Since its establishment by Nicholas Hall in 2007, the Herbert Hall Winery has focused
exclusively on producing handmade sparkling wines from its four-hectare organic vineyard
in Marden, Kent. The winery has become a benchmark for English artisan sparkling wine
production and was recently asked to produce a limited edition Sparkling Rosé for HRH The
Prince of Wales’s Highgrove. Their wines retail through Harrods, Fortnum & Mason and Lea &
Sandeman.
The winery makes two main cuvées – Herbert Hall Brut and Herbert Hall Brut Rosé. It is
currently broadening its range to include a limited-edition barrel fermented blanc de blancs
(1000 bottles) and a single barrel fermented blanc de noirs (500 bottles). The winemaking
team comprises founder Nicholas Hall and Kirsty Smith who work together to produce elegant
wines noted for their pure expression of fruit.

Fox & Fox are a highly awarded boutique producer of exciting and delicious English Sparkling
Wines. We have two vineyards which lie either side of Mayfield, East Sussex. Our wines are all
made with minimal manipulation in the winery only from grapes that we grow ourselves. All
our wines celebrate the delicious characteristics of the Pinot Noir, Meunier, Chardonnay and
Pinot Gris in our vineyards and all are certified suitable for Vegans and Vegetarians.

95% Pinot Noir with a whisper of Chardonnay. 12% ABV. Made with care and attention to detail, this wine has
a satisfying depth and high notes of ripe apples and a nuance of nectarine. The mousse has our characteristic
small bubbles and gently, satisfyingly fills the mouth, leading to a refreshing, long finish. [£40]

95% Meunier with a flirtation of Chardonnay. 12% ABV. We believe this was the first English Pinot Meunier
blanc de noirs to be produced, establishing our reputation for innovation and focus on the characteristics of
the grape varieties that we grow. Our Meunier is rich, rounded, underpinned by a purity and minerality that is
deliciously refreshing with top notes of lime flying over black fruit flavours.
