What’s going to be on your Christmas table for 2<strong>01</strong>8? Last<br />
year, I tackled turkey for the first time, and was delighted not<br />
to be serving up a dry old bird on the day (thank you, Annabel<br />
Langbein). There was a fair amount of prepwork involved, starting<br />
the night before with the creation of a brine for the bird to bathe<br />
in for 12 hours. I think this might have been part of the secret to<br />
my success, especially after seeing how Aikman’s chef Tim Nott<br />
perfects his lamb (page 18). Tim told us the key to his festive lamb<br />
dish is submerging it in liquid and cooking it slowly for four hours.<br />
That’s less high maintenance than my turkey!<br />
When we considered the types of recipes that would be the<br />
cherry on top of an (over) indulgent day, we thought it best<br />
we be inclusive – vegetarians and vegans, we’ve got your back.<br />
Nowadays, if you don’t consider your guests’ dietary requirements,<br />
you run the risk of someone going without, or, worse still, a mad<br />
dash for the EpiPen – making for an event you’d rather forget.<br />
We’ve had a memorable year at <strong>Style</strong>, spreading the magazine<br />
love as far south as the Southern Lakes and as far north as<br />
Singapore. Thank you for all your support and feedback, we truly<br />
