Baked Zucchini Sticks<br />

1 egg $0.23<br />

Black pepper $0.01<br />

Garlic salt $0.01<br />

1/3 cup breadcrumbs $0.10<br />

2 Tbsp. Parmesan cheese $0.32<br />

3 medium zucchini, sliced into sticks $3.98<br />

No calorie, non-stick cooking spray $0.03<br />

TOTAL: $4.68<br />

Price per serving: $0.78<br />

Directions:<br />

1. Preheat oven to 425˚.<br />

2. In a small bowl, beat egg and add in pepper and garlic salt.<br />

3. In another small bowl, mix together breadcrumbs and Parmesan cheese.<br />

4. Cut zucchini into sticks, keep skin on.<br />

5. Dip zucchini sticks in egg mixture and then in<br />

breadcrumb mixture, make sure the breadcrumbs<br />

are sticking to all sides of the zucchini stick.<br />

6. Spray a baking sheet with no-calorie, non-stick<br />

cooking spray and line the zucchini sticks on the<br />

sheet.<br />

7. Bake for 20-25 minutes, serve and enjoy!<br />
