Creamed Pota<strong>to</strong>es<br />

5 medium pota<strong>to</strong>es, pared &<br />

cut in<strong>to</strong> 1/4 inch slices<br />

6 Tbsp mayonnaise<br />

3 Tbsp mustard<br />

A lile fresh snipped parsley<br />

3/4 cup sour cream<br />

6 Tbsp pied ripe black olives<br />

3/4 tsp salt<br />

Microwave pota<strong>to</strong>es in shallow microwavable dish covered with plasc<br />

wrap on high power unl tender (approx 15 minutes). Let stand 5 <strong>to</strong> 10<br />

minutes. Combine sour cream, mayonnaise, olives, mustard and salt in a<br />

smal bowl. Add <strong>to</strong> pota<strong>to</strong>es. Toss gently, sprinkle with parsley. Serves 6.<br />

A Fairy Tale for <strong>the</strong> New Millennium<br />

Once upon a time, in a land far away, a beautiful, independent,<br />

self-assured princess happened upon a frog as she sat contemplating<br />

ecological issues on <strong>the</strong> shores of an unpolluted pond in a verdant meadow<br />

near her castle.<br />

The frog hopped in<strong>to</strong> <strong>the</strong> princess' lap and said, "Elegant lady, I was once<br />

a handsome prince, until an evil witch cast a spell upon me. One kiss from<br />

you, however; and I will turn back in<strong>to</strong> <strong>the</strong> dapper young prince that I am."<br />

The frog went on, "And <strong>the</strong>n, my sweet, we can marry and set up house in<br />

yonder castle with my mo<strong>the</strong>r, where you can prepare my<br />

meals, clean my clo<strong>the</strong>s, bear my children and forever feel<br />

grateful and happy doing so."<br />

That night, on a repast of lightly sauteed frogs legs<br />

seasoned in a white wine and onion cream<br />

sauce, <strong>the</strong> princess chuckled <strong>to</strong> herself and<br />

thought, "I don't think so Mr. Frog."<br />

Slow Cooker Irish<br />

Style Beef Pot Roast<br />

3 <strong>to</strong> 4 lb beef roast, boneless<br />

4-5 large peeled carrots, in 2” pieces<br />

5-6 medium red pota<strong>to</strong>es, quartered<br />

2 large onions, peeled & quartered<br />

6 celery stalks, in 2” pieces<br />

1 parsnip, peeled, in 2” pieces<br />

2010 Cookbook<br />

1 pkg mushroom gravy mix<br />

1 pkg brown gravy mix<br />

1/3 cup all purpose flour<br />

1/2 tsp each salt & pepper<br />

2 Tbsp Worcestershire sauce<br />

1 tsp Dijon mustard<br />

1 cup beer<br />

Combine gravy mixes, salt, pepper and flour in large bowl. Add <strong>the</strong><br />

vegetables <strong>to</strong> <strong>the</strong> bowl and <strong>to</strong>ss <strong>to</strong> coat well. Put vegetables in 5 <strong>to</strong> 6<br />

quart slow cooker. Add beef roast <strong>to</strong> bowl, turning <strong>to</strong> coat with flour<br />

mixture. Remove roast and place in slow cooker in centre of vegetables.<br />

Whisk beer, Worcestershire sauce and Dijon mustard in remaining flour<br />

mixture unl smooth. Add <strong>to</strong> slow cooker. Cover; cook on low for 10 <strong>to</strong> 11<br />

hours or on high for 6 <strong>to</strong> 7 hours or unl beef and vegetables are fork<br />

tender (no srring is necessary during cooking). Remove roast and<br />

vegetables. Carve roast in thin slices. Serve with vegetables and gravy.<br />

Serves 6 <strong>to</strong> 8.<br />

Orange Mandarin<br />

Cake<br />

1 cup sugar<br />

1 cup flour<br />

1 can mandarin oranges with juice<br />

1 tsp baking soda<br />

30th Anniversary Cookbook<br />

1 egg<br />

1 tsp vanilla<br />

TOPPING:<br />

2 cups brown sugar<br />

1/2 cup nuts<br />

Mix first 6 ingredients well. Pour in 8x8” pan, <strong>the</strong>n sprinkle with brown<br />

sugar and nuts. Bake at 350F for 35 minutes<br />
