1/2 cup salsa $2.00<br />

1/2 cup shredded cheddar cheese $1.50<br />

2 cups liquid egg substitute $2.00<br />

No-calorie cooking spray $0.03<br />

Whatever vegetables on hand $0.00<br />

TOTAL: $8.53<br />

Directions:<br />

1. Top tortillas with salsa and cheese. Heat in the microwave until the cheese is melted,<br />

about 30 seconds.<br />

2. Coat a small non-stick skillet with cooking spray.<br />

3. Heat over medium heat, add egg substitute and cook, stirring, until the eggs are cooked<br />

through, about 90 seconds. Divide the scrambled egg between the tacos.<br />

4. If you have leftover vegetables or canned black beans, you can also add them to the<br />

scramble.<br />
