Blueberry Pancakes<br />

2 tsp. baking powder $0.44<br />

1/4 tsp. baking soda $0.10<br />

No-calorie cooking spray $0.03<br />

1/8 cup honey $0.40<br />

3/4 cup apple juice $0.25<br />

1 cup fresh blueberries $1.50<br />

TOTAL: $3.12<br />

Price per serving: $1.56<br />

Directions:<br />

1. Whisk together flour, baking powder, baking soda, and honey in a large bowl.<br />

2. Add all other ingredients and mix well.<br />

3. Heat a large cast-iron skillet and lightly coat with butter or cooking spray. *Nutrition<br />

Facts above do not include butter. Pour the batter in to the hot skillet. Turn pancakes<br />

when they begin to bubble. Cook until both sides are golden brown and surface springs<br />
