Meets 2nd Tuesday of the Month 6.45pm<br />

MaD WI are moving to Sacred Heart Church Hall,<br />
Kingsway, Rochdale OL16 5BX from <strong>August</strong> 9th.<br />
Our next meeting is on Tuesday 9th <strong>August</strong>.<br />
We will be holding our birthday celebrations and<br />
our own version of a county show. There will be<br />
cake, quiches, scones and preserves to taste and<br />
various crafts to admire and judge.<br />
New guests are welcome to attend for a door fee<br />
of £3.50, and there will be refreshments and a<br />

Summer<br />
Pudding<br />
INGREDIENTS<br />
5/6 slices of white bread<br />
– a little stale is good.<br />
1 ½ lbs of mixed fruit<br />
(currants, raspberries, strawberries,<br />
stoned cherries, gooseberries etc)<br />
4-6 oz granulated sugar (to taste)<br />
METHOD<br />
1. Remove crusts from the bread and cut to<br />
fit the bottom of a 1 ½ pint pudding bowl.<br />
Arrange slices to line the sides of the bowl,<br />
cutting if necessary to ensure a tight fit.<br />
Reserve some bread for the middle and<br />
the lid.<br />
2. Put fruit and sugar in a pan and cook on a<br />
low heat for 10-15 minutes, until the fruit is<br />
soft but still holding its shape. Cool a little<br />
and adjust sweetening if necessary. Half<br />
fill the bread lined bowl, place on a layer<br />
of bread and then fill with the fruit. Cover<br />
with a lid of bread and spoon juice over<br />
to cover and fill the bowl. Place a plate on<br />
top of the filled bowl and weight down.<br />
Refridgerate.<br />
3. The summer pudding can be turned out<br />
and served when well chilled and all the<br />
bread is soaked and coloured with juice.<br />
They can be frozen in their bowls at this<br />
point. Allow to defrost completely before<br />
turning out.<br />
