The Don’s Steak Au Poivre
INGREDIENTS
Whole Beef Tenderloin
2 Tbsp of DZ Seasoning
1 Large Package of
Portabella Mushrooms
1 Bunch of Green Onions
4 Cloves of Garlic
1/2 Cube of Butter
1/2 Bunch of Parsley
1/2 Cup of White Wine
1 Pint of Veal Demi Glaze
3 Sweet Potatoes
3 Yams
1 Onion
1/2 Cup Brown Sugar
1 Tbsp of Cinnamon
1/2 Cup Cubed Mango
2 Small Cans of Cubed
Pineapple
Preparation
Peel 3 sweet potatoes and 3 yams and cut
them into 1 1/2 pieces.
Put them in a baking dish and add the cubed
mango, sliced pineapple, sliced onion, brown
sugar, cinnamon, and 1/2 cup of melted
butter.
Place in the oven to bake for 30 to 40
minutes on 350 degrees.
Rub the whole tenderloin with olive oil and
DZ Seasoning. Put it in the refrigerator one
hour before cooking.
Now take a fry pan and heat it up with a
little olive oil. Place the steak in to sear it
and brown on all sides. You are not cooking it
just searing it.
Now in a baking pan place the tenderloin and
add ½ cup of white wine and place it in the
oven at 350 degrees for about 30 minutes.
Chop the green onions, cloves of garlic,
parsley and put in the fry pan coated with a
1/2 cube of butter. Sauté for a few
minutes.
Next add the large package of sliced
mushrooms and a teaspoon of DZ Seasoning.
Sauté for 5 to 7 minutes.
Now add 1/2 cup of white wine. Sauté for a
few minutes then add the Demi Glaze.
Let simmer on low for 10 to 15 minutes. The
sauce will begin to thicken up. Take off the
heat and take 1/2 cube of butter that has
been cut into slices so it melts and mixes
into the sauce.
When everything is done, slice the tenderloin
in thin pieces about 1/2 inch thick and fan
them on a platter in a half circle layering them like dominoes. Then pour
the sauce all over the steak. Garnish with chopped parsley. Place the
sweet potatoes and yams in the center.
BEAUTIFUL AND YUMMY!
