PRECINCT WAIKATO BUSINESS NEWS November/December 2016 Mavis takes off at the airport The extension of the Mavis brand to Hamilton Airport in recent months has been a huge success – but even better is to come. By GEOFF TAYLOR With business already flourishing at the new Mavis Lounge, Mavis & Co owner Fin Irwin says he is about to unveil an exciting new menu. Fin, owner of two Mavis outlets – the original Mavis & Co in Hamilton East and Mavis & Co – Made to Order in the city - readily admits when the idea of extending the brand into the airport was first raised he was unsure. All up, it’s been a great move. It’s been good for the business and I think good for the airport too.” “I was flattered and interested but at the same time a little cautious,” he says. “I wasn’t sure that an airport would fit our brand.” The idea was part of airport mangement plan’s to make the airport a destination for Waikato people rather than just a place for travellers. “The important thing for me was that it didn’t just feel like an airport café. It had to be a Mavis café at the airport rather than an airport café. We wanted to keep the prices down as much as we can.” Even leading up to opening day in August, Fin was having the odd second thought. He had expected the “pop up” Mavis created downstairs while the permanent café was built might be “marginal” in terms of turnover but was surprised with its popularity. The move to the new café on the mezzanine was even better. “We hadn’t even got any signs in place yet so I wasn’t expecting the first day to be anything spectacular. It coincided with school holidays which obviously helped but it was very busy. Brunch specialities include Eggs Benedict on house made English muffin & hollandaise and the Mavis Feast. Fin highly recommends house cut potato crisps and thick cut chips with chicken gravy on the snack menu and the lunch menu dish Korean Fried Chicken. Meanwhile tapas dishes include Angus Pure Beef Skewer, Beef Tallow Beignet, Lightly Smoked Oysters and a bowl of Crispy White Anchovy Stuffed Olives. “The menu is going to be very varied and very exciting. I think people will love it.” Mavis Lounge seats more than 100 and Finn says it’s an idea place for events, parties and functions. It’s a big area, says Finn and areas can easily be partitioned off while music will soon be introduced. The kitchen will also be catering for events at the airport’s newly opened conference facilities. “All up, it’s been a great move.
