This year on <strong>July</strong> 4th, we celebrate<br />

Lisa Mizen, editor<br />

our 247th birthday. A time<br />

to celebrate the birth of the<br />

United States and to honor the<br />

contributions of the founding fathers who made it possible.<br />

The American flag stands for our country’s values of freedom, liberty, and justice, and is<br />

commonly seen during our nation’s celebrations and especially right here in Delray Beach. The<br />

4th of <strong>July</strong> Celebration begins at 5pm on East <strong>Atlantic</strong> <strong>Ave</strong> and AIA, with the raising of the 60’<br />

flag, an honor guard and the singing of the National Anthem. A sight to be seen that will leave<br />

you with a lump in your throat and a feeling of pure patriotism. Following this you can stroll<br />

along the traffic-free street and enjoy food, contests, entertainment and more. Don’t miss the<br />

fireworks starting at 9pm.<br />

Mimi Haley Meister: A Force For Good is our City Person this month. She is a phenomenon<br />

when it comes to fundraising and there are an abundance of people testifying to this. “Mimi<br />

supports all non-profits and makes everyone feel good for the mission, whether it’s St Vincent<br />

Ferrer School, OSS, The Delray Beach Public Library, Sandoway House or the Delray Chamber.<br />

We call her events the Friendraisers!” said Louise Glover.<br />

More than 100 supporters, leaders and friends of Family Promise<br />

of South Palm Beach County had a suspiciously good time<br />

at Family Promise of South Palm Beach County’s recent Gatsby at<br />

the Garage benefit. Held at the Arts Garage in Delray Beach, the<br />

event featured a fun and engaging “Who Dunnit” Murder Mystery, a<br />

Live Auction and Best Costume Contest.<br />

Spady Cultural Heritage<br />

Museum to Receive $10,000<br />

Grant from the National<br />

Endowment for the Arts<br />

The Spady Cultural Heritage Museum has been approved for a<br />

$10,000 Grants for Arts Projects award from the National Endowment<br />

for the Arts (NEA) to support an arts exhibition and residency<br />

program, tentatively scheduled for Spring 2024.<br />

Back for More: Pleasure in Abundance, produced and presented<br />

by the arts collective Rubber Bands, consisting of Tayina Deravile,<br />

Sheree L. Greer, and Khaulah Naima Nuruddin, invites viewers to<br />

explore radical pleasure as an essential right to personal freedom.<br />

The Spady Museum’s project is among 1,130 projects across the<br />

country, totaling more than $31 million, which were selected during<br />

the second round of Grants for Arts Project’s fiscal year <strong>2023</strong><br />

funding.<br />

Family Promise of South Palm Beach County is part of a national<br />

organization with over 180 affiliates that provide temporary shelter,<br />

transportation, meals and comprehensive case management for<br />

families who are experiencing homelessness. They depend on the<br />

generosity and commitment of approximately 1,200 active volunteers<br />

representing 20 Interfaith congregations in South Palm Beach<br />

County. As a national movement Family Promise utilizes 200,000<br />

volunteers to help 110,000 people yearly.<br />

Land of the free because of the brave! After a weekend spent<br />

celebrating the freedom we all know and love oh so much,<br />

there’s only one thing left to do: continue the celebration.<br />

Head to Downtown Delray for the 4th of <strong>July</strong> and celebrate with<br />

everyone you know! Held Tuesday, <strong>July</strong> 4 from 5 to 9:30 p.m., the<br />

family-friendly 4th of <strong>July</strong> Celebration is held on <strong>Atlantic</strong> <strong>Ave</strong>nue<br />

and A1A, which is the perfect backdrop for all the festivities. The<br />

City has hosted the event for more than 50 years and this year’s<br />

attendance is expected to reach 80,000 people. The event begins<br />

with the 60’ flag raising ceremony with an honor guard and the<br />

singing of the National Anthem, which is a sight to be seen. The<br />

entire Celebration includes food-eating contests, food trucks and<br />

vendors, children’s activities and games, non-stop entertainment<br />

and so much more! The spectacular Zambelli Fireworks will start<br />

promptly at 9 p.m. over the ocean, which is one of the best fireworks<br />

displays in the area. It truly is a great way to celebrate our<br />

Art & Jazz on the <strong>Ave</strong>nue<br />

School’s out, schedules have been interrupted, and downtime<br />

seems a little bit more frequent. If you’re looking for a break<br />

from the boredom, look no further than Art & Jazz on the <strong>Ave</strong>nue,<br />

a downtown must since the ‘90s! <strong>July</strong> is Anti-Boredom Month<br />

move the event around to different downtown neighborhoods, and<br />

<strong>Ave</strong>nue and Northeast Fifth <strong>Ave</strong>nue (Federal Highway). Held Wednesday,<br />

<strong>July</strong> 26 from 6 to 9:30 p.m., visitors can expect to enjoy live mural<br />

artists from Emo, Jukes, Craig McInnins and Renata Rodrigues, as well<br />

as live music entertainment from the Mylon Shambles Quartet, The<br />

Flyers, Violet Jefferies Duo, Derek Mac 4 Piece, and Genitta’s Vendetta.<br />

It’s an amazing local event that only happens four times a year, so you<br />

have to be sure to attend and enjoy the opposite of boredom. Arrive<br />

Kids like them, adults like them, and four-legged friends love<br />

“A Journey Through Time at<br />

Old School Square” with LAPS<br />

“A The colorful, interactive, and playful installation,<br />

Journey Through Time at Old School Square” with<br />

LAPS, is a new temporary interactive art installation.<br />

which features six giant hourglass modules that reach nearly<br />

eight feet in height, are on display in Old School Square Park<br />

(on the main green area) in Downtown Delray Beach and are<br />

on view day and night until <strong>July</strong> 30, <strong>2023</strong>. The art pieces will<br />

give guests a chance to turn time forward and backward as they<br />

maneuver a large wheel on each hourglass at their own pace.<br />

Vivid lights and sounds will radiate from the pieces as the sand<br />

glides back and forth in motion to mark time saved and spent<br />

at the location. The message of the installation is that because<br />

everyone gets to choose the time they want to spend at the<br />

exhibit, each is a keeper of their own passage of time.<br />

The LAPS exhibit was designed and created in Montreal,<br />

Canada in 2022 by Olivier Landreville, with sound and light<br />

design by Serge Maheu. Structure and engineering were<br />

provided by Maintenance Industries Meca-Fab Inc. The<br />

interactive installation is produced by Init and Creos. Prior to<br />

its appearance in Delray Beach, Florida, LAPS was presented<br />

in Montreal, Canada; Des Moines, ID; Ottawa, Canada; and<br />

Denver, CO.<br />

► The Deepest Breath ( Netflix)<br />

Laura McGann (also of the doc Revolutions previously) spent<br />

years collecting all of the footage and putting together this film,<br />

and it shows. Her passion for telling this story is evident in every<br />

frame of this film. The Deepest Breath introduces us all to two<br />

wonderful people - ambitious Italian freediving champion Alessia<br />

Zecchini, and the beloved Irish adventurer / freediving instructor /<br />

safety diver Stephen Keenan. They don’t meet until many years later<br />

into their careers, but the film tells their stories in parallel from<br />

childhood into adulthood. There’s a lovely cinematic comparison<br />

throughout with how they each choose unique lives. Aside from a<br />

A concussion is known as mild traumatic brain<br />

injury. It is most commonly defined as a head<br />

injury that momentarily affects brain functions.<br />

Concussions occur when an impact to the head or body causes<br />

your head and brain to move rapidly back and forth. This movement<br />

causes the brain to bounce around inside the skull creating<br />

chemical changes in your brain. If the impact is severe enough,<br />

neurons within the brain can be stretched and damaged producing<br />

a traumatic brain injury. The youth sports producing the most concussions<br />

are tackle football, boy’s ice hockey, girl’s soccer, and boy’s<br />

lacrosse. Here are some remarkably interesting numbers concerning<br />

concussions and youth sports: 33% of all concussions happen<br />

at practice, 47% of all sports related concussions occur during high<br />

school football, 1 in 5 high school athletes will sustain a concussion<br />

during the season, 33% of high school athletes that sustain a concussion<br />

report 2 or more in the same year, 39% of athletes that have numerous<br />

concussions are shown to increase catastrophic head injury<br />

leading to more permanent impairment. To add to these daunting<br />

numbers is the fact that most athletes with concussions rarely lose<br />

consciousness therefore they may not be reported.<br />

Many youth and recreational organizations and high schools are<br />

implementing programs to assess for the baseline brain activity of<br />

their athletes prior to the start of the season. In essence, a snapshot<br />

of the athlete’s brain function is taken prior to the athletic competition<br />

to be able to compare neurological function after a concussion<br />

and determine the amount of injury sustained. These tests<br />

also provide a baseline marker for objective “return to play” benchmarks.<br />

This takes away the subjective reporting of a child which<br />

in many cases cannot even accurately describe what they are feeling.<br />

Because concussions are much more difficult to quantify than<br />

a ligament tear or fracture, traditional imaging such as MRI and CT<br />

are not fruitful. However, there are now several evidence-based<br />

technologies available to assess and treat these concussions.<br />

Headache, dizziness, disorientation, confusion, sleep disturbance,<br />

nausea, and irritability are all symptoms associated with<br />

concussions, however the challenge is in the quantification process.<br />

The management of the concussion must be organized into<br />

a pre-season assessment, incident report and comparable, treatment,<br />

follow-up assessment, and return to play. The piece we are<br />

going to look at here is the pre-season assessment. This is going to<br />

be composed of the neurological aspects that are most commonly<br />

seen injured in athletes with concussions. These are postural stability,<br />

working memory, reaction/processing times, set switching,<br />

learning, and dynamic and static visual acuity. Norms have been<br />

established for age groups and gender which makes comparing<br />

relatively easy. Once the data is collected and areas of deficiency<br />

identified, treatment is implemented and can be very precise. The<br />

athlete is then re-examined after the course of treatment and then<br />

allowed to “return to play” if the benchmarks have been reached.<br />

The equipment that is gaining the most notoriety for the assessment<br />

and treatment is the Hit Check Cognitive Assessment Aid, Dynavision<br />

D2, Force Plate Posturography, and Medical Virtual Reality<br />

Assessment and Rehabilitation tool. The next time your child plays<br />

a sport, prior to the season get a baseline assessment to ensure his<br />

Mind Makeover<br />

If you are serious about transforming your<br />

body and getting in the best possible shape,<br />

there’s a couple of things you will need to<br />

do before you start your transformation.<br />

You might think I’m going to say…plan your workouts, clean<br />

out your pantry etc…but, not so fast! Before you can start<br />

to transform your body you have to transform your mind.<br />

Transforming your body is pretty much ALL mental. If your mind<br />

is not in the right place, your body will not follow suit. I’ve seen<br />

it time and time again in the fitness industry. Your mindset is<br />

the ONLY thing that separates you from having the body of your<br />

dreams. It’s the difference of reaching goals or missing them. With<br />

that being said, here are some things to consider before beginning<br />

your “physical” transformation.<br />

Start by identifying your current mindset. You<br />

may feel frustrated or discouraged about your<br />

current situation. You may feel you have tried<br />

everything to change your body with no<br />

success. You may feel defeated that you<br />

gain and lose the same 10 pounds over<br />

and over. Whatever your situation may<br />

be, you need to realize what feelings<br />

you’re having and why you’re having<br />

them. Once you identify your current<br />

mindset, you’ll be able to move forward<br />

with the right type of thinking.<br />

Which brings me to my next<br />

point, the power of positivity.<br />

A positive mindset is a MUST.<br />

We attract what we think about.<br />

We become what we think<br />

about. Positive thoughts yield<br />

positive results. If you start your<br />

transformation with doubts about your abilities or<br />

doubts about hitting your goals you are already setting<br />

up for failure. Know there will be obstacles<br />

along the way, but you need to have the right<br />

mindset so obstacles will not hinder your final<br />

result. Whatever life throws you (life is full of<br />

curveballs) you’ll be ready to handle any situation<br />

or bump in the road. Too many people<br />

give up on their goals because of circumstances<br />

totally within their control. So be ready, willing<br />

and able to say and do, “Whatever comes my way,<br />

I’ve got this and I WILL do this!”<br />

The next key to a successful transformation is<br />

that you have to want it bad enough. If not, then EVERY excuse in<br />

the book will stand in your way. “Oh, I didn’t have time to get to the<br />

gym. It was just a couple extra slices of pizza.” Every person that<br />

wants it bad enough, gets results. The clients that think they want<br />

to transform but don’t have a yearning in their heart for change,<br />

don’t. It’s really as simple as that. New clients will ask, “Do you<br />

think I have what it takes to transform?” And the answer is always,<br />

“Yes, anyone can transform as long as you want it bad enough!”<br />

When you want something bad enough, your heart and head are<br />

into it and with that your body will follow.<br />

The last piece of advice is to leave fear of failure at the<br />

door. There is nothing to be afraid of - the only way to<br />

fail is by not even trying. Fear is often what holds us<br />

back from going after the things we really want in<br />

life. What should really scare you is the thought<br />

of staying stagnant in your current situation.<br />

Imagine living in a body you’re uncomfortable<br />

with for the rest of your life…now<br />

that’s scary! The only way you can fail<br />

is by giving up. Understand that<br />

transforming your body is a marathon<br />

not a sprint. Every “body”<br />

is different and each person’s<br />

transformation will take a different<br />

amount of time. For some<br />

it will be three months, for some it will be one year.<br />

Whatever it is for YOU, don’t ever give up. Failure<br />

will never be an option.<br />

Before embarking on your physical transformation,<br />

make sure your mind is warmed up and<br />

ready to run with you. Our mind is the most<br />

powerful tool we have and it can either make<br />

us or break us. Use it wisely and your transformation<br />

will be a little easier than you think!<br />

judge. Paola Mayfield accepted<br />

the challenge - gaining fame as<br />

one of the first individuals to<br />

appear on Season One of 90<br />

Day Fiancé, a documentarystyle<br />

show produced for TLC.<br />

The breakthrough reality television star gives us a glimpse<br />

into married life, how fitness allowed her a new daily<br />

perspective, and the greatest role she has taken on yet:<br />

Motherhood.<br />

Paola Mayfield rose to fame as audiences witnessed her relocate<br />

from Bogotá, Colombia to Oklahoma - where she would<br />

live with her fiancé, and decide within three months whether<br />

to marry him or return home. Doing her best to acclimate<br />

through serious culture shock, mixed with meeting potential<br />

in-laws for the first time, made for major ratings success. However,<br />

Paola’s road to celebrity status began many miles away<br />

from the “Sooner State.”<br />

“Growing up in Bucaramanga, Colombia is very difficult. There<br />

are not many opportunities, and you have to start working at a<br />

very young age - especially coming from a humble family like<br />

mine. I was signed with a modeling agency, and started walking<br />

in runway shows at sixteen years old. I wanted to do it, and was<br />

excited, but it was never something I had dreamed about... I just<br />

thought it could be a fun way to make money. While pursuing my<br />

career as a model, I moved to Bogotá for school, and that is where<br />

I met my husband. One day I was invited to a party, and noticed a<br />

cute guy standing in the corner. I was kind of learning English at<br />

the time, and thought maybe he could help me practice.”<br />

The rest is cinematic history, and Paola says she occasionally<br />

rewatches older episodes to reminisce.<br />

“I say whatever comes to my mind, and am very bold when<br />

speaking. I did that a lot in all the seasons, but it was a great experience<br />

that brings me wonderful memories. I like to look back<br />

on my life with my husband, and our journey together. I got very<br />

used to the cameras, especially once I got to know the crew. Getting<br />

along with the people behind-the-scenes is important... you<br />

are opening up and sharing so much, it’s nice to make that connection.<br />

However, I don’t think my husband ever got too comfortable in<br />

front of the camera, and was a bit more reserved than me.”<br />

Paola publicly shared her heartbreak of losing a pregnancy, and<br />

overcoming that pain.<br />

“Going through that experience, I did not know it was too common<br />

because not everybody communicates freely about it. When<br />

something like this happens - you lose dreams, hopes, and everything<br />

you think the future will look like after having a baby. For me<br />

being able to show it on television... there were so many women<br />

that reached out to me and expressed they dealt with the same difficulty,<br />

that I definitely don’t regret recording it. It wasn’t easy, and<br />

took time to heal.”<br />

Paola and her husband Russ persevered, and now share a fouryear-old<br />

son named Axel, to whom they are tremendously devoted<br />

parents. His birth was captured on Season 4 of the spin-off show, 90<br />

Day Fiancé: Happily Ever After?<br />

“As far as having more children, I am obsessed with the idea of<br />

adopting. We are in a really good position right now, but it’s a process<br />

we need to research and be very informed about. I’m not saying<br />

I won’t have another kid on my own, but I’m focused on my<br />

career at the moment, which requires me to be very physical.”<br />

In 2021 Russ and Paola temporarily split, while attending counseling<br />

to try and strengthen their marriage.<br />

“My husband and I made the decision to live in an RV, and the<br />

idea was to travel - although that didn’t happen too much. So, we<br />

were stuck in a small space and always on top of each other. We<br />

decided to take some time apart to fix our relationship and find solutions<br />

to the issues. We are back together and recently got a fresh<br />

start in Orlando, and are enjoying it a lot.”<br />

A notable spark of contention on 90 Day Fiancé, was Paola’s<br />

friend Juan, who was shown often at odds with Russ.<br />

“Juan and I stopped talking. I really thought he was someone who<br />

was always just joking, but all of those jokes had become hurtful.<br />

Sometimes the people you think are your friends don’t have the<br />

best intentions for you. I did recently talk to him though, because<br />

I have learned not to hold grudges. We are all human and deserve<br />

second chances, although once broken - it might not be the same<br />

relationship you had before.”<br />

Paola and Russ appeared on 90 Day: Foody Call, the latest spin-off<br />

from the popular franchise, streaming on Discovery Plus. The couples<br />

invite viewers into their kitchens as they prepare meals from<br />

their home countries, all while answering questions from their fanbase.<br />

Paola created a vegan dish and she spoke about what led her<br />

to embrace that lifestyle.<br />

“I have been in the United States now for about ten years. After<br />

two or three years of my husband attempting to make me try what<br />

I considered to be exotic foods, I didn’t want to be guessing anymore<br />

what kind of meat I was eating. So I started changing my diet,<br />

and became vegetarian when I was living in Oklahoma City. I then<br />

changed to pescatarian because I love shrimp ceviche and missed<br />

it, but soon after decided to go the whole way and became vegan.<br />

I am highly against animal cruelty, and will not wear any animal<br />

products either.”<br />

The switch to veganism jump-started a new enthusiasm for her wellbeing,<br />

which has branched off and spurred new professional endeavors.<br />

“When I moved here I gained quite a bit of weight. I was in<br />

a world where I didn’t have friends, didn’t have much to do, and<br />

couldn’t get a job... so I had time to put myself into a new diet routine,<br />

and learned how to stay healthy. At the beginning, I was not<br />

able to run for five seconds, and now I just ran five miles in less than<br />

an hour. My husband saw all the changes, and suggested I become<br />

a personal trainer. After we moved to Miami, I got my fitness coaching<br />

license and started taking clients one-on-one, and then online<br />

because I really love it and can actually help others.”<br />

Recently, Mayfield took that passion for fitness and reinvented<br />

herself as “Paola Blaze,” pro-wrestler, winning the Atomic Revolutionary<br />

Wrestling Championship shortly after her debut.<br />

“I saw the movie Fighting with My Family, which is about a girl<br />

I admire a lot, Paige (two-time WWE Divas Champion), and was<br />

able to really see what wrestling was about. I thought maybe it was<br />

something for me to try, because I knew I had the energy, motivation,<br />

athleticism, and I’m not afraid to take a hit - so I felt like... bring<br />

it on. I began training with JB Cool in Miami before the pandemic<br />

and worked extremely hard. It has been two years since I became<br />

a wrestler, and know I have what it takes to go all the way. I started<br />

out as “Paola Blaze,” which sounds very cool, but I want to be<br />

known just as “Paola” now - and until I accomplish all the goals set<br />

for myself in this new adventure, I don’t want to be done.”<br />

Mayfield conveyed a desire to develop her own line of wrestling<br />

gear in the near future.<br />

“The person I asked to make my outfits was taking too long, so I<br />

took it into my own hands. I have experience in fashion as a shoe designer,<br />

and knew that I could dress myself in exactly what I wanted.”<br />

Fans will soon have another chance to watch Paola compete on,<br />

The GOAT, scheduled to premiere on Amazon Freevee in late <strong>2023</strong>.<br />

The Daniel Tosh hosted series involves reality television legends<br />

from various networks, and is sure to be filled with drama.<br />

“We filmed in a mansion in Atlanta, Georgia. I am so happy to<br />

have met all the amazing participants that made up the cast - including<br />

people from Survivor, Vanderpump Rules, and Shahs of Sunset.<br />

It involves physical and mental challenges, and has a big prize<br />

at the end... I cannot wait for everyone to see it.”<br />

Recently Paola amassed over one million followers on Instagram,<br />

where she invites the public into an intimate display of her everyday<br />

activities. While this milestone shows how far she has come,<br />

celebrities - especially those on unscripted shows - take the brunt<br />

of negativity when it comes to comments online.<br />

“Sometimes I want to stay away from social media, because people<br />

make comments about things I’m not going to change - like the<br />

way I dress or what I wear to the pool, and it gets exhausting. It’s<br />

not too intense right now because I’m not showing my life on TV<br />

like I used to. This may go back again when the next show airs.”<br />

Paola looks forward to launching a new fitness app at some point<br />

this year, and says her evolution is far from over.<br />

“I’m not getting any younger, so I will keep going as long as I can.<br />

I am always working on myself, because you can always change and<br />

get better... but you can’t please everyone.”<br />

$10 Menu with Quesadillas on Monday, Nacho Tuesdays, Pizza<br />

Wednesdays and Burgers on Thursdays.<br />

Their all-day menu includes fresh juicy burgers, fish and chips,<br />

wings, meatball parmesan appetizers, pizza, nachos and more.<br />

There are also cocktails to top off the day or night.<br />

They also elevated their catering menu to include pasta dishes,<br />

vegetarian options, roasted veggies, chicken parm, eggplant parm,<br />

meatball sliders and more. Along with dessert catering platters of<br />

homemade cookies, or mini-cannoli platters to satisfy your sweet<br />

tooth. Their head chef John has an illustrious past with excellent<br />

restaurants. The best part is that the food is fresh and high quality.<br />

When you’ve finished filling up your tank (your stomach) it’s<br />

time to indulge in all the fun that abounds. There are two floors of<br />

wizardry and gaming.<br />

There are vintage pinball machines from the 30’s or newer ones<br />

like Star Wars, The Mandalorian or Star Trek. There is the Creature<br />

from the Blue Lagoon, The Hobbit, The Addams Family Gold<br />

Edition and Mortal Kombat. Some of the newer machines include<br />

Godzilla and Guns N’ Roses.<br />

There is Hoop Fever (free throw basketball), air hockey, a juke<br />

box, signed guitars from luminaries such as Tom Petty and a second-floor<br />

dance floor with disco ball.<br />

They also have 14 flat screen TV screens and a large projector<br />

overhead – on the second floor – that can broadcast sporting<br />

events. “If there is something people want to watch on TV like a<br />

tennis match, basketball playoffs, baseball or football games, we<br />

will try to accommodate requests to the best of our ability,” adds<br />

DiDomenico.<br />

The second floor is where the action continues. There is a dance<br />

floor, a bar made from a ship with 7 flat screen TV’s, air hockey<br />

and pinball machines.<br />

Both sides of the top floor have an array of seating available,<br />

Foosball Table, Vintage Pinball machines, a Vintage Juke Box and<br />

the world’s longest Shuffle Board Table waxed for smooth sailing<br />

To add to the entertainment, there’s a DJ on Friday and Saturday<br />

nights from 10 pm to 2am and a new dance floor to try out<br />

A Fantasy Trip<br />

Around Ring Road<br />

The entire country is about the size of Maine, but with volcanoes,<br />

icebergs, mountains, black sand beaches, and majestic<br />

fjords, there is much to see and savor. The sea in all its colors<br />

and turbulence is always steps away.<br />

To see Iceland at its best, take the Ring Road. This is a circumference<br />

road that circles the entire country. By renting a car, or for<br />

those who wish more adventure by renting a camper, you can take<br />

the Ring Road around the island and catch the true flavor, cuisine,<br />

cities, farms, and people in all their splendor.<br />

I recommend you take the Ring Road counterclockwise for<br />

two reasons. One, you will be traveling the most beautiful parts<br />

of the country first giving you the option to stay in a place longer.<br />

You may not have the time if you wait until the end of your trip.<br />

Two, you run counter to most of the tourist and will encounter<br />

less congestion.<br />

Renting a 4X4 will give you access to the entire country, especially<br />

if you want to make a side trip off the Ring Road. If you camp,<br />

there are campgrounds in every town and city at a nominal cost.<br />

Whatever you’ve heard, whatever you’ve read, whatever pictures or<br />

videos you’ve seen, they cannot capture the raw, stunning beauty of<br />

Iceland. The best time to visit is the summer and the breathtaking<br />

countryside is just outside of Reykjavik, the capital city.<br />

though, with permission, some farmers will allow ‘overnighting’<br />

for a fee - but it is essential, and etiquette demands, you get permission<br />

first. If you don’t camp, there are lovely hotels and inns at<br />

every juncture on the Ring Road.<br />

When hiking in Iceland you can cross glacier fields, even in<br />

summer, with Shangri- La vistas of enchanted valleys and spectacular<br />

mountain ranges, unworldly to Florida eyes. Rugged<br />

mountain trails can often lead to isolated crystal-cold pristine<br />

waterfalls, over ice caps, or through green lush, mountain meadows<br />

with views that stun. Nowhere on earth will you see volcanoes<br />

and the wild sea, thermal pools, and an almost bare lunar<br />

landscape just miles apart.<br />

On the south coast approximately 6 miles west of the town of<br />

Vik is Dyrholaey (deer-lay) on Ring Road. From the high plateau<br />

above the ocean you will find towering black basalt obelisks that<br />

have withstood the petulant sea.<br />

The cliffs at Dyrholaey are home to the colorful <strong>Atlantic</strong> Puffin<br />

- with luck you will see one waddle across the sea-sky and come<br />

to rest close by on the cliffs. The colorful top-heavy Puffin is too<br />

heavy to fly, but doesn’t know it. They feed on the rich sea life, doing<br />

their unique flying waddle as their gull cousins slash over the<br />

waves or sail high above the rugged cliffs.<br />

In Vik, just a short walk from the downtown shops and gas stations<br />

is the long and broad black, volcanic sand beach. Caution<br />

needs to be exercised here. The waves are unpredictable and have<br />

fatally latched on to a victim or two. There are wonderful short<br />

day and half-day hikes in the heights above Vik and its beach.<br />

The national park system in Iceland is breathtaking and something<br />

Icelanders are truly proud of. One of the largest National<br />

Parks in Europe is Vatnajokull National Park which was formed<br />

from two earlier parks to preserve an icecap. The hiking here is<br />

spectacular.<br />

Heading further around the Ring Road on the north coast is the<br />

city of Akureyri where whale watching tours can be arranged.<br />

While traveling the Ring Road, every few miles there is another<br />

scenic wonder. There are many scenic jewels and towns to visit as<br />

one makes the circuit around Iceland.<br />

Completing the Ring Road circle, you enter the capital, Reykjavik.The<br />

city is sophisticated and charming, easy to navigate with<br />

great restaurants and fine shopping. It has all the amenities of any<br />

capital in Europe without the congestion or pollution. It is a gem<br />

on this island nation.<br />

SAFETY TIPS FOR TRAVELING IN ICELAND<br />

Iceland is not sunny south Florida and there are essential words<br />

of caution for the traveler. Do not be lulled into complacency. The<br />

weather and other conditions in Iceland can be treacherous, but if<br />

you exercise caution your trip will be a once in a lifetime experience<br />

to a land of raw, untouched beauty.<br />

The wind of Iceland is dangerous an unpredictable. Weather<br />

conditions, even during the best of the summer months, can<br />

change with no warning and became treacherous. The velocity of<br />

the wind on a cliffside fjord can carry one off a cliff, and hypothermia<br />

at upper elevations can take a hiker’s life.<br />

Tourists from warmer climates need to be aware and take necessary<br />

precautions. Before setting out on a hike or trip always<br />

check the weather and road conditions. There is a nationwide<br />

emergency number in English (112) available 24 hours a day.<br />

There is also a weather phone number and website in English<br />

with on-going weather reports and alerts. When hiking, stay on<br />

designated paths - warning signs are sparse in the country and a<br />

fall while off trail can lead to an injury, or worse. It is easy to get<br />

lost and a night stranded in the mountains can be fatal. Always,<br />

hike with a partner, never alone.<br />

Vegetation grows slowly in Iceland and the environment in this<br />

sub-artic country is fragile. It takes many years to build up substantial<br />

growth and Icelanders are careful of it.<br />

There are many thermal pools in Iceland. Some are dangerous,<br />

often not marked as hazardous. The wrong thermal pool can severely<br />

burn.<br />

Respect the Icelandic ocean, it can pull you from the shore with<br />

a surprise killer wave that can sweep you into the unforgiving,<br />

freezing sea.<br />

When traveling in the outback, register your itinerary with<br />

SafeTravel.Is. If you become lost, rescue can be arranged. It is<br />

smart to let this service know where you are going.<br />

Earthquakes, volcanic eruptions and road washouts are Icelandic<br />

facts of life. Check road and safety conditions in the area you<br />

website or call the weather number.<br />

<strong>July</strong> 1st, 1863 and 1867<br />

• The Battle of Gettysburg, one of the pivotal battles of the<br />

American Civil War, begins.<br />

• Canada Day, a national holiday in Canada, is commemorated<br />

when the confederation of Upper and Lower Canada were united<br />

to become the Dominion of Canada.<br />

<strong>July</strong> 2nd, 1881 and 1964<br />

• President James A. Garfield was<br />

shot and wounded as he entered a<br />

railway station in Washington D.C.<br />

The wound would prove fatal, and<br />

he would die a few months later on<br />

September 19th.<br />

• The Civil Rights Act of 1964<br />

was signed by President Lyndon<br />

B. Johnson, which would prohibit<br />

discrimination most notably in the field<br />

of voter registration, paving the way for<br />

African Americans to gain equal footing in elections.<br />

<strong>July</strong> 4th, 1776<br />

• The Continental Congress officially approved the Declaration<br />

of Independence, signaling their desire for independence from the<br />

British Empire. Today it is celebrated as a national holiday in the<br />

United States.<br />

• The Continental Congress adopted the Olive Branch Petition<br />

in an effort to reconcile with the British Empire. However, King<br />

George III refused to receive the letter<br />

• A resolution is signed by President William McKinley officially<br />

annexing Hawaii. Two years later it would be incorporated into the<br />

U.S. as a territory and over 50 years later it would become a state.<br />

<strong>July</strong> 9th, 1868<br />

• The 14th Amendment of the United States Constitution is<br />

ratified. The amendment served to define U.S. citizenship and<br />

prevent states from limiting citizenship on a discriminatory basis.<br />

It also barred those who partook in the Confederate rebellion<br />

during the Civil War from holding public office.<br />

<strong>July</strong> 12th, 1943<br />

• The largest tank battle in history, the Battle of Kursk, takes<br />

place during the Nazi invasion of the Soviet Union. The result of the<br />

battle was a Soviet victory and was the final strategic offensive the<br />

Germans were able to launch in the East, as the Allied invasion of<br />

Sicily would divert Hitler’s attention.<br />

<strong>July</strong> 13th, 1787<br />

• Congress enacts the<br />

Northwest Ordinance, which<br />

outlined the procedures<br />

for turning the territories<br />

into a state. It would be<br />

this ordinance that led<br />

to the establishment of<br />

five states in the area<br />

north of the Ohio River.<br />

It also made clear that the<br />

new states would be equal<br />

with the original 13.<br />

• The amphibious invasion of the island of Sicily marked the<br />

first Allied invasion of Europe against the Axis forces. Dwight D.<br />

• The first popularly elected leader in Russia’s thousand-year<br />

history is elected in the form of Boris Yeltsin as he took his oath of<br />

office.<br />

<strong>July</strong> 14th, 1791<br />

• French citizens march on the Bastille, signaling the beginning<br />

of the French Revolution and plunging Europe into almost three<br />

decades of conflict and political turmoil.<br />

• In the First World War, Germany launched their last major<br />

offensive during the Battle of the Marne. Following their repulsion<br />

at the hands of American, British, and Italian forces, the Germans<br />

would not launch another offensive, eventually agreeing to an<br />

armistice in November.<br />

<strong>July</strong> 16th, 1945 and 1969<br />

• The experimental bomb “Fat Boy” was set off in the New<br />

Mexican desert. The atomic bomb created a mushroom cloud that<br />

rose above 40,000 feet and emitted heat three times to temperature<br />

of the sun, annihilating all plant and animal life in a mile radius.<br />

• The Apollo 11 Lunar Landing mission begins with its liftoff<br />

from the Kennedy Space Center in Florida.<br />

• President Truman signs an executive order determining<br />

• The world watched<br />

as U.S. astronaut Neil<br />

Armstrong took man’s<br />

first step on the moon.<br />

As he stepped on the<br />

surface of the moon<br />

he said, “That’s one<br />

small step for man,<br />

Harry Truman, and Chiang Kai-Shek announced the Potsdam<br />

Declaration, calling for the unconditional surrender of Japan. The<br />

Japanese, unaware of America’s new nuclear arsenal, rejected it.<br />

<strong>July</strong> 26th, 1944<br />

• The U.S. Army begins to desegregate its training<br />

camo facilities, marking the first step towards battlefield<br />

integration. However, the official order from the president<br />

would not come until 4 years later.<br />

<strong>July</strong> 27th, 1953<br />

• The Korean War comes to an end following the signing of<br />

an armistice by U.S. and North Korean delegates. The armistice<br />

remains in effect today.<br />

also a treasure chest of goodness bundled within<br />

a perfectly coiffed persona. When Meister walks into a<br />

room sparks fly and she becomes the center of attention.<br />

This is not her motive or her message, but trying to<br />

bottle the essence of this woman is like trying to capture<br />

a sunset in a plastic bag. “I am all about empowering<br />

others. No matter whose idea it is, you want to make<br />

sure the team owns it. The quieter you are the louder<br />

you are heard.”<br />

If this is truly the case then Meister is a whisper in the<br />

windstorm of life. She was born in New Haven, Connecticut<br />

but moved around with her family to Mentor, Ohio,<br />

Wheaton, Illinois and finally Wilmington, Delaware. Her<br />

father, John J. Haley Jr. was in fiber sales and took his<br />

family with him as he climbed the corporate ladder.<br />

Meister calls her upbringing traditional, and is quite<br />

vocal about the influence of her parents and the schools<br />

she attended. “I went to Catholic schools my whole life<br />

and part of going to a Catholic school means giving back<br />

to the community and fundraising for the school.”<br />

Her parents also echoed the same sentiment. “Make<br />

sure you give back,” they told her repeatedly.<br />

Those words did not fall on deaf ears. Meister has<br />

been giving back ever since she came to Florida in 1984.<br />

When she was in the Boca Junior League she would<br />

throw parties in her backyard and everyone had to<br />

bring a toy which was donated to charity. She also did<br />

fundraising for her daughter’s school, St. Vincent Ferrer.<br />

Meister used her talent of collaboration and connectivity<br />

to support other parents in her community.<br />

“I was friendly with all the other mothers in the area.<br />

We had fundraising events for our children’s schools<br />

and would meet, compare schedules, and attend each<br />

other’s events. These same women support my charity<br />

projects to this day.”<br />

Though Meister’s career started in retail, the trajectory<br />

of her life has been through the lens of building, creating<br />

and giving back to a cause greater than herself. She<br />

worked in the non-profit world for Kids in Distress and<br />

learned from the best brains in the fundraising arena.<br />

While she was on bedrest waiting to give birth to her<br />

daughter Haley, four different non-profit agencies called<br />

to hire her.<br />

A Force For Good<br />

But she took a decidedly different path. As a matter of<br />

fact, her couch was the place where she gave birth twice.<br />

“A friend of mine called and said, ‘Now is your time<br />

to think about working on your own. I told her I am going<br />

to deliver a baby in a month. She said, ‘You’re so dynamic<br />

you should work with charities.’ So, I called the<br />

president of Kids in Distress and told him I was going to<br />

start my own company and he became my first client.”<br />

She named her company Charity Dynamics & Auctions<br />

and hasn’t looked back since. Her networking<br />

skills are monumental and her charisma rivals FPL’s<br />

power grid.<br />

At the last “We are Delray” event for the Delray Chamber<br />

she brought in a helicopter that dropped golf balls<br />

onto the course. Tickets were sold to win a free helicopter<br />

ride and the event raised triple the amount expected.<br />

That’s what is so amazing about Meister, everything<br />

she touches turns to gold. She is adamant that her<br />

events are a team effort – and many are – but it is Meister<br />

who motivates volunteers to create miracles. She’s<br />

also adept at getting the business community to partner<br />

up with charities to do good.<br />

“I tell non-profits, ‘You are not asking for money, you<br />

are giving them the gift of giving and feeling good.’”<br />

As anyone will tell you – giving in itself is a gift to the<br />

giver. For Meister this old adage couldn’t be more fitting.<br />

“I love watching fundraiser professionals’ eyes light<br />

up with their accomplishments. I love helping charities<br />

grow. I get a number high like a runners high. Give me<br />

a financial goal and I will shoot to beat it every time.”<br />

You bet she will. She did just that for the Delray Beach<br />

Public Library. She was a volunteer, founding member<br />

and vendor chair for the “Girls, Pearls, Hats and Heels”<br />

event. Meister was asked to bring in 10 vendors and<br />

raise $2,000; she brought in 28 vendors and raised over<br />

$12,000. The next year the team raised over $65,000.<br />

Meister has also volunteered at Old School Square,<br />

St. Vincent Ferrer, Be Like Brit, Bound for College<br />

and others. She’s on the Board (and does fundraising)<br />

for the local Notre Dame Club, and is an advisor<br />

and educator for the Non- Profit Council of the<br />

Delray Chamber.<br />

At St. Vincent’s she chaired - and grew - a yearly golf<br />

outing from 24 to 144 players, raising $60,000 a year.<br />

Meister also created fundraising events like Tea Parties<br />

and Fashion Shows that raised eye popping amounts of money for them.<br />

What makes Meister such a key player in the city of Delray is her<br />

large network of volunteers, business partners and social savviness.<br />

When she attends events (which is quite often) Meister sparkles with<br />

graciousness, goodness and humor. Though she won’t admit to it, this<br />

Delray goddess of goodness is quite the brainiac.<br />

Those who know her agree.<br />

“Mimi Meister is a great visionary for the Chamber. She led the creation<br />

of our We Are Delray event last year and took us to a whole new<br />

level! Her ability to analyze the potential, and then execute an event to<br />

reach beyond that potential, makes her a rockstar for the Chamber. She<br />

has breathed confidence into our efforts, allowing our committees to<br />

dream big and succeed even BIGGER,” said Lynn Van Lenten, Program<br />

Director for the Delray Chamber.<br />

Others feel the same way. “Mimi supports all non-profits and makes everyone<br />

feel good for the mission, whether it’s St Vincents Ferrer School,<br />

OSS, The Delray Beach Public Library, Sandoway House or the Delray<br />

Chamber. We call her events the Friendraisers!” said Louise Glover.<br />

When not strategizing for non-profits or speaking to groups, Meister<br />

can be found traveling the globe with her husband Dan. If you visit her<br />

Facebook Page you can stay home and just see the world through her<br />

eyes (by way of her action-packed photos).<br />

Meister is also perfectly coiffed at all times and usually looks as if she<br />

just walked off the cover of “Vogue.” When asked about the origin of her<br />

stye savvy, she laughs and says, “I worked in fine retail stores and know<br />

how to take the traditional and make it modern.”<br />

Perhaps, but everyone who sees Meister at openings and events<br />

knows that her apparel palette is equal to that of a European aristocrat.<br />

She has hats to match each outfit and owns 23 pearl necklaces.<br />

But Meister’s outer appearance is only the entrance to her multilayer<br />

of diverse talents. She was professionally trained to create formal<br />

British tea parties and hosted one for over 100 women (at Chapel 4) for<br />

the Chamber’s “Focus on Women” event. Her esteemed tea parties are<br />

part of Meister’s charitable fundraising arm: Tea by the Sea With Mimi.”<br />

There isn’t much Meister can’t do well. But, she is adamant that life in<br />

Delray is about “Collaboration Not Competition.”<br />

She is indeed the queen of collaboration. But, Meister’s selfless deeds<br />

ripple through the Delray Beach terrain like a steady current, and her<br />

bright light steers everyone to the finish line in record time.<br />

That’s just the way she rolls.<br />

Summer Recipes<br />

During the warm summer months, we all look to eat<br />

lighter. Here are some easy recipes for summer meals.<br />

Grilled Chicken Souvlaki<br />

ingredients<br />

1 lb. boneless, skinless chicken breasts<br />

3 tbsp. olive oil<br />

1/2 tsp. ground coriander<br />

1/2 tsp. dried oregano<br />

Kosher salt<br />

Pepper<br />

1 pt. grape tomatoes<br />

2 clove garlic<br />

3 tbsp. fresh lemon juice<br />

1/2 head romaine lettuce<br />

4 scallions<br />

1/2 c. Fresh dill<br />

4 pieces pita bread<br />

Lowfat Greek yogurt<br />

8 skewers<br />

1. Heat grill to medium-high. In a large bowl, toss the chicken with 1<br />

tablespoon oil, then the coriander, oregano and 1/4 teaspoon each<br />

salt and pepper. Thread onto skewers.<br />

2. Place the tomatoes and garlic on a large piece of heavy-duty foil.<br />

Drizzle with 1 tablespoon oil and sprinkle with 1/4 teaspoon each<br />

salt and pepper. Fold and seal the foil to form a pouch.<br />

3. Place the pouch and skewers on the grill and cook, shaking the<br />

pouch and turning the kebabs occasionally, until the chicken is<br />

cooked through, 8 to 10 minutes. Just before removing from the grill,<br />

brush the chicken with 1 tablespoon lemon juice.<br />

4. Meanwhile, in a large bowl, toss the lettuce, scallions, and dill with<br />

the remaining 2 tablespoons of lemon juice and tablespoon oil, plus<br />

¼ teaspoon each salt and pepper. If desired, grill pita bread until<br />

warm, 1 minute each side.<br />

5. Spread the pita with yogurt, if desired, then stuff with the chicken,<br />

tomatoes, and salad.<br />

2 (15 oz.) cans chickpeas<br />

1/2 c. packed mint, chopped<br />

3 tbsp. lime juice<br />

2. Toss bell peppers, seeded and quartered, with 2 tablespoons olive<br />

oil. Season boneless beef top loin steaks with 1⁄2 teaspoon salt. Grill<br />

steak and peppers, covered, 2 to 4 minutes per side or until steak is<br />

cooked to desired doneness and peppers are charred. Chop peppers.<br />

3. Toss farro with peppers, corn, kale leaves, balsamic vinegar, 3<br />

tablespoon olive oil and 3⁄4 teaspoon each salt and pepper. Thinly<br />

slice steak; serve over farro.<br />

1. Heat grill to medium-high. Grill corn 12 minutes or until charred<br />

in spots, turning.<br />

2. Thread swordfish steak onto 8 soaked bamboo skewers (or metal<br />

skewers). Brush fish and zucchini with canola oil; sprinkle with chili<br />

powder and salt. Grill fish and zucchini 6 minutes or until fish is<br />

opaque, turning once.<br />

3. Cut corn off cobs, chop zucchini and toss with chickpeas, mint,<br />

lime juice, oil, and salt. Serve with kabobs.<br />

What Are the Most Critical<br />

Approaches to A Healthy Pet?<br />

For many decades throughout my professional life, I have always<br />

asked myself what skills have I acquired that I can share with<br />

others in my service to the pet world. I am fortunate that my love<br />

and understanding of life, and my knowledge in physiology of animals<br />

allows me to share this understanding to help improve the overall<br />

health of our pets.<br />

The most frequent questions and concerns that pet parents have is<br />

the title of this article “What Are the Most Critical Approaches to A<br />

Healthy Pet? It is often asked in many other ways, however that is the<br />

implication. To proceed with the approaches, we must define what a<br />

healthy pet is.<br />

True health is when the body is in true homeostasis or balance as<br />

the result of proper nutrition, clean environment, and managed stress.<br />

In managing these factors, the most difficult task to control is the<br />

environmental factors, as we have little control outside of our immediate<br />

area. We cannot control the air around us but, in our homes, we<br />

can add specialized air purification systems and monitor the products<br />

we may be using. Volatile cleaners, deodorizers, antibacterial, insecticidal,<br />

and other chemical agents are not only toxic but contribute to<br />

the stress on the body.<br />

Proper nutrition is much easier to attain as the proper, most nutritious<br />

entrees are found in nature and can be replicated through our<br />

food supply. We must look at the physiology of our pet and understand<br />

what their species’ appropriate diet and entrees would be. We then<br />

must source the cleanest ingredients possible. As our dogs and cats<br />

are carnivores, that means the protein sources should be raised as<br />

naturally and cleanly as possible with no chemical interventions. The<br />

same holds true for their drinking water. Improper or unnaturally<br />

raised foods or added chemicals again stress the body.<br />

We must also be aware of toxins introduced with the perception of<br />

keeping us healthier. Vaccines, drugs and even synthetic supplements<br />

add to the toxicity and stress.<br />

As we look at these factors, we can be certain that it is not easy to<br />

achieve this perfect environment and diet for our pets or even ourselves.<br />

We understand the toxic assault that we all face every day. We<br />

can and must do whatever we can to reduce and eliminate these toxins.<br />

This is the most critical thing we must do. We have been blessed<br />

with the tools to do this.<br />

There is a plethora of natural herbs and botanical foods that can<br />

accomplish this detoxification process. The process involves cleaning<br />

the filtration system like our digestive tract, liver, kidneys, and<br />

lymphatic system.<br />

Starting with clean ionized living water, we can use milk thistle, dandelion<br />

root, echinacea, astragalus turmeric, chlorella, spirulina, cilantro,<br />

mushrooms and much more that not only draw the toxins out of<br />

the cells but also act as sponges so the body can eliminate them. These<br />

should be used in their most natural state as fresh or in a dry powder<br />

to eliminate further contamination through other processes.<br />

The body is designed to heal and regenerate itself and we must supply<br />

the tools to do this.<br />

This lifestyle of perpetual healthy practices and nutrition with the<br />

cleansing of the toxins will keep our pets and us in near optimal health<br />

with longevity being the beneficial side effect.<br />
