Simtul tactil<br />

Ca si mirosul, simtul tactil este <strong>un</strong> alt sistem senzorial antic, primordial, prezent si <strong>in</strong><br />

membranele organismelor <strong>un</strong>i <strong>ce</strong>lulare. A at<strong>in</strong>s o forma foarte evoluata <strong>in</strong> specia noastra.<br />

Ganditi-va la <strong>de</strong>gete care ne ajuta sa simtim iregularitatile suprafetelor sau <strong>de</strong>taliile<br />

<strong>de</strong> pe tesaturi care s<strong>un</strong>t impecabile pentru ochiului liber.<br />

Senzatiile tactile joaca <strong>un</strong> rol f<strong>un</strong>damental <strong>in</strong> per<strong>ce</strong>ptia noastra asupra mancarii si pot<br />

fi divizate <strong>in</strong> cutanate si orale. Utlimul <strong>de</strong>riva d<strong>in</strong> stimularea re<strong>ce</strong>ptorilor mecanici prezenti<br />

<strong>in</strong> piele, mai ales la <strong>de</strong>gete. In zilele noastre t<strong>in</strong><strong>de</strong> sa <strong>de</strong>v<strong>in</strong>a subapreciat <strong>in</strong> numele<br />

respectarii regulilor <strong>de</strong> igiena, care <strong>in</strong>terzic at<strong>in</strong>gerea mancarii <strong>in</strong> timpul pro<strong>ce</strong>sarii si <strong>in</strong><br />

timpul consumului. Senzatiile tactile orale prov<strong>in</strong> d<strong>in</strong> re<strong>ce</strong>ptori mecanici prezent <strong>in</strong> cavitatea<br />

orala, <strong>in</strong> special pe limba, ne permite sa evaluam consistenta si structura mancarii,<br />

numita si textura. A<strong>ce</strong>sta este <strong>un</strong> atribut important pentru mancare care reflecta dispozitia<br />

spatiala al moleculelor d<strong>in</strong> care este compus. Contribuie d<strong>in</strong> pl<strong>in</strong> la a <strong>de</strong>term<strong>in</strong>a<br />

senzatiile globale pe care le per<strong>ce</strong>pem <strong>in</strong> timpul mestecarii si <strong>in</strong>ghitirii. De fapt consistenta<br />

mancarii are <strong>un</strong> impact profo<strong>un</strong>d la nivelul ac<strong>ce</strong>ptarii si pla<strong>ce</strong>rii si poate avea o<br />

<strong>in</strong>fluenta psihologica si emotionala cat si fiziologica. S-a <strong>de</strong>monstrat ca, <strong>de</strong> exemplu, cu<br />

cat mai gros este <strong>un</strong> sos cu atat mai <strong>in</strong>tensa este aroma.<br />

In general valoram crocantul si gr<strong>un</strong>josul (c<strong>un</strong>oscut ca si friabilitate), ca si alimente cu<br />

a<strong>ce</strong>ste atribute furnizand <strong>un</strong> puternic simt <strong>de</strong> suc<strong>ce</strong>s cand muscam d<strong>in</strong> el. Moale si cremos<br />

s<strong>un</strong>t l<strong>in</strong>istitoare pentru conexi<strong>un</strong>ea lor cu mancarea pentru copii. T<strong>in</strong><strong>de</strong>m sa resp<strong>in</strong>gem<br />

mancaruri care s<strong>un</strong>t prea dure sau tari pentru ca efortul <strong>in</strong> mestecarea lor ne<br />

da senzatia neplacuta <strong>de</strong> esuare. Cont<strong>in</strong>utul gras este <strong>un</strong>ul d<strong>in</strong> factorii care <strong>in</strong>fluenteaza<br />

consistenta mancarurilor, dandu-le o mai mare palatabilitate si facand consumatia lor<br />

mai placuta (<strong>in</strong> a<strong>ce</strong>lasi timp crescand cont<strong>in</strong>utul caloric). Stimuli senzoriali care tehnic<br />

apart<strong>in</strong> altei sfere senzoriale, s<strong>un</strong>t <strong>de</strong>seori <strong>in</strong>cluse la simtul tactil. A<strong>ce</strong>sta <strong>in</strong>clu<strong>de</strong> caldura,<br />

care este simtita <strong>de</strong> catre propriul simt, per<strong>ce</strong>ptia termica si stimulii <strong>de</strong> durere, care<br />

apart<strong>in</strong> simtului nociper<strong>ce</strong>ptiv al per<strong>ce</strong>perii durerii. A<strong>ce</strong>sta d<strong>in</strong> urma este responsabil,<br />

pr<strong>in</strong>tre altele, pentru senzatia <strong>de</strong> picant pe care o simtim cand consumam mancaruri<br />

care cont<strong>in</strong> piper sau ar<strong>de</strong>i iute.
