Masurarea diferitelor nivele <strong>de</strong> per<strong>ce</strong>ptie pentru sarat si amar<br />

(De la varsta <strong>de</strong> 10 ani pentru testul sarat, iar <strong>de</strong> la varsta <strong>de</strong> 12 ani pentru testul amar)<br />

Experimentul 7.2 poate fi repetat pentru a masura per<strong>ce</strong>ptia pragurilor pentru gusturi<br />

sarate si amare. Folositi a<strong>ce</strong>lasi pro<strong>ce</strong><strong>de</strong>u pentru a prepara 9 solutii cu con<strong>ce</strong>ntratii <strong>in</strong><br />

ord<strong>in</strong>e crescatoare, preparand solutia <strong>in</strong>itiala cu 20 <strong>de</strong> grame <strong>de</strong> clorura <strong>de</strong> sodiu pentru<br />

a prepara solutia sarata sau 5 grame <strong>de</strong> cofe<strong>in</strong>a pentru <strong>ce</strong>a amara. Vor fi obt<strong>in</strong>ute<br />

urmatoarele con<strong>ce</strong>ntratii:<br />

Solutiile sarate: 0.1, 0.2, 0.3, 0.4, 0.5, 0.6, 0.7, 0.8, 0.9 grame/litru<br />

Solutiile amare: 0.025, 0.05, 0.075, 0.1, 0.125, 0.15, 0.175, 0.2, 0.225 grame/litru<br />

Folosirea solutiilor prea diluate pentru solutiile amare <strong>in</strong> comparatie cu solutiile dulci<br />

si sarate folosite <strong>in</strong> test, nu trebuie sa fie surpr<strong>in</strong>zatoare: a<strong>ce</strong>st gust, care are misi<strong>un</strong>ea<br />

importanta <strong>de</strong> a semnala toxicitatea d<strong>in</strong> mancare, este <strong>de</strong> fapt mult mai b<strong>in</strong>e per<strong>ce</strong>put<br />

<strong>de</strong>cat <strong>ce</strong>lelalte.<br />

• Fructe<br />

(Pentru toate varstele)<br />

Organizati o <strong>de</strong>gustare <strong>de</strong> fructe cru<strong>de</strong> si confiate cu diferite con<strong>ce</strong>ntratii ale zaharului<br />

si evaluati pla<strong>ce</strong>rea <strong>in</strong> relatie cu per<strong>ce</strong>ptia dul<strong>ce</strong>lui.<br />

(De la varsta <strong>de</strong> 12 ani)<br />

Cum se schimba <strong>in</strong>tensitatii gustului <strong>de</strong> dul<strong>ce</strong> <strong>in</strong> timpul coa<strong>ce</strong>rii? Comparati a<strong>ce</strong>lasi tip<br />

<strong>de</strong> fruct <strong>in</strong> timpul diferitelor stadii <strong>de</strong> coa<strong>ce</strong>re. Experimentul poate fi <strong>un</strong> p<strong>un</strong>ct <strong>de</strong> pornire<br />

pentru o excursie <strong>ghid</strong>ata pe o cultivatie, o recolta sau <strong>un</strong> <strong>de</strong>pozit <strong>de</strong> fructe, crescute<br />

pe campuri, <strong>in</strong> livezi sau <strong>in</strong> sere.<br />

• Indulcitorii<br />

(De la varsta <strong>de</strong> 12 ani)<br />

Colectati o gama <strong>de</strong> <strong>in</strong>dulcitori naturali (zahar alb, zahar brut, zahar br<strong>un</strong>, melasa, miere,<br />

sirop <strong>de</strong> artar, etc.). Comparati-le savoarea pr<strong>in</strong>tr-<strong>un</strong> test al gustului si pr<strong>in</strong>tr-o discutie<br />

cu privire la variata lor folos<strong>in</strong>ta <strong>in</strong> bucatarie. Explorati locul <strong>de</strong> <strong>un</strong><strong>de</strong> prov<strong>in</strong> si<br />

cum s<strong>un</strong>t produse. Intocmiti <strong>un</strong> poster mare, <strong>ce</strong>ntralizand impre<strong>un</strong>a toate <strong>in</strong>formatiile.<br />

Un exercitiu similar poate fi sust<strong>in</strong>ut folos<strong>in</strong>d diferite tipuri <strong>de</strong> sare (sare <strong>de</strong> mare, sare<br />

gema, etc.) la diferite nivele <strong>de</strong> calitate.
