Auzul<br />

Asa cum ochiul tradu<strong>ce</strong> energia electromagnetica a razelor <strong>de</strong> lum<strong>in</strong>a <strong>in</strong> impulsuri nervoase,<br />

asa auzul este capabil sa converteasca energia mecanica a s<strong>un</strong>etelor <strong>in</strong> <strong>in</strong>formatii<br />

<strong>de</strong> auz. Un<strong>de</strong>le <strong>de</strong> s<strong>un</strong>et se formeaza cand moleculele <strong>de</strong> aer compresate apasa asupra<br />

moleculelor adia<strong>ce</strong>nte cauzand vibratiile. In timp <strong>ce</strong> mancam stimulii <strong>de</strong> auz ajuta imbogatirea<br />

<strong>in</strong>formatiei senzoriale pe care o primeste creierul <strong>de</strong>spre mancare. Stimulii pot<br />

fi <strong>in</strong>terni si externi. Formatorii (care s<strong>un</strong>t produsi <strong>in</strong> gura <strong>in</strong> timp <strong>ce</strong> mestecam) contribuie<br />

impre<strong>un</strong>a cu stimulii tactili la evaluarea cu ajutorul creierului aspura consistentei<br />

mancarii.<br />

In timpul mestecatului, <strong>de</strong> exemplu, o bucata proaspata si moale <strong>de</strong> pa<strong>in</strong>e fa<strong>ce</strong> mai<br />

put<strong>in</strong> zgomot ca si o gris<strong>in</strong>a sau ca si <strong>un</strong> cips d<strong>in</strong> cartof. In timp <strong>ce</strong> fructele si legumele<br />

proaspete produc mai mult zgomot <strong>de</strong>cat <strong>ce</strong>le gatite. De fapt, noi oferim mai multa<br />

atentie a<strong>ce</strong>stor stimuli auditivi <strong>de</strong>cat senzatiilor tacile d<strong>in</strong> gura. A<strong>ce</strong>st lucru a fost <strong>de</strong>monstrate<br />

<strong>in</strong>tr-<strong>un</strong> experiment <strong>in</strong> care subiectii au fost pusi sa asculte la casti s<strong>un</strong>ete<br />

amplificate produse <strong>in</strong> gurile lor <strong>in</strong> timp <strong>ce</strong> zdrobeau diferite tipuri <strong>de</strong> cipsuri d<strong>in</strong> cartofi.<br />

Organizatorii experimentului au constatat ca falsificarea tonului zgomotului d<strong>in</strong> casti<br />

a fost suficient pentru a <strong>in</strong>sela boltele palat<strong>in</strong>e a subiectilor, facandu-i sa creada ca<br />

mananca <strong>un</strong> cips mai crocant <strong>de</strong>cat <strong>ce</strong>l anterior, chiar daca a<strong>ce</strong>asta nu a fost a<strong>de</strong>varata.<br />

Zgomotele externe care nu s<strong>un</strong>t legate <strong>de</strong> mancare, cum s<strong>un</strong>t muzica si vo<strong>ce</strong>a, pot <strong>de</strong><br />

asemenea <strong>in</strong>fluenta puternic <strong>in</strong> alegerea mancarii. Ganditi-va doar la muzica <strong>de</strong> f<strong>un</strong>dal<br />

d<strong>in</strong> supermarketuri si restaurante, care animeaza, facand experienta mult mai placuta si<br />

<strong>in</strong>curajeaza achizitiile. In timpul mesei, stimulii externi auditivi prea ridicati sau prel<strong>un</strong>giti<br />

pot <strong>in</strong>terfera cu per<strong>ce</strong>ptia <strong>senzoriala</strong>, <strong>in</strong>cluzand gustul. Mancand <strong>in</strong>tr-<strong>un</strong> mediu foarte<br />

zgomotos, <strong>de</strong> exemplu, redu<strong>ce</strong> <strong>sens</strong>ibilitatea la gusturi si impiedica gustarea completa a<br />

mancarii. Pe <strong>de</strong> alta parte, acompani<strong>in</strong>d mancatul cu muzica placuta si relaxanta poate<br />

creste apetitul si imb<strong>un</strong>atatirea digestiei.<br />

Experienta 8.1 Pocnet sau paraitura? Rec<strong>un</strong>oscand mancarea dupa s<strong>un</strong>et<br />

(Pentru toate varstele)<br />

Diferite mancaruri pot produ<strong>ce</strong> diferite s<strong>un</strong>ete bazate pe consistenta lor.<br />

C<strong>un</strong>oastem s<strong>un</strong>etele produselor? A<strong>ce</strong>st experiment ne testeaza constientizarea.<br />

Materiale:<br />

• Niste produse cu diferite consistente (fructe si legume proaspete si gatite, gris<strong>in</strong>e,<br />

cipsuri d<strong>in</strong> cartofi, biscuiti, prajituri, etc.)<br />

• Materiale opa<strong>ce</strong> sau bucati <strong>de</strong> textile pentru a lega la ochi participantii<br />

• Un microfon cu <strong>un</strong> suport si o statie (optional)<br />

• Hartie si creioane<br />

Metoda:<br />

• Gustati bucati mici d<strong>in</strong> fiecare produs testat. Rugati participantii sa isi focalizeze<br />

atentia asupra diferitelor s<strong>un</strong>ete facute <strong>de</strong> prima muscatura si apoi mestecarilor<br />

ulterioare, cand saliva a <strong>in</strong>muiat mancarea si i-a schimat consistenta.<br />

• Legati la ochi participantii.
