Blood Orange

MAKES 10 MINIATURE GLASSES
INGREDIENTS
350ml cream
180g caster sugar
50ml blood orange juice
70ml lemon juice
TO DECORATE
Seasonal berries
Fresh passion fruit
Mint
Coming into season right now – this variety of orange with
crimson flesh is fantastic in this tangy dessert canapé or
can be made larger and served as a full dessert.
METHOD
1. Place the cream and sugar into
a pan and bring to the boil.
2. Boil for 3 minutes then remove
from the heat and whisk in both
the blood orange and lemon juice.
3. Pour into glasses and leave to set
in fridge for a good 6 hours.
4. Finish with seasonal fruits and mint.
