Asian Breakfast Frittata<br />

3 eggs, large $0.69<br />

1 cup bagged broccoli slaw $0.40<br />

5 cherry or grape tomatoes $0.30<br />

1/4 tsp. garlic powder $0.01<br />

1/4 tsp. onion powder $0.01<br />

1 Tbsp. low-sodium soy sauce $0.12<br />

1 Tbsp. rice wine vinegar $0.08<br />

No-calorie, non-stick cooking spray $0.03<br />

TOTAL: $1.64<br />

Price per serving: $1.64<br />

Directions:<br />

1. Spray medium-sized frying pan with non-stick cooking spray, heat at medium heat.<br />

2. Crack 3 eggs into a medium sized bowl; add a dash of water and whisk.<br />

3. Once pan is hot, sauté broccoli slaw, onion/garlic powder, soy sauce and rice wine<br />

vinegar for 5 minutes or until vegetables are slightly brown.<br />

4. When vegetables are to desired texture, pour the whisked eggs into pan the pan and<br />

reduce heat to low. Put lid on the pan and let cook for 5-7 more minutes, till eggs are<br />

cooked through.<br />

5. Use spatula to slide out the frittata onto your plate and enjoy!<br />
