a<br />

gre<strong>at</strong> example of <strong>the</strong> quality of<br />

Minnesota grown and produced wines.<br />
