“People like Cecil are the backbone

Fairtrade principles, ensuring pensions,
furthering employees’ education,
assisting with school fees... Most folks
have been with us for more than
12 years. I guess we’re a big family.”
As the ishing industry is in a
depressed state in town’s like Velddrif,
companies like Khoisan are making
a meaningful difference. It’s also
actively involved in outreach
programmes, and helps
sponsor the Cape Legends
Inter-Hotel Challenge, a
competition that nurtures
young chefs of the future.
This wonderful initiative was
started by Annette Kesler
– one of SA’s most revered
food writers and a legendary
former food editor of Fairlady magazine,
she is now editor of showcook.com,
an online culinary-industry portal. Said
Annette of working with Khoisan Salt:
“If I was stranded on a desert island,
certainly Britt Geach’s fantastic pure sea
salt, Khoisan, would be my number-one,
most important ingredient.”
Driving back down the coast, I thought
about salt, which we reach for so casually
on the dining-room table. This simple
product is the result of millennia of
human endeavour, rich in history, ritual
and symbolism. Salt has been such
a faithful companion to our species
that we can track the development of
civilisations by its presence.
Needless to say, I’ll never again look
at my humble salt cellar in quite the
same way.
