A quick and easy recipe, perfect for the<br />

coming season of afternoon teas!<br />

Buttermilk<br />

Scones<br />

INGREDIENTS<br />

450g self raising flour<br />

¼ tsp salt<br />

100g cold diced butter<br />

85g caster sugar<br />

Pot buttermilk (approx. 300 ml)<br />

2 tsp vanilla extract<br />

Splash milk<br />

METHOD<br />

1. Pulse the flour, salt, butter in a food<br />

processor until there are no lumps<br />

(or rub in with fingers).<br />

2. Add and pulse in the sugar.<br />

3. Gently warm the buttermilk and<br />

vanilla.<br />

4. In a large bowl mix together the dry<br />

and wet ingredients alternately.<br />

5. Bring the dough together with a knife<br />

and then fingers.<br />

6. Press dough out till 4 cm thick. I don’t<br />

use a rolling pin to avoid too much<br />

messing with the dough.<br />

7. Cut out scones and brush with a<br />

splash of milk in the buttermilk pot.<br />

8. Cook at 200°C for approx. 10-12<br />

minutes until just golden on top.<br />
