Australian ingredients, it<br />
is the first edition of this<br />
boutique distillery’s range.<br />
Produced with the use<br />
of the finest quality<br />
Australian sourced dark<br />
brown sugar and double<br />
distilled using a four plate<br />
column still, this cane<br />
spirit is barrel aged in an<br />
ex Vasse Felix French<br />
Oak Shiraz cask <strong>for</strong> one<br />
month and spiced with<br />
Kakadu Plum, Lemon<br />
Myrtle, Quandong, Wild<br />
Rosella and Wattleseed.<br />
Bright citrus aromas<br />
followed by an earthy,<br />
bold and floral taste<br />
lead to a beautiful finish<br />
with hints of peppercorn<br />
spice along with fresh<br />
juniper. This gin is one<br />
of a kind. Patient Wolf<br />
(the name inspired by<br />
Gin lover and American<br />
Actress Lana Turner’s<br />
quote: “a gentleman is<br />
simply a patient wolf”)<br />
use overnight steeped<br />
botanicals such as<br />
coriander seeds, orris<br />
root, angelica root,<br />
cardamom, cubeb<br />
pepper, and tonka beans<br />
and juniper berries,<br />
distilled in their custom<br />
built 230L Mueller<br />
copper still, handmade in<br />
Germany.<br />
Mixed dark berry fruits on<br />
the palate, vibrant acidity<br />
and fine grain tannin lead<br />
into a long, persistent<br />
finish. Great drive and<br />
depth of flavour, a touch<br />
of earthy complexity, and<br />
a seamless structure.<br />
Made using the ‘Jim<br />
Barry’ method and as<br />
such can be enjoyed<br />
upon release, but would<br />
equally benefit from<br />
cellaring to allow the wine<br />
to show some mature<br />
characteristics that come<br />
with age.<br />
Hints of citrus and native<br />
Juniper, gathered by hand<br />
on Kangaroo Island, are<br />
the <strong>for</strong>thcoming flavours<br />
of this special spirit.<br />
The distillery produces<br />
its Wild Gin in <strong>small</strong><br />
batches, aiming towards<br />
environmentally sustainable<br />
practises. Only local and<br />
seasonal ingredients are<br />
used with coriander, limes<br />
and mint being grown on<br />
site. Wild Gin also features<br />
Cardamom, Mace, Cassia,<br />
Pink Pepper, Caraway and<br />
Fresh Ginger, which create<br />
a herbal yet spicy finish.<br />
The freshness of the lime<br />
and mint balance the heat<br />
perfectly. Kangaroo Island<br />
Spirits Wild Gin is great<br />
by itself but also makes<br />
an excellent Negroni or<br />
Martini.<br />
