Le vendredi midi, Quentin et Thomas, deux graphistes<br />
français, créent un hamburger, le photographient puis<br />
postent l’image sur Internet. Du Burger Pour Tous (voir<br />
ci-dessus), sur le thème brûlant du mariage gay, au Burger<br />
de la Renonciation papale, ces objets d’art comestibles<br />
leur valent des adorateurs et 50 000 personnes les suivent<br />
sur Tumblr.<br />
Est-ce que vous mangez vos créations ?<br />
On les mange jusqu’à la dernière miette. C’est avant tout notre<br />
déjeuner. Notre expérimentation a donné lieu à des surprises<br />
culinaires, parfois furieusement indigestes, et parfois étrangement<br />
réussies. Le hamburger Go Green [wasabi, menthe et beaucoup de<br />
colorant vert] n’était pas mal du tout !<br />
De quelle création êtes-vous les plus fiers ?<br />
Nous les aimons tous avec la même tendresse paternelle. Si on<br />
devait en garder un, ça serait peut être My name is Bun, James<br />
Bun, qui était recouvert de feuille d’or.<br />
Et vous êtes au travail quand vous faites les prises de vues ?<br />
Tout se fait en 1h30 pendant la pause déj… Le temps qu’il nous<br />
faut pour trouver un concept, faire les courses, cuisiner, faire la<br />
prise de vue et digérer. Ça ne dérange pas la patronne, sauf quand<br />
il a fallu lessiver les murs pour éponger la graisse.<br />
Et vos vraies identités…?<br />
On ne peux pas se permettre de révéler nos identités… On<br />
se doit de protéger nos familles et nos proches, vous comprenez ?<br />

neon artist Chris Bracey, who made<br />
signs for the area’s sex shops and<br />
strip joints in its 70s heyday. Since<br />
then, he’s worked on fi lm sets<br />
for Kubrick and Tim Burton,<br />
collaborated with McQueen and<br />
Mulberry, and become a seriously<br />
collectable artist in his own right;<br />
this month sees the opening of<br />
his fi rst UK solo show. But he<br />
still has a soft spot for the old<br />
days, as we discover at his East<br />
London workshop.<br />

in Belgium, Goose have an<br />
electro-rock sound, a reputation for<br />
riotous gigs and a hotly tipped new<br />
album, Control Control Control. And<br />
let’s not forget an enviable onstage<br />
wardrobe, courtesy of Dior’s Raf<br />
Simons, who happens to be an old<br />
friend. We catch up with singer<br />
Mickael Karkousse.<br />
Metropolitan: ‘Goose’ is a Top<br />
Gun reference, right?<br />
Mickael Karkousse: He’s the<br />
sidekick that dies. We were originally<br />
thinking Maverick, but another band<br />
got there fi rst. We were big fans of<br />
the movie, back in the day; it was<br />
only recently, seeing it on TV, that<br />
I realised how cheesy it actually is.<br />
What can I say? It was the fi rst time<br />
I fell in love with a girl.<br />
How would you sum up<br />
your sound?<br />
It’s rock, but we play electronic<br />
instruments too. With the fi rst album<br />
we were tagged as New Rave, and<br />
played a lot with people like Justice,<br />
Soulwax and the Bloody Beetroots.<br />
But that scene is dead: everyone’s<br />
doing their own thing. Now, we don’t<br />
even try to fi t in.<br />
Your gigs sound like a blast<br />
We want people to have fun, like<br />
they would at a club. With our<br />
music, you don’t need to know the<br />

songs to have a good time. It’s not<br />
a rock show, where you wait for a<br />
single you know, sing along, then<br />
fall asleep again. It’s music to dance<br />
to, and we all do a lot of jumping<br />
and shouting.<br />
It’s lucky you’re all so youthful<br />
We look young; we’re actually 32. My<br />
knees are starting to hurt, you know.<br />
How you do psych yourselves<br />
up for a show?<br />
We try to stay calm beforehand;<br />
we’re pretty boring until the show’s<br />
over. Aft erwards we go into a kind of<br />
depression for fi ve minutes, then the<br />
sound engineer comes in and says,<br />
'OK, who wants a drink?' Then the<br />
party starts.<br />
What’s your link with Raf Simons,<br />
the man of the moment at Dior?<br />
We fi rst met when I was 16, and<br />
modelling for his shows in Paris.<br />
He contacted me a year ago, aft er<br />
hearing a song on the radio; now,<br />
thanks to Raf, we’re immaculately<br />
attired on stage.<br />
Any chance of him designing<br />
a Goose T-shirt?<br />
We may have to wait until the<br />
hype has died down.<br />

Comment décririez-vous<br />
votre son ?<br />
Rock, mais avec des<br />
instruments électroniques.<br />
Après notre premier album,<br />
on a été étiqueté New<br />
Rave et on a beaucoup<br />
joué avec des gens comme<br />
Justice, Soulwax, les Bloody<br />
Beetroots. Mais cette scènelà<br />
est fi nie : chacun fait son<br />
truc de son côté. On n’essaie<br />
même plus de s’intégrer.<br />
Il y une sacrée ambiance<br />
à vos concerts…<br />
On veut que les gens<br />
s’amusent comme en boîte.<br />
Pas besoin de connaître nos<br />
chansons pour passer un<br />
bon moment. Ce ne sont<br />
pas des concerts de rock où<br />
on chante les titres qu’on<br />
connaît pour somnoler le<br />
reste du temps.<br />

On a l’air jeune, mais on a<br />
32 ans. Je souff re déjà des<br />

Comment vous chauff ezvous<br />
avant ?<br />
On essaie de rester calme<br />
tant que le show n’est pas<br />
fi ni. Après, on déprime<br />
pendant cinq minutes, puis<br />
l’ingénieur du son propose<br />
d’aller boire un coup et alors<br />
là, la fête commence.<br />
Quels sont vos liens avec<br />

moment chez Dior ?<br />
On s’est rencontré quand<br />
je défi lais pour lui, à Paris,<br />
à 16 ans. Il y a un an, il<br />
m’a contacté après nous<br />
avoir entendus à la radio.<br />

est toujours impec sur scène.<br />

There’s nothing stodgy about the bright sparks breaking the<br />
rules of traditional pâtisserie in Paris, says Emma Beddington<br />

parisiens qui se jouent des codes, découvre Emma Beddington<br />

everyone likes cake and Paris boasts some of the<br />
very best, but when and how did baking get so very<br />
hip? Queues for the temples of haute pâtisserie, Ladurée<br />
and Fauchon, go around the block and trends emerge<br />
with bewildering speed: macarons are over, today it’s<br />
choux buns, oh no, hang on, now it’s colourful éclairs.<br />
Baking has its own TV talent shows, bloggers<br />
(parispatisseries.com and raids-patisseries.com are<br />
excellent) and new openings are dissected obsessively in<br />
the food media. But what’s it like in the eye of the sweet<br />
storm? We met four bakers bringing some rock ’n’ roll<br />
attitude to Paris’s sometimes stale pâtisserie scene.<br />
Tout le monde aime les gâteaux, surtout à Paris,<br />
mais depuis quand la pâtisserie est-elle si tendance ?<br />
On fait la queue devant Ladurée et Fauchon, on descend<br />
par cars entiers chez Pierre Hermé et les tendances se<br />
succèdent à vitesse grand V : fi nis les macarons, place<br />
aux choux (popelini.com)... détrônés à l’instant par les<br />
éclairs multicolores (leclairdegenie.com). Télé-réalité,<br />
blogs (dont parispatisseries.com et raids-patisseries.<br />
com), nouvelles adresses disséquées dans les médias<br />
culinaires. Mais comment vit-on l’ouragan de l’intérieur ?<br />
Nous avons rencontré quatre artisans un brin rock’n’roll<br />
décidés à désencroûter la pâtisserie.<br />

sébastien gaudard<br />
‘I’m not at all rock ’n’ roll,’ protests<br />
Sébastien Gaudard darkly, but he sort of is,<br />
because what he does is so deliberately and<br />
perfectly retro. He’s created the Parisian<br />
pâtisserie of your dreams, all elegantly aged<br />
mirrors and perfect geometric tiles. It’s a<br />
history of pâtisserie brought to life. ‘Lots of<br />
people in the profession don’t understand<br />
what I’m doing at all,’ says Gaudard, who<br />
meticulously researches and revives long-lost<br />
pâtisseries in all their glory. The shop is no<br />
cake museum, though: it hums with happy<br />
customers, from mothers buying croissants to<br />
elegant older women who remember Gaudard<br />
at his parents’ bakery in the west of France<br />
when he was ‘this high’.<br />

« Je ne suis pas du tout rock’n’roll »,<br />
proteste Sébastien Gaudard. Mais son travail<br />
est si délibérément et parfaitement rétro qu’il<br />
l’est un peu, quelque part. Il a créé la pâtisserie<br />
parisienne de vos rêves, toute en miroirs<br />
vieillis et carreaux géométriques. Une histoire<br />
de la pâtisserie ramenée à la vie : « Dans la<br />
profession, rares sont ceux qui comprennent<br />
ce que je fais », dit celui qui recrée de<br />
délicieuses pâtisseries d’antan. Sa boutique n’a<br />
pourtant rien d’un musée du gâteau : elle est<br />
pleine d’une clientèle ravie de mamans venues<br />
acheter des croissants ou d’élégantes vieilles<br />
dames se remémorant le petit Sébastien<br />
« haut comme ça » dans la boulangerie de ses<br />
parents dans l’Ouest de la France.<br />

He may look like he’d be more at home<br />
fronting an indie rock band than behind a<br />
bakery counter, but baking is in his blood:<br />
Gontran Cherrier is the fourth generation<br />
of a Normandy baking dynasty. He travelled<br />
the world and became a fi xture on French<br />
food TV before opening his fi rst shop in<br />
Montmartre: now he has three in Paris,<br />
plus outposts in Singapore and Tokyo,<br />
with more to come this year. The elegant,<br />
white-tiled boutiques are a pretty faithful<br />
interpretation of a classic boulangeriepâtisserie,<br />
but there are plenty of reminders<br />
of his travels in the products: the rye bread<br />
with miso is hugely popular, and there are<br />
other loaves seasoned with squid ink or<br />
curry, and cakes with banana and yuzu.<br />

Avec son look, on l’imaginerait plus<br />
chanteur d’un groupe de rock, mais<br />
la boulange, ce rejeton (quatrième<br />
génération, s’il vous plaît) d’une dynastie<br />
de boulangers normands a ça dans le<br />
sang. D’abord globe-trotter puis animateur<br />
d’émissions culinaires à la télé française,<br />
il a ensuite ouvert son premier magasin<br />
à Montmartre et en possède aujourd’hui<br />
trois à Paris plus des adresses à Singapour<br />
et Tokyo. Des ouvertures sont prévues en<br />
<strong>2013</strong>. Dans ses boutiques élégantes, le<br />
carrelage blanc classique des boulangeriespâtisseries<br />
traditionnelles côtoie des<br />
produits souvent inspirés de ses voyages :<br />
pain de seigle au miso, très populaire, pains<br />
à l’encre de seiche, au curry, ou gâteaux à<br />
la banane et au yuzu.<br />

Chez Bogato is a bakery designed specifi cally for<br />
children. It’s a gloriously busy, bright red and<br />
hot pink space, crammed with cowboy boot<br />
piñatas and giant jars of sweets. Then there are<br />
the cakes: a skull-and-crossbones tart and a<br />
perfect ‘macaron burger’ (a chocolate ganache<br />
‘burger’ on macaron ‘bread’ with fresh raspberry<br />
‘ketchup’ and mint-leaf ‘salad’). ‘We have to<br />
improvise,’ says owner Anaïs Olmer, a former<br />
graphic designer who retrained as a pâtissière and<br />
opened Chez Bogato. ‘We cut, we fold, we build…’<br />
It’s obviously working: as well as supplying hip<br />
parents across Paris, Chez Bogato has produced<br />
sweet treats for Dior, Chanel, Colette, Olympia<br />
Le-Tan, Tommy Hilfi ger and many more.<br />

Chez Bogato est une pâtisserie 100 % dédiée<br />
aux enfants. Il y a d’abord l’espace, rouge et rose<br />
pétard, où règne une joyeuse animation, entre<br />
piñatas-bottes de cow-boy et bocaux de bonbons<br />
géants. Puis les gâteaux : tarte décorée d’une<br />
tête de mort ou « macaron hamburger » (burger<br />
à la ganache chocolat sur macaron garni de<br />
« ketchup » à la framboise fraîche et de menthe<br />
en guise de salade). « On improvise, explique<br />
la propriétaire Anaïs Olmer, ancienne graphiste<br />

construit… » Et ça marche : en plus de tout ce<br />

Acide Macaron is a tiny white cube with<br />
a giant neon graffi ti tag on the wall and a<br />
minimalist counter of jewel-bright macarons:<br />
cornfl ower blue (mint tea), metallic orange<br />
(Acide Macaron’s signature passion fruit), or hot<br />
fuchsia (bubblegum). They’re tiny – the idea is<br />
that they’re made to be eaten in one bite – and<br />
subtler and less sweet than traditional macarons,<br />
thanks to the transformative properties of a<br />
dash of citric acid. Owner Jonathan Blot trained<br />
with Alain Ducasse, and now he and his team<br />
are producing over 15,000 macarons a week.<br />
The original boutique has recently been joined<br />
by a stylish teashop (24 rue des Moines,<br />
75017), open from early morning, serving more<br />
traditional pâtisseries, but with an Acide twist.<br />

aux murs relevés d’un graffi ti fl uo géant. Sur<br />
le comptoir minimaliste, des macarons aux<br />
couleurs fl ashy : bleu pervenche (thé à la<br />
menthe), orange métallique (fruit de la passion,<br />
saveur emblématique de la maison), rose fuschia<br />
(bubblegum)… Des macarons tout minis, prévus<br />
pour n’en faire qu’une bouchée, plus subtils et<br />
moins sucrés que leurs homologues traditionnels<br />
par la magie d’une touche d’acide citrique. Formé<br />
chez Alain Ducasse, le propriétaire Jonathan<br />
Blot produit aujourd’hui avec son équipe plus de<br />
15 000 macarons par semaine. Un salon de thé<br />
élégant ouvert tôt le matin (24 rue des Moines,<br />
75017) a récemment rejoint la boutique avec<br />
des pâtisseries plus traditionnelles, revisitées à la<br />

of the trendiest spots in<br />
Paris, and it is just as popular<br />
with the fi gure-conscious<br />
fashion community as it is with<br />
the food-loving crowd. What<br />
may seem paradoxical at fi rst<br />
glance isn’t when you look<br />
closely at the most successful<br />
spots, such as the recently opened<br />
Café Pinson (‘Chaffi nch Cafe’).<br />
Gorgeously decorated with<br />
mismatched vintage-style<br />
furniture and whimsical details<br />
that seem to have sprung right<br />
out of a Pinterest mood board, it<br />
is a bright and cosy space<br />
created by in-vogue interior<br />
designer Dorothée Meilichzon,<br />
which has already served as a<br />
backdrop for a fashion shoot.<br />
But Café Pinson is not just a<br />
pretty face. The food off erings<br />
focus on colour, freshness and<br />
health, guided by co-owner<br />
Agathe Audouze’s interest in<br />
naturopathy and personal<br />
history of food intolerance: no<br />

helping of black rice with kale<br />
and kuri squash, or treat<br />
yourself to the signature cashew<br />
cheesecake or one of the day’s<br />
madeleines. These treats and<br />
more are all cooked up by young<br />
American chef Cameil Kaundart<br />
and can be sampled solo or as<br />
part as the lunch formule at €17.<br />
Early birds looking to catch a<br />
breakfast treat couldn’t hope for<br />
anything more energising than a<br />
freshly made juice or smoothie<br />
and a bowl of the house granola<br />
(raw or cooked) served with<br />
non-dairy milk or soy yogurt.<br />
Brunch on Sundays is just as<br />
tempting, adding slow-cooked<br />
eggs, homemade chocolatehazelnut<br />
spread, and crudités<br />

la fraîcheur et la santé, en<br />
raison de l’intérêt de l’une des<br />

has reopened after a three-year closure. The new owner,<br />
local politician Saïd Köse, has reverently preserved every<br />
inch of the elaborate decor with several extraordinarily<br />
decorative function rooms available for hire. The brasserie<br />
has a decent menu of Belgian staples (steaks, salads,<br />
mussels) at €14-€20 and the more ambitious restaurant<br />
offers a €40 business lunch including wine and coffee.<br />

from the popular peddlers of<br />
natural wines and rustic French<br />
cooking that brought us Brawn<br />
and Terroirs, is located on Saint<br />
Martin’s Lane, just around the<br />
corner from Terroirs. Weary of<br />
repeating exactly the same trick<br />
so close by, it diff ers from its<br />
successful sister premises both<br />
in the scope of its cooking and<br />
its layout. The menu – and the<br />
natural and biodynamic-heavy<br />
wine list – focuses on the Loire;<br />
the design is the result of the<br />
deep and narrow former pub<br />
premises from which it takes its<br />
name. These do not allow space<br />
for an open kitchen, as at<br />
Brawn, and feel more spacious,<br />
relaxed and restaurant-like than<br />
the amusingly hectic Terroirs.<br />
Chef-proprietor Ed Wilson,<br />
who oversees the daily changing<br />
menu here and at Terroirs, is<br />
the latest in a long line of<br />
English cooks to fall in love with<br />
no-nonsense regional French<br />
cooking. A fi ne plate of rillettes<br />
and perfectly pan-fried chicken<br />
livers with mâche arrives with a<br />
generous basket of good crusty<br />
bread. Gutsy pork caillette is<br />
served with pert Savoy cabbage<br />
and buttery mashed potato,<br />
while the cooking of a piece of<br />
wild sea bass with a beurre blanc<br />
is equally fl awless. A poached<br />
pear, with salted butter caramel<br />
and sable biscuit, brings a sweet<br />
end to proceedings. Throw in<br />
sharp, enthusiastic and<br />
wine-literate service (the list is<br />
quite wacky in places) and<br />
you’ve got an essential addition<br />
to the post- and pre-theatre<br />

The story of the prodigal apprentice<br />
london is not only the gastronomic capital of Europe, the city’s<br />
restaurants are also bolstering the economy. The food sector in the<br />
capital turned over an incredible £17 billion last year – and that’s no<br />
trifl ing fi gure, as the English say. But, of course, the longevity – the future<br />
– of the industry depends on the young talent of today. They are the food<br />
masters of tomorrow.<br />
The duty of each and every responsible restaurateur is to invest in<br />
young people. So I feel absolutely honoured to have become the food<br />
ambassador of the massive campaign to create hundreds of thousands of<br />
apprenticeships in London, working with London Mayor Boris Johnson<br />
and the National Apprenticeship Service as well as the London Food Board.<br />
Some 300,000 people work in London’s food sector. They will be the<br />
fi rst to tell you that a job in the hospitality business is demanding, tough<br />
and not ideal for those who like to socialise.<br />
At Brasserie Blanc we have taken on 18 apprentices – one for each of the<br />
group’s restaurants (which includes seven in London). It’s great to be able<br />
to help them, whether they want to become a restaurant manager, a bar<br />
manager or a chef.<br />
What do I look for? People who are curious, passionate and eager to<br />
learn. You don’t need a degree to get into this industry. And thank God for<br />
that; I’m the guy who ditched his architecture course to become a waiter.<br />
Now, as a self-taught chef I was never an apprentice. Mind you, I really<br />
missed not having a mentor, someone to take me through the early process<br />
of learning and craft ing.<br />
When I opened my fi rst restaurant in Oxford I took on an apprentice. He<br />
was a young man called Mark, and he worked alongside me in the kitchen.<br />
Mark stayed with me and then left to work in France. Eventually, I could<br />
stand it no more. I got in touch and said, ‘Do you think you can bear to<br />
work with me again?’ The apprentice returned – Mark Peregrine now runs<br />
the Raymond Blanc Cookery School at Le Manoir aux Quat’ Saisons.<br />

Chef autodidacte, je ne suis pas passé par<br />
l’apprentissage. J’aurais pourtant bien aimé<br />
avoir un mentor. Lorsque j’ai ouvert mon<br />
premier restaurant à Oxford, j’ai pris un<br />
apprenti, Mark, en cuisine. Après quelque<br />
temps, il est parti travailler en France. N’y<br />
tenant plus, je l’ai recontacté : supporteraitil<br />
de retravailler avec moi ? L’apprenti est<br />
rentré au bercail... et Mark Peregrine dirige<br />
aujourd’hui l’École de cuisine Raymond<br />

tables in her living room. Sounds<br />
cluttered? Au contraire. At her home in<br />
west London, classic Eames chairs mix<br />
with contemporary soft seating, and<br />
dotted around are six of her own craft ed<br />
coff ee tables, all part of her G&T collection.<br />
They show why Gray’s products are so<br />
desirable: the elegant detailing of<br />
high-end materials lets her furniture<br />
double up as decorative objects.<br />

where Gray advanced to head of furniture<br />
design, the Welsh designer started her<br />
own studio in 2008. Her products can<br />
still be found at John Lewis and the<br />
Conran Shop. But it wasn’t until last<br />
year, when she joined forces with<br />
furniture developer Thomas Turner,<br />
that she fi nally came into her own.<br />
Gray combines the things that she<br />
knows and loves – natural materials and<br />
found patterns. As the granddaughter<br />
of a forester, wood has always featured<br />

heavily in her work. Yet a recent<br />
revelation proves that Gray’s creative<br />
roots run even deeper. Her brother<br />
unearthed a certifi cate showing that<br />
their great-grandmother was also a<br />
cabinetmaker, in a time when it was<br />
highly unusual for a woman to have<br />
such a profession.<br />
‘There was a corner cupboard in my<br />
parents’ house that I always loved,’ Gray<br />
recalls. ‘A simple solid oak unit. My<br />
mum gave it to me as a wedding<br />

present, and although I knew it was a<br />
family piece I never considered it could<br />
have been made by a woman,’ she says,<br />
expressing bemusement that even<br />
today, furniture design remains a<br />
male-dominated fi eld.<br />
Her own style is nift ily embodied by<br />
Brogue, one of the G&T coff ee tables.<br />
The three-legged wooden base is<br />
inspired by the traditional Welsh<br />
cricket table that has three legs as a<br />
solution to uneven fl oors. Yet what sets<br />
Brogue apart is the intricate leather<br />
stitching on the table top. ‘My friend<br />
was wearing a pair of white Church’s<br />
shoes and I loved the pattern so much,<br />
I incorporated it.’<br />
This month you can catch Gray’s<br />
latest designs at her exhibition at<br />
London’s Great Western Studios, where<br />
as part of their Inside Design series, she<br />
will be showing off the complicated<br />
craft smanship behind her warm,<br />
liveable creations. Creations that<br />
would almost certainly have made<br />
her Welsh great-grandmother proud.<br />

galloise dont les meubles primés sont<br />
synonymes de luxe et de sobriété british<br />
dans le salon de Bethan Gray, il<br />
y a six tables basses. Encombré ?<br />
Not at all. Dans son nouveau chez<br />
elle de l’est londonien, où elle a<br />
emménagé avec son mari l’an dernier,<br />
les classiques fauteuils Eames (DSW)<br />
côtoient des sièges contemporains, le<br />
tout entouré de six tables basses de<br />
sa collection G&T. Déjà considérées<br />
comme des investissements, elles<br />
rehaussent la pièce comme autant<br />
de bijoux sur une petite robe noire,<br />
justifi ant l’attrait pour les meubles de<br />
Gray : l’élégance des détails faits de<br />
matières luxueuses en font de véritables<br />
objets décoratifs.<br />
Après presque dix années chez<br />
Habitat où elle s’est hissée au poste<br />
de responsable du design meubles,<br />
cette créatrice galloise a lancé son<br />
propre studio en 2008. Ses produits<br />
sont toujours disponibles chez John<br />
Lewis et au Conran Shop. Mais ce<br />
n’est que l’an dernier, en s’associant<br />

au créateur de meubles Thomas<br />
Turner, qu’elle s’est vraiment révélée.<br />
Elle conjugue ce qu’elle connaît et ce<br />
qu’elle aime : des matières naturelles<br />
aux détails élégants. Le bois a toujours<br />
été très présent dans le travail de cette<br />
petite-fi lle de garde-forestier. Et une<br />
trouvaille récente montre que ses<br />
racines créatives remontent encore<br />
plus loin. Son frère a en eff et découvert<br />
un certifi cat attestant que leur arrièregrand-mère<br />
était également ébéniste,<br />
une rareté à cette époque.<br />

« Il y avait chez mes parents un<br />
meuble d’angle que j’ai toujours adoré.<br />
Tout simple, en chêne massif. Ma mère<br />
nous l’a off ert en cadeau de mariage<br />
et même si je savais que c’était un<br />
meuble de famille, je n’avais aucune<br />
idée qu’il avait été fabriqué par une<br />
femme », se remémore Gray, étonnée<br />
qu’aujourd’hui encore la fabrication<br />
de meubles demeure une activité à<br />
dominante masculine.<br />
Son style caractéristique est<br />
clairement résumé par Brogue, une<br />
des tables basses de sa collection G&T.<br />
La base en bois à trois pieds s’inspire<br />
des traditionnelles tables « cricket »<br />
galloises, dont les trois pieds s’adaptent<br />
bien aux sols inégaux. Mais ce qui<br />
distingue Brogue est la surpiqûre<br />
sophistiquée qui sertit le plateau. « Une<br />
amie portait une paire de Richelieus<br />
blanches. Le motif m’a tellement<br />
séduite que je l’ai intégré à ma table. »<br />
Gray s’inspire souvent de motifs<br />
d’objets quotidiens. « Dernièrement, je<br />
suis obsédée par Instagram », déclaret-elle<br />
en faisant défi ler les images sur<br />
son iPad. On y voit le sol du parvis de<br />
la cathédrale Saint-Paul, le toit d’un<br />
nichoir à oiseaux, une étrange plante<br />
thaïlandaise... et son chien Patch.<br />
Ce mois-ci, on peut admirer les<br />
dernières créations de Bethan Gray aux<br />
Great Western Studios de Londres, dans<br />
le cadre de la série Inside Design. Elle<br />
y expliquera la fabrication artisanale<br />
complexe à l’origine de ses créations<br />
chaleureuses et adaptées à la vie<br />
quotidienne. Des œuvres dont son<br />
arrière-grand-mère aurait certainement<br />

my hopes were high for TV Boy. We had a good<br />
backstory, and I’m always a sucker for a good<br />
backstory. We met when he interviewed me for his TV<br />
show. Aft er the interview he invited me for a drink, and<br />
many, many tequilas later, he kissed me. Later still, in a<br />
corner of the bar, his colleague tried to kiss me. Now, most<br />
women in this situation would think: ‘Thank you, Zara, for your<br />
excellent arse-reducing jeans.’ Sadly, I’m not most women, and<br />
through a haze of slammers, I became convinced that TV Boy I and<br />
TV Boy II were involved in some weird bet. Or, worse, some weird<br />
group-sex thing. Lacking both the concentration and the hand-eye<br />
coordination that surely must be required for a threesome, I<br />
grabbed my bag and left . That was two years ago.<br />
Last month I emailed him out of the blue about a work thing –<br />
letting him know I was in London – and he pushed to meet up that<br />
night. Twenty minutes in at the bar he put his hand on my knee, and<br />
twenty minutes aft er that, went in for the kiss. This was going well.<br />
And then he looked deep into my eyes and said, ‘I’m going to tell you<br />
something I’ve never told anyone.’ Please don’t, I thought. ‘Oh?’ I said.<br />

It was all endearingly insecure. But that was the problem. And that’s<br />
why this episode of talking-about-sex-on-a-fi rst-date was even worse<br />
than my worst-ever experience of talking-about-sex-on-a-fi rst-date,<br />
when some bloke off Lovestruck serenaded me with Rihanna’s song<br />
S&M. (Just imagine an aged accountant in All Bar One singing, ‘Sticks<br />
and stones may break my bones, but chains and whips EXCITE me!’)<br />
The problem is that men just don’t talk about their insecurities in<br />
bed with women they’re trying to impress. And I knew he’d be<br />
mortifi ed the next day. I tried a little damage control, and aft er half an<br />
hour of ego massage and 40 minutes of snogging, he seemed positively<br />
chipper again. He was full of plans for our second date and third date<br />
(which are unfi t for print) and then… nothing. For three weeks.<br />
But now, an email, with no reference at all to the yawning chasm of<br />
time that’s elapsed. I know I should ignore it. And that, unless he’s<br />
spent the last three weeks in prison, or in an institution, there’s<br />
absolutely no excuse. (Also that I shouldn’t be actively trying to date<br />
criminals and lunatics.) But there’s a tiny part of me can’t help<br />
thinking, maybe, just maybe, the next date will be third time lucky?<br />

une partie fi ne à trois, j’empoigne mon sac et<br />
m’éclipse. C’était il y a deux ans.<br />
Le mois dernier, étant de passage à Londres<br />
pour raison professionnelle, je le contacte au<br />
pied levé. Il insiste pour se voir ce soir-là. Au<br />
bout de vingt minutes, il pose sa main sur mon<br />
genou puis vingt minutes plus tard, se lance<br />
pour un baiser. Bon départ. Et là, il me regarde<br />
droit dans les yeux et m’annonce : « Je vais<br />
t’avouer quelque-chose que je n’ai jamais dit<br />
à personne. » Je pense : « Non, merci ! », mais<br />
réponds : « Ah oui ? » Et il me confi e qu’il a<br />
perdu sa virginité bien plus tard que ses amis.<br />
Plus fl eur bleue et plein d’adorable insécurité, tu<br />
meurs. C’est bien là le problème. Encore pire que<br />
ma pire conversation sur le sexe avec un mec qui<br />
m’a fait S&M de Rihanna en sérénade. (Imaginez<br />
un comptable d’âge mûr fredonnant qu’il n’y a<br />
rien de plus excitant que le fouet et les chaînes).<br />
Les hommes ne doivent pas confi er leurs anxiétés<br />
à leurs conquêtes. Je savais qu’il s’en voudrait<br />
le lendemain. J’ai tenté de limiter les dégâts à<br />
coups de fl atteries et de roulages de pelle. Ça<br />
a fonctionné : il faisait déjà des plans (que ma<br />
mère m’interdit rigoureusement de citer ici) pour<br />
nos deuxième et troisième rendez-vous. Puis,<br />
plus rien. Pendant trois semaines.<br />
Soudain, un message, sans aucune référence<br />
au laps de temps indécent écoulé depuis notre<br />
dernier baiser. Je sais bien que je ne devrais pas<br />
répondre et qu’à moins qu’il ait passé les trois<br />
semaines écoulées en prison ou dans un asile,<br />
il n’a aucune excuse. (Et que je devrais éviter de<br />
fréquenter les délinquants et les aliénés.) Mais<br />
au fond de moi, une petite voix dit que, peutêtre,<br />
peut-être, la troisième fois sera la bonne.

A middle-aged man swaggers down a Soho street.<br />
Full-length fur coat, leonine hair and a tan too deep<br />
for an English summer. His fi sts drip with gold and on each<br />
arm is a much younger woman. He walks as if he owns the<br />
neighbourhood. But that’s because he does.<br />
This is Paul Raymond, legendary ‘King of Soho’, the man<br />
who brought sex and continental glamour to London’s centre<br />
of vice and bohemian creativity, who bought it up street by<br />
street until, by the early 1990s, he was hailed as the richest<br />
man in Britain. ‘Not bad for a boy from Liverpool who arrived<br />
with fi ve bob in his pocket,’ he was fond of saying.<br />
Or rather this is Raymond, who died a recluse in 2008, as<br />
resurrected for Michael Winterbottom’s latest fi lm The Look<br />
of Love and played with panache by Steve Coogan. The<br />
narrative follows the rise and fall of Soho’s infamous<br />
entertainer and purveyor of sex and pornography, beginning<br />
with his realisation that while<br />
punters love a show, they love it<br />
even more if it features a topless<br />
woman, and the establishment of<br />
the Raymond Revuebar, his private<br />
members club that took the<br />
strip-club format upmarket and<br />
ran until 2004. We see the<br />
building of his empire, which grew<br />
to encompass key West End<br />
properties and best-selling porn<br />
magazines such as Men Only.<br />

marche avec assurance dans une rue de Soho, de l’or aux<br />
poignets, une jeune femme à chaque bras. On jurerait que le<br />
quartier lui appartient. Et c’est le cas.<br />
Cet homme, c’est Paul Raymond, légendaire « roi de<br />
Soho », par qui sexe et glamour européen arrivèrent au cœur<br />
londonien du vice et de la créativité bohème. Il a bâti son<br />
empire en rachetant une rue après l’autre. Au début des<br />
années 90, il était l’homme le plus riche du pays. « Pas mal<br />
pour un petit gars de Liverpool », aimait-il à dire.<br />
En réalité, c’est Raymond ressuscité (le vrai est mort<br />
en reclus en 2008) pour le dernier fi lm de Michael<br />
Winterbottom, The Look of Love, interprété avec panache<br />
par Steve Coogan. L’intrigue suit l’ascension et la chute de<br />
cette fi gure du show biz, sulfureux magnat du sexe et de la<br />
pornographie à Soho, depuis le moment où il comprend que<br />
si les clients aiment le spectacle, ils le préfèrent avec une<br />
femme seins nus et fonde le Raymond Revuebar, club privé<br />
qui donna un brin de classe au classique bar à strip-tease<br />
et ne ferma qu’en 2004. On assiste à la construction de<br />
l’empire, qui fi nira par comprendre<br />
des immeubles du West End et des<br />
magazines porno à gros tirage tels<br />
que Men Only.<br />

Though the fi lm is structured around his relationship with<br />
the three most important women in his life – his wife, his<br />
girlfriend and his tragic daughter Debbie – always present is a<br />
fourth love, Soho. Winterbottom explains: ‘The idea was that<br />
it would be a bit like an 18th-century picaresque novel such<br />
as Daniel Defoe’s Moll Flanders, where you see the ups and<br />
downs of society through the eyes of one particular character<br />
over their lifetime. In this case, Soho, from the 50s to the 90s.’<br />
‘Paul Raymond really pioneered a continental attitude to<br />
sex in this country at a time when people were very, very<br />
uptight about it,’ says Coogan, who came up with the idea to<br />
make the fi lm. ‘The Raymond Revuebar was the fi rst<br />
respectable strip joint in the UK.’<br />
However, that’s only the start of the story. ‘There’s a<br />
gradual trajectory in the fi lm,’ says Winterbottom. ‘When he<br />
opens the Revuebar in 1958 there is a sense of glamour. It is<br />
about people going out for the evening to see a dance show<br />
which just so happens to have semi-naked ladies. But as the<br />
fi lm goes on, the club itself becomes more a place for tourists,<br />
more tacky. Meanwhile the magazines also got seedier and<br />
more explicit. It wasn’t all sweetness and light.’<br />
Since 2004, a Westminster Council clean-up of Soho has<br />
seen the closure of more than 50 unlicensed clubs and sex<br />
shops. Drugs – increasingly<br />
prevalent throughout the 80s and<br />
90s, and the downfall of several of<br />
the fi lm’s protagonists – have been<br />
systematically cleared out. More<br />
recently, Soho has also become<br />
home to many of London’s top<br />
restaurants and street-food<br />
start-ups. In this cleaner, smarter<br />
Soho, the sex industry has largely<br />
contracted around Walker’s Court,<br />
Tisbury Court and Brewer Street.<br />

les bas de la société. Ici, c’est le Soho des années 50 à 90 »,<br />
explique Winterbottom.<br />
« Paul Raymond a vraiment été le pionnier d’une attitude<br />
continentale envers le sexe dans ce pays, à une époque où les<br />
gens étaient très coincés, déclare Coogan, qui a eu l’idée du<br />
projet. Le Raymond Revuebar a été le premier club de striptease<br />
respectable du Royaume-Uni. »<br />
Mais ce n’est que le début. « Il y a une progression, dit<br />
Winterbottom. Lorsque le Revuebar ouvre ses portes en<br />
1958, il y a une aura de glamour. Les gens sortent le soir pour<br />
voir un spectacle de danse, qui montre accessoirement des<br />
femmes à moitié nues. Mais au fi l de l’histoire, le club devient<br />
plus touristique, plus vulgaire. Tout<br />
n’était pas idyllique. »<br />
Depuis 2004, le Conseil municipal<br />
de Westminster a décidé de nettoyer<br />
Soho et fermé plus de 50 clubs et<br />
sex-shops sans licence. Rien que<br />
l’an dernier, des DVD illégaux d’une<br />
valeur de 1 million de livres ont<br />
été détruits. La drogue, de plus en<br />
plus présente dans les années 80<br />
et 90 et qui a détruit de nombreux<br />
personnages du fi lm, a été éradiquée.<br />

Backstreets such as Archer Street, which were, in the<br />
1990s, full of addicts shooting up, are now full of welldressed<br />
people mainlining artisanal ice cream from Gelupo.<br />
But concerns that Soho might loose its edge or be overrun<br />
with bland chains (the few businesses that can aff ord the high<br />
rents and rates) have been premature. Many legendary venues<br />
do still exist: Ronnie Scott’s jazz club, the Windmill Theatre,<br />
restaurants L’Escargot and Kettner’s, the French House pub<br />
are all used in the fi lm, along with their proprietors. The gay<br />
scene has attracted an international crowd of buff ed young<br />
things looking for pumping, late-night bars and open fl irtation.<br />
Private members clubs such as Soho House, on which<br />
Raymond owned the freehold, maintain a world of secrecy and<br />
exclusivity. The Revuebar has been taken over by increasingly<br />
outré New York cabaret The Box, but much of Soho is still<br />
owned by Raymond’s property company, Soho Estates.<br />
Chris Bracey used to make neon signs for Soho’s peepshows<br />
and strip-joints in the 70s and 80s (he was the fi rst to<br />
come up with the iconic ‘girls, girls, girls’) and remembers the<br />
Raymond era well. He concurs with the depiction of him as<br />
something of a spiv. ‘He had hands like Bulgari’s window<br />
display and an air of The Godfather about him. Paul Raymond<br />
defi nitely understood the glamour of sexy girls, the nightlife.<br />
He created Soho, he made it all happen. He would take over a<br />
run-down cafe and overnight he’d turn it into a sex shop or a<br />
topless bar and I’d knock up a sign. We didn’t worry about<br />
permission. One of my best signs was “fi nd love upstairs” for<br />
rooms that were rented out to girls on the game. They would<br />
hang them out at 7pm and bring them in at 7am.’<br />
Bracey’s signs are now collectable pieces of art, even as the<br />
businesses they advertised have declined. ‘Nowadays to buy a<br />
sex shop licence is £25,000 a year. Then there’s rates and<br />
rent. The sex industry’s been killed off – you can’t make any<br />
money. The area’s still got that Soho hedonism though; it’s<br />
still a great place for a night out.’<br />

plus clean, l’industrie du sexe<br />

désormais une clientèle bien<br />
habillée se shooter aux glaces<br />
artisanales Gelupo.<br />
Pourtant, la crainte que Soho<br />
perde son mordant ou soit<br />
envahi par des chaînes sans âme<br />
(seules capables de payer les prix du quartier) est prématurée.<br />
Bon nombre des lieux légendaires existent toujours : le jazz<br />
club Ronnie Scott’s, le Windmill Theatre, les restaurants<br />
L’Escargot et Kettner’s, le pub The French House fi gurent<br />
dans le fi lm avec leurs propriétaires. La scène gay attire une<br />
foule internationale de beaux jeunes gens en quête de salles<br />
de sport, de bars de nuit et de drague sans entraves. Les clubs<br />
privés comme Soho House, dont Raymond possédait le pas<br />
de porte, préservent un monde de secret et d’exclusivité.<br />
Entre-temps, le Revuebar est passé sous la coupe du cabaret<br />
new-yorkais de plus en plus outré The Box : un vrai retour aux<br />
origines. La société immobilière de Raymond Soho Estates<br />
détient encore une bonne tranche de Soho.<br />
Chris Bracey fabriquait les enseignes au néon des peepshows<br />
et clubs de strip-tease de Soho dans les années 70 et<br />
80. Il a été le premier à utiliser les iconiques « girls, girls,<br />
girls ». Il se souvient bien de l’ère Raymond et confi rme<br />
son image interlope : « Ses mains, on aurait dit la vitrine de<br />
Bulgari. Il avait l’air de sortir du Parrain.<br />
Paul Raymond avait tout compris au glamour des fi lles sexy,<br />
de la vie nocturne, poursuit-il. Il a fait Soho, tout est arrivé<br />
grâce à lui. Il rachetait un café minable et le transformait du<br />
jour au lendemain en sex-shop ou en bar topless et je faisais<br />
un panneau. On ne s’inquiétait pas des autorisations.<br />
Un de mes meilleurs panneaux, c’est ‘trouvez l’amour à<br />
l’étage’ pour des chambres louées aux tapineuses. On les<br />
sortait à 19h et on les rentrait à 7h du matin. » Désormais, les<br />
panneaux de Bracey sont des œuvres d’art collector.<br />
« Aujourd’hui, une licence de sex-shop coûte 25 000 £<br />
par an. En plus, il y a les taxes, le loyer. L’industrie du sexe a<br />
été tuée, c’est impossible de faire de l’argent. Pourtant, Soho<br />
garde son hédonisme : l’endroit reste génial pour sortir. »<br />
D’après Michele Wade de la Maison Bertaux, plus<br />
ancienne pâtisserie de Londres, Soho a gardé son énergie<br />
et son brassage caractéristiques de gens intéressants. « On<br />

energy: ‘We still have that collision<br />
of gay people, theatre people, fi lm<br />
people, people dressed up to go<br />
out, hen parties… all of these<br />
things seem to work harmoniously.<br />
That mix made Soho what it is. All<br />
the prostitutes are still here. There<br />
are maybe three of four of the old<br />
French ladies left and they are now running places as madams.<br />
It’s more discreet – just signs saying “models upstairs”.’<br />
Lesley Lewis, landlady of the French House whose late<br />
husband Noel was a friend of Raymond’s, also remembers<br />
70s Soho well: ‘I used to run the Carnival strip club on Old<br />
Compton Street [now the Lab bar]. We used to have to do a<br />
minute with the girls in clothes, then a minute in their bikinis,<br />
then a minute of fl ashing… We got queues round the block.<br />
‘The Revuebar was all the girls dreamed about; it was very<br />
desirable to work there. But then Soho was a very diff erent<br />
place. It was all cheap strip shows and sex cinemas. I don’t<br />
think it was particularly sexy – it was mostly a complete<br />
rip-off . Soho’s much sexier now. What Paul did was make it<br />
glamorous. He brought Paris to London. It was the nearest<br />
thing we had to [Parisian avant-garde cabaret] the Crazy Horse.’<br />
Simon Topham opened one of the new generation of fully<br />
licensed sex shops, Prowler, 15 years ago, and welcomes<br />
recent changes: ‘Soho today is very international and it’s more<br />
about having fun. It’s open-minded, it’s hedonistic… There’s<br />
a nostalgia for the sleaziness, that frisson of it being a little bit<br />
illegal. But no one wants to go back to that.’<br />

harmonie. Ce mélange a fait Soho,<br />
lui donne une énergie collective.<br />
Toutes les prostituées sont encore<br />
là. Il reste peut-être trois-quatre des<br />
Françaises, maintenant elles tiennent<br />
les bordels. On ne les voit plus<br />
sur le trottoir, les panneaux disent<br />
‘mannequins à l’étage’. »<br />
Lesley Lewis, gérante de la French House, dont le défunt<br />
mari Noël était un ami de Raymond, se souvient aussi du<br />
Soho des années 70. « Je tenais le club de strip-tease Carnival<br />
sur Old Compton Street [désormais le Lab bar, ndlr]. On<br />
était obligé de faire une minute avec les fi lles habillées, une<br />
minute en bikini, une minute de nudité. Les fi lles rêvaient du<br />
Revuebar. Travailler là-bas, c’était très recherché. Mais Soho<br />
était bien diff érent à l’époque : que des boîtes de strip-tease et<br />
des cinémas porno cheap. Ce n’était pas vraiment sexy, plutôt<br />
une grosse arnaque. Paul y a insuffl é du glamour. Il a fait<br />
venir Paris à Londres. C’était ce qu’on avait qui se rapprochait<br />
le plus du Crazy Horse, en tout cas. »<br />
Simon Topham, qui a ouvert il y a 15 ans un des sex-shops<br />
agréés de la nouvelle génération, apprécie les changements<br />
récents : « Aujourd’hui, Soho est très international, on pense<br />
plus à s’amuser, c’est un esprit ouvert, hédoniste. La boutique<br />
accueille toutes sortes de gens, sans gêne. »<br />
Tout cela ne serait-il pas trop propre ? Soho perd-il de son<br />
charme canaille ? « Il y a une nostalgie de l’aspect louche, du<br />
frisson de l’illégalité. Mais personne ne veut y revenir. »<br />

Bontjas tot op zijn knieën, lang<br />
golvend haar en een zongebruinde<br />
kleur die niets met Engelse zomers<br />
te maken heeft . Zijn handen glinsteren<br />
van het goud en aan iedere arm<br />
hangt een veel jongere vrouw. Hij<br />
loopt erbij alsof deze buurt van hem<br />
is. Maar dat is ook zo.<br />
Dit is namelijk Paul Raymond, de<br />
legendarische ‘Koning van Soho’,<br />
de man die seks en continentale<br />
glamour in het Londense hart voor<br />
ondeugd en Boheemse creativiteit<br />
introduceerde. De man die hele<br />
straten opkocht en begin jaren 90<br />
bekend stond als de rijkste man<br />
van Groot-Brittannië.<br />
Of beter gezegd, dit is Raymond,<br />
die in 2008 als kluizenaar overleed,<br />
zoals hij door Steve Coogan tot<br />
leven wordt gebracht in Michael<br />
Winter bottoms nieuwste fi lm, The<br />
Look of Love. Het verhaal vertelt de<br />
opkomst en ondergang van Soho’s<br />
beruchte entertainer en producent<br />
van seks en pornografi e. Hij zag in<br />
dat de mensen van show hielden,<br />
en dan vooral als er een topless<br />
dame aan te pas kwam. De fi lm<br />
begint dan ook met de opening van<br />
de Raymond Revuebar, die stripclubs<br />
naar een hoger niveau bracht<br />
en pas in 2004 zijn deuren sloot.<br />
Hoewel de fi lm zich vooral<br />
concentreert op zijn relatie met<br />
de drie belang rijkste vrouwen in<br />
zijn leven – zijn echtgenote, zijn<br />
vriendin en zijn dochter Debbie, die<br />
tragisch om het leven kwam – loopt<br />
zijn vierde liefde als een rode draad<br />
door het verhaal: Soho.<br />
“Paul Raymond was een pionier.<br />

de seks”, zegt Coogan, die met<br />
het idee voor de fi lm kwam. “De<br />
Raymond Revuebar was de eerste<br />
respectabele stripclub in Engeland.”<br />
Sinds 2004 is Westminster<br />
Council drukdoende met het<br />
schoonvegen van de wijk. Er zijn<br />
al meer dan 50 illegale nachtclubs<br />
en seksshops opgerold en alleen<br />
vorig jaar al werd voor meer dan<br />
1,1 miljoen euro aan illegale dvd’s<br />
vernietigd. In de jaren 80 en 90 was<br />
Soho in de greep van drugs, maar<br />
die werden systematisch uitgeroeid.<br />
Anno nu is het de wijk van trendy<br />
eettentjes en toprestaurants.<br />
In dit schonere en nettere Soho<br />
speelt de seksindustrie zich vooral<br />
af rond Walker’s Court, Tisbury<br />
Court en Brewer Street. Achterafstraatjes<br />
als Archer Street, waar<br />
eens verslaafden rondhingen, zijn<br />
nu drukbevolkt door goedgeklede<br />
mensen die genieten van de<br />
ambachtelijke ijsjes van Gelupo.<br />
De vrees dat Soho zijn karakter<br />
verliest door de komst van saaie<br />
winkelketens bleek voorbarig. De<br />
gay-scene diende als magneet voor<br />
een internationaal publiek op zoek<br />
naar nachtclubs en ongebreideld<br />
fl irten. Privéclubs (‘members only’)<br />
zoals Soho House zijn omgeven<br />
door geheimzinnigheid en exclusiviteit.<br />
De Revuebar is overgenomen<br />
door het buitenissige New Yorkse<br />
cabaret The Box. Veel van Soho is<br />
nog altijd eigendom van Raymonds<br />
vastgoed portfolio, Soho Estates.<br />
Michele Wade van Maison Bertaux,<br />
de oudste patisserie van Londen<br />
(Raymonds dochter Debbie was zo<br />
dol op de cakejes dat hij het pand<br />
aankocht), zegt dat Soho zijn handelsmerk van<br />
energie en interessante mensen heeft behouden.<br />
“Je vindt hier nog altijd een samenkomen van de<br />
gay beweging, theater- en fi lmpubliek, mensen<br />
die zich kleden voor een avondje uit, vrijgezellenfeestjes<br />
enzovoort. Het is juist deze mix die Soho<br />
zijn karakter geeft , zijn collectieve energie.”<br />
Uitbaatster van de French House Lesley Lewis,<br />
wier overleden echtgenoot Noel bevriend was<br />
met Raymond, herinnert zich het Soho uit de<br />
jaren 70 nog goed. “Alle meisjes droomden van<br />
de Revuebar, het was een gewilde werk plek. Er<br />
waren toen alleen maar goedkope stripshows en<br />
seks bioscopen. Het was voornamelijk oplichterij.<br />
Soho is nu veel sexier. Paul gaf de buurt glamour.<br />
Hij bracht Parijs naar Londen. De Revuebar was<br />
onze eigen versie van de Crazy Horse.”<br />
Simon Topham, opende 15 jaar geleden Prowler,<br />
een van de nieuwe generatie legale seksshops.<br />
Hij is opgetogen over de veranderingen. “Soho is<br />
nu internationaal en heeft ook een fun-element.<br />
Het is hedonistisch. We krijgen een gevarieerd<br />
publiek in de winkel zonder enige schaamte.”<br />
Begint het dan echt netjes te worden? Verliest<br />
Soho zijn ondeugende karakter? “Er is nog wel<br />
nostalgie naar de opwinding dat het een beetje<br />
illegaal is. Maar niemand wil terug naar die tijd.”<br />

‘It’s avian fl u, I’m going to start sprouting feathers any minute now!’<br />
Déborah François may be exaggerating a tad, but she is indeed not a<br />
well girl. By rights, she should be tucked under her duvet rather than sat<br />
across from the beastly journalist who’s dragged her out of bed on the wettest,<br />
most miserable day Paris could conjure up – especially as every time she<br />
pulls out a new tissue I surreptitiously inch my chair further away from her.<br />
Not the most promising start to an interview, then. Even under the<br />
weather, though, the Liège native makes for lively, charming company,<br />
explaining how she picked up the bug a few days earlier in New York,<br />
where she was promoting her latest movie, Populaire, instead of the big<br />
chunk of authentic American cheesecake she’d so been looking forward to<br />
sampling. A real gourmand, François adopts the same attitude to roles as<br />
she does to food. ‘I like to taste a bit of everything to see what I like and to<br />
avoid getting bored. I get bored very easily,’ she laughs.<br />
Bare-faced and sporting a standard-issue off duty-actress uniform of<br />
scarf, star-motif jumper, jeans and high-top combo, François is a far cry<br />
from Rose Pamphyle, the 1950s heroine she plays in the French fi lm,<br />
whom she likens to a ‘comic strip character’. To tap into what she dubs<br />
Rose’s ‘bouncy’ side, François played Lily Allen and Lady Gaga’s Paparazzi<br />
on loop during fi lming, yet her real challenge when preparing for the part<br />
was becoming a speed-demon typist in under seven months. Typing is<br />
clearly not for sissies: ‘I didn’t realise it was going to be so hard. At fi rst I<br />
was at the physio every two days and I was actually scared of injuring<br />
myself. It’s a really repetitive gesture that keeps playing on muscles in the<br />
wrist and fi ngers. And I get really stressed when I type because I want to do<br />
it with conviction and that contracts the muscles even further.’<br />
If you were to pitch Populaire Hollywood agent-style you’d describe it as<br />
‘Rocky meets Mad Men meets My Fair Lady with a Gallic twist’. The fi lm<br />
centres on klutzy Rose’s quest to become an international typewriting<br />

« C’est la grippe aviaire, je vais bientôt<br />
avoir des plumes ! » Déborah François<br />
exagère certes un peu, mais elle semble en eff et<br />
bien mal en point. En toute logique, elle devrait<br />
être au chaud sous la couette, et non face à une<br />
journaliste assez cruelle pour la tirer du lit dans<br />
un Paris gris.<br />
Malgré son état, la Liégeoise est charmante.<br />
Elle m’explique qu’au lieu du cheesecake dont<br />
elle se délectait à l’avance, ce sont des microbes<br />
qu’elle a rapporté de la promo new-yorkaise de<br />
Populaire, son dernier fi lm. Gourmande, Déborah<br />
appréhende ses rôles avec le même appétit :<br />
« J’aime bien goûter à tout pour voir ce que<br />
j’aime et ne pas m’ennuyer », dit-elle en riant.<br />
Sans maquillage et vêtue en tous les jours<br />
(foulard, pull étoilé, jean et grosses baskets),<br />
Déborah ne ressemble en rien à Rose Pamphyle,<br />
l’héroïne Fift ies qu’elle interprète dans ce fi lm<br />
français. Un « personnage de BD », dit-elle,<br />
avec un côté « bondissant » qui l’a poussée,<br />
pour mieux investir son rôle, à se passer en<br />
boucle des titres de Lily Allen et Paparazzi de<br />
Lady Gaga pendant le tournage. Mais le vrai<br />
défi était de devenir une superdactylo en moins<br />
de 7 mois. « Je n’avais pas réalisé que ça allait<br />
être aussi diffi cile de taper à la machine. Au<br />
début, j’étais chez le kiné tous les deux jours<br />
et j’avais vraiment peur de me blesser. C’est un<br />

champ in order to escape the drudgery of<br />
small-town life and win the love of her<br />
curmudgeonly boss with the heart of gold<br />
(played by French heartthrob Romain Duris).<br />
Likened to Amélie because of its retro look and<br />
gutsy yet sweet heroine, Populaire is one of those<br />
zippy comedies that sounds hideous on paper<br />
but wins hearts on screen. This is as much down<br />
to François’ plucky performance as the suspense<br />
generated by the cleverly fi lmed typewriting<br />
championships scenes. But those contests were<br />
total fi ction, right?<br />
‘No that’s what’s completely nuts!’ she<br />
exclaims. ‘They were actually real, but have been<br />
totally forgotten. When I fi rst read the script I<br />
thought director Régis Roinsard was a genius to<br />
have hit upon this idea, but he told me that these<br />
typing contests actually existed, and that having<br />
been launched in the 1920s in the US, they<br />
arrived in France in the 40s and 50s and were<br />
a huge success. They were talked about in the<br />
newspapers, and the women who won them<br />
received prizes that were quite valuable for the<br />
time. It was like a sporty version of Miss World.’<br />
Ruthless competition is one of the leitmotifs<br />
of Populaire, and François readily admits that<br />
she’s a bad loser: ‘My father always says that<br />

geste très répétitif qui sollicite continuellement les muscles du poignet<br />
et des doigts. Et je suis vraiment stressée quand je tape car je veux le faire<br />
avec conviction, ce qui contracte encore plus les muscles. » À Hollywood,<br />
on décrirait Populaire comme une sorte de mix entre Rocky, Mad Men et<br />
My Fair Lady, le tout revisité à la sauce française. Le fi lm suit les eff orts<br />
de la jeune et maladroite Rose pour devenir championne internationale<br />
de dactylographie et prouver ce qu’elle vaut, tout en gagnant le cœur de<br />
son patron, un homme froid mais au cœur d’or joué par Romain Duris.<br />
Avec son ambiance rétro et son héroïne à la fois douce et forte qui lui ont<br />
déjà valu d’être comparé au Fabuleux destin d’Amélie Poulain, Populaire fait<br />
partie de ces comédies légères qui, apparemment vouées au désastre sur<br />
papier, charment le public une fois portées à l’écran, grâce notamment à<br />
l’interprétation de Déborah François, mais aussi au suspense généré par<br />
les scènes de championnat de dactylographie, très ingénieusement fi lmées.<br />
Mais rassurez-nous, Déborah, ces concours attirant des groupies dignes<br />
des Rolling Stones sont bien une pure invention ?<br />
« Non, c’est ça qui est fou ! s’exclame-t-elle. Ils ont vraiment existé mais<br />
sont tombés dans l’oubli. Il reste peu d’images d’archives. Le réalisateur<br />
Régis Roinsard m’a dit qu’ils avaient vraiment existé et qu’ils étaient nés<br />
aux États-Unis dans les années 1920 avant d’arriver en France dans les<br />
années 40 et 50, où ils ont connu un énorme succès. On en parlait dans<br />
les journaux, et les gagnantes recevaient des prix d’une grande valeur pour<br />
l’époque, comme une montre ou une machine à écrire très chère. C’était<br />
quelque chose d’important, comme une version sportive de Miss Monde.<br />
Apparemment il y a encore des concours de ce genre aujourd’hui, mais à<br />
l’abri des regards, sur ordinateur. »<br />
La concurrence est l’un des thèmes principaux du fi lm, et l’actrice admet<br />

good losers are bad winners. I’m a good<br />
winner.’ She had to see off 150 actress to play<br />
Rose. She’s too smart a cookie, however, to be<br />
drawn by a question about whether as a Belgian<br />
actress – who’s recently permanently moved to<br />
Paris – she’s experienced any rivalry with the<br />
French actresses she’s going up against for<br />
roles on their home turf, saying only, ‘I’m<br />
lucky in that I’ve had a rather strange destiny<br />
and I’ve jumped on opportunities when they’ve<br />
presented themselves.’<br />
The fi rst manifestation of this ‘strange destiny’<br />
– which has already garnered François two<br />
Césars (the French Oscars) – was being cast as<br />
a novice in a lead role in L’Enfant, a gritty yet<br />
beautifully fi lmed drama by the Dardennes<br />
brothers. This aft er the spunky 17-year-old<br />
sent a letter to the directors, who also hail<br />
from Liège. The fi lm would go on to win a<br />
Palme d’Or at Cannes in 2005.<br />
The actress fondly recalls its fi rst offi cial<br />
screening at the festival: ‘It was a very moving<br />
experience, because it was the fi rst time that I<br />
actually saw people watching this fi lm. It was<br />
my fi rst movie and I was really afraid of what<br />
they might think. It was incredible because it<br />
got a standing ovation of several minutes.’<br />
François now dreams of playing a baddie or<br />
doing an action fi lm which, let’s face it, should<br />
prove a doddle aft er the gruelling typewriting<br />
sessions she endured for Populaire. But fi rst<br />
there is another promotional trip to Hong Kong<br />
scheduled in the next few days, and not wanting<br />
to be blamed for some weird worldwide fl u<br />
epidemic, I shoo François back to her bed,<br />
where she belongs.<br />

volontiers être mauvaise perdante : « Comme mon père dit toujours, ‘les<br />
bons perdants sont de mauvais gagnants’. Je suis une bonne gagnante. »<br />
Elles étaient 150 en lice pour le rôle de Rose, mais Déborah est trop<br />
fi ne pour se laisser entraîner sur le terrain des rivalités éventuelles entre<br />
elle, l’actrice belge installée à Paris, et ses homologues françaises : « J’ai<br />
la chance d’avoir eu un destin plutôt étrange, et j’ai toujours saisi les<br />
opportunités quand elles se présentaient », répond-elle simplement.<br />
Ce « destin étrange » (qui lui a déjà valu deux César) s’est pour la<br />
première fois manifesté lorsque, à 17 ans et sans expérience, elle a<br />
obtenu le rôle principal de L’Enfant, le drame sombre mais magnifi que<br />
tourné par les frères Dardenne, eux-mêmes originaires de Liège en<br />
Wallonie francophone. Le fi lm a remporté la Palme d’Or à Cannes en<br />
2005. L’actrice reprend un peu de couleurs au souvenir de la première<br />
projection offi cielle.<br />

« C’était très émouvant, car c’était la première fois que je voyais des<br />
gens regarder le fi lm. C’était mon premier fi lm, et j’avais très peur de leur<br />
jugement. C’était incroyable, il y a eu une standing ovation. C’est là que<br />
j’ai compris que ce fi lm appartenait maintenant aux autres. »<br />
Est-elle blasée ? « Non, ça m’émeut toujours de voir mes fi lms en<br />
public, mais ça ne me fait plus aussi peur. J’ai appris à me protéger… »<br />
Après avoir récemment mis en boîte les dernières scènes d’Il est parti<br />
dimanche de Nicole Garcia (sortie cet été), elle rêve maintenant de jouer<br />
les méchantes ou de tourner un fi lm d’action, ce qui devrait être une<br />
promenade de santé après les heures de dactylographie endurées pour<br />
Populaire. Mais une autre promo l’attend dans quelques jours, à Hong<br />
Kong. Ne souhaitant pas être tenue responsable d’une épidémie mondiale,<br />
je renvoie Déborah François à son lit qu’elle n’aurait jamais dû quitter.<br />

“het is de vogelgriep, ik<br />

verliezen!” Déborah François<br />
overdrijft waarschijnlijk, maar<br />
inderdaad, ze ziet er niet gezond<br />
uit. Ze zou eigenlijk onder de wol<br />
moeten liggen in plaats van hier<br />
tegenover een onbarmhartige<br />
journalist te zitten die haar op deze<br />
natte, grauwte dag in Parijs uit haar<br />
bed heeft gesleurd.<br />
Niet de meest veelbelovende start<br />
van een interview, maar ondanks<br />
haar griep is de van oorsprong<br />
Luikse actrice prettig gezelschap.<br />
Ze vermoedt dat ze de kwalijke<br />
bacterie een paar dagen eerder heeft<br />
opgelopen in New York, tijdens de<br />
promotie van haar nieuwste fi lm,<br />
Populaire. Wel wat anders dan de<br />
Amerikaanse cheesecake waar ze<br />
zich op verheugd had.<br />
Zonder make-up en gekleed als<br />
een actrice op verlof (sjaal, trui met<br />
afb eelding, jeans en high-tops) doet<br />
François in niets denken aan Rose<br />
Pamphyle, de jaren 50-ster die<br />
ze speelt in de Franstalige fi lm en<br />
die ze omschrijft als een stripheld.<br />
Om zich vertrouwd te maken met<br />
de levendige kant van Rose dook<br />
ze in de wereld van Lily Allen en<br />
Lady Gaga’s ‘Paparazzi’, maar haar<br />
grootste uitdaging was om binnen<br />
zeven maanden een supersnelle<br />
typiste te worden. Typen is duidelijk<br />
niet voor watjes. “Ik had nooit<br />
durven vermoeden dat het zo zwaar<br />
zou zijn. In het begin zat ik om de<br />
twee dagen bij de fysiotherapeut en<br />
was ik zelfs bang voor blessures.”<br />
Als je Populaire in Hollywoodtermen<br />
aan moest prijzen, zou je de<br />
fi lm omschrijven als een kruising<br />
tussen Rocky, Mad Men en My<br />

Déborah François kan niet tegen haar verlies en het is daarom maar goed, schrijft Marie-Noelle Bauer,<br />
dat de filmrollen en prijzen binnen blijven stromen voor de 25-jarige Belgische actrice<br />
Fair Lady – maar op zijn Frans. De<br />
fi lm gaat over het streven van de<br />
klunzige Rose om internationaal<br />
schrijfmachinekampioen te worden,<br />
te bewijzen dat ze geen mislukking<br />
is en in één moeite door het hart te<br />
veroveren van haar barse-maar-ozo-aardige<br />
baas (gespeeld door de<br />
Franse hartenbreker Romain Duris).<br />
Populaire is een van die levendige<br />
komedies die op papier hopeloos<br />
klinken, maar op het witte doek<br />
meteen je hart veroveren.<br />
Keiharde concurrentie is een<br />
hoofdmotief in de fi lm en François<br />
erkent ruiterlijk dat ze niet tegen<br />
haar verlies kan. “Mijn vader<br />
zegt altijd dat goede verliezers<br />
slechte winnaars zijn. Ik ben een<br />
goede winnaar.” Voor haar rol als<br />
Rose moest ze in de audities de<br />
concurrentie aan met 150 andere<br />
actrices. Ze gaat echter niet in op<br />
de vraag of ze als Belgische actrice<br />
(die sinds kort in Parijs woont) veel<br />
rivaliteit ondervindt van Franse<br />
actrices die ze tijdens de audities in<br />
Frankrijk tegenkomt. Het enige wat<br />
ze erover kwijt wil, is dat ze “geluk<br />
heeft gehad met een wat vreemde<br />
lotsbestemming en gebruik heeft<br />
gemaakt van de mogelijkheden die<br />
zich hebben aangediend.”<br />
De eerste manifestatie van deze<br />
‘vreemde lotsbestemming’ – ze<br />
ontving al twee Césars, het Franse<br />
equivalent van de Oscar – was haar<br />
hoofdrol als volslagen nieuweling<br />
in The Child, een prachtig verfi lmd<br />
drama van de gebroeders Dardenne.<br />
Als 17-jarige kreeg ze de rol na een<br />
brief aan de regisseurs, eveneens<br />
afk omstig uit het Waalse Luik.<br />
De fi lm werd in 2005 in Cannes<br />
beloond met een Palme d’Or. Als ze<br />
terugdenkt aan de eerste offi ciële vertoning van<br />
de fi lm tijdens het festival, verschijnt er eindelijk<br />
wat kleur op haar gezicht.<br />
“Het was een geweldige emotionele belevenis,<br />
omdat ik voor het eerst mensen naar deze fi lm<br />
zag kijken. Het was mijn eerste fi lm en ik was<br />
doodsbang voor het commentaar dat ik zou<br />
krijgen. Maar het was onvoorstelbaar. Ik kreeg<br />
een minutenlange staande ovatie. Op dat moment<br />
beseft e ik dat de fi lm echt aanvaard was.”<br />
François zou nu dolgraag eens een slechterik<br />
spelen, of in een actiefi lm, wat – laten we eerlijk<br />
zijn – een fl uitje van een cent zou zijn na de<br />
moordende schrijfmachinesessies die ze voor<br />
Populaire moest doorstaan. Maar eerst staat<br />
er de komende dagen nog een promotietrip<br />
naar Hongkong op het programma, en om niet<br />
beschuldigd te worden van het veroorzaken van<br />
een wereldepidemie stuur ik François terug naar<br />
waar ze thuishoort, haar bed. Als ik later de<br />
dictafoon terugluister, kan ik een glimlach niet<br />
onderdrukken. Het eerste geluid dat ik namelijk<br />
hoor, is Deborah François die haar neus snuit,<br />
gevolgd door een onbedaarlijke lachbui.

As Normandy’s big Impressionism festival opens, Peter Watts<br />
conjures up a portrait of the flamboyant anarchist many call the<br />
godfather of the movement: Gustave Courbet<br />

Alors que s’ouvre le festival Normandie impressionniste,<br />
Peter Watts dresse un portrait du flamboyant Gustave Courbet,<br />
considéré comme le « parrain » de l’impressionnisme<br />

head cropped, thighs parted. The<br />
tangled triangle of pubic hair in the<br />
centre of the frame focuses attention<br />
as clearly as the painting’s title.<br />
With unequivocal precision, Gustave<br />
Courbet named his 1866 work The<br />
Origin of the World. It was deemed<br />
so scandalous that the owner, a<br />
Turkish-Egyptian diplomat, hid it<br />
behind a green curtain.<br />
This was typical of Courbet,<br />
whose unrepentant life has seen<br />
him described as ‘modern art’s fi rst<br />
enfant terrible’. Today The Origin of<br />
the World is at the Musée d’Orsay<br />
in Paris, but paintings by Courbet<br />
will be exhibited this summer as<br />
part of the Normandy Impressionist<br />
Festival which kicks off this month.<br />
In his own time, Courbet’s work,<br />
dense with sex and death, was oft en<br />
rejected by galleries; on one occasion<br />
he set up his own exhibition in<br />
protest, an act critics described as<br />
both ‘scandalous and anarchic’.<br />
Like all great artists, Courbet<br />
still yields surprises. In 2010, a<br />
painting of a woman’s head was<br />

L’œuvre faisait tant scandale que<br />
son propriétaire, un diplomate<br />
turco-égyptien, la cachait derrière<br />
un rideau vert. Typique d’un artiste<br />
à qui sa vie de bâton de chaise valut<br />
le qualifi catif d’enfant terrible de<br />
l’art moderne. L’Origine du monde<br />
est aujourd’hui au Musée d’Orsay<br />
mais des œuvres de Courbet seront<br />
visibles cet été dans le cadre du<br />
festival Normandie impressionniste<br />
qui démarre ce mois-ci. De son<br />
vivant, ses œuvres empreintes<br />
de sexe et de mort étant souvent<br />
rejetées par les galeries, il monta<br />

discovered in a junk shop, which in February <strong>2013</strong> the<br />
Gustave Courbet Institute announced was an original<br />
part of The Origin of the World. The head had been<br />
severed from the canvas – perhaps by Courbet himself, to<br />
protect the modesty of his model Joanna Hiff ernan (also<br />
the model for Whistler’s Symphony in White, No 1). With<br />
this violent deed, he created a new work of unambiguous<br />
and unsettling eroticism that pre-empted Hans Bellmer,<br />
Marcel Duchamp, Francis Bacon and Tracey Emin.<br />
It was an act entirely in keeping with Courbet’s<br />
personality. His forceful nature can be glimpsed in an<br />
early self-portrait, 1843–5’s The Desperate Man (previous<br />
page), in which he stares from the canvas with Byronic<br />
intensity, hands pulling desperately at his mane.<br />
Born in 1819, Courbet arrived in Paris in 1839 determined<br />
‘to change the public’s taste and way of seeing’. His fi rst<br />
submissions were rejected by the infl uential annual Paris<br />
Salon exhibition, but by 1848 he had 10 works on<br />
display. This turnaround was partly due to Courbet’s<br />
developing style. Inspired by the Spanish and Dutch<br />
masters, he travelled to Amsterdam to envelop himself in<br />
Dutch art, and upon his return demonstrated a devotion<br />
to rough textures. He applied coarse paint, oft en mixed<br />

with sand, in thick slabs using a palette knife or even his<br />
thumb. Technique matched subject. Courbet portrayed<br />
the hardship of peasant life in paintings like 1849’s<br />
vivid, unsentimental The Stonebreakers, capturing the<br />
public mood aft er the 1848 revolution.<br />
Courbet was christened a Realist aft er he espoused his<br />
belief that art should show society at ‘its best, its worst,<br />
its average’. Later, Courbet’s friend, the political theorist<br />
Pierre-Joseph Proudhon, would articulate something of<br />
Courbet’s thinking in The Principles of Art, in which<br />
Proudhon argued that art had a social and moral<br />
purpose, that it must ‘improve us, help us and save us’<br />
by showing us ‘as we really are’. In 1851, Courbet<br />
unveiled A Burial at Ornans, a monumental and<br />
unromantic depiction of a graveyard scene in the French<br />
provinces painted on the sort of scale normally reserved
dans un vide-grenier et, en février <strong>2013</strong>, l’Institut<br />
Gustave Courbet révèle qu’il s’agit d’une partie<br />
de L’Origine du monde. La tête avait été coupée<br />
de la toile, peut-être par Courbet lui-même, pour<br />
préserver la pudeur du modèle, Joanna Hiff ernan<br />
(qui a aussi posé pour la Symphonie en blanc n°1 de<br />
Whistler). Par cette décapitation, Courbet a créé une<br />
nouvelle œuvre à l’érotisme explicite et dérangeant<br />

L’acte est représentatif de la personnalité de<br />
Courbet. Sa nature impétueuse transparaît dans<br />
l’autoportrait de ses débuts, Le Désespéré de 1843–5<br />
(p. 68-69), où son regard a une intensité byronienne<br />
et ses mains triturent sa chevelure. Né en 1819,<br />

évoluer les goûts et le regard du public. Si ses premières<br />
œuvres sont rejetées par l’infl uent Salon annuel<br />
parisien, en 1848 dix de ses toiles sont exposées. Ce<br />
retournement est en partie dû à l’évolution de son style.<br />
Inspiré par les maîtres espagnols et hollandais, il se<br />
rend à Amsterdam pour s’imprégner d’art fl amand. À<br />
son retour, il se tourne vers des textures grossières,<br />
appliquant la peinture brute, souvent mélangée à du<br />
sable, en couches épaisses, avec un couteau plat, voire<br />
avec le pouce. Et sa technique correspond au sujet. Il<br />
dépeint la rude vie paysanne, comme dans Les casseurs<br />
de pierres de 1849, qui refl ète l’humeur de l’après-<br />
révolution de 1848.<br />
Pour avoir déclaré que l’art doit montrer la société<br />
sous son meilleur, son pire et son moyen jour, Courbet<br />

for religious works. Parisians were<br />
appalled at the way Courbet presented<br />
the mourners. They damned the<br />
ordinariness of the scene and the<br />
ugliness of its execution.<br />
The controversies continued and<br />
later erotic works – such as 1866’s<br />
Baudelaire-inspired lesbian fantasy The<br />
Sleepers – were invariably banned. When<br />
Courbet had three paintings rejected at<br />
the 1855 Exposition Universelle –<br />
including the allegorical The Painter’s<br />
Studio – he thumbed his nose at the<br />
establishment by exhibiting 40<br />
paintings in a tent, named the Pavilion<br />
of Realism, for which he charged an<br />
admission fee. This contempt for his<br />
supposed betters was later emulated by<br />
a group of young artists who opened a<br />
rival exhibition aft er their paintings were<br />

rejected by the Salon in 1874. It was here that Monet,<br />
Renoir, Pissarro, Degas and Cézanne were fi rst dubbed<br />
the Impressionists. Like Courbet, the Impressionists<br />
painted scenes from everyday French life, while<br />
Courbet’s wild seascapes like 1870’s The Stormy Sea<br />
were a further infl uence. Impressionism was rooted in<br />
rebellion; as one critic noted in 1949, ‘without Courbet<br />
the Impressionist movement could have begun a decade<br />
or so later than it did’.<br />
Courbet’s decline was typically dramatic. In 1871,<br />
as Paris convulsed in another uprising,<br />
Courbet assumed responsibility for the<br />
artistic policy of the Paris Commune.<br />
He advocated the removal of the<br />
Vendôme Column, ‘a monument<br />
devoid of all artistic value’, and it was<br />
dismantled. Aft er the Commune was<br />
crushed, Courbet was ordered to pay<br />
for the column’s reconstruction. He fl ed<br />
to Switzerland, where he drank himself<br />
to death in 1877 still raging against<br />
authority. In 1869, he had declared:<br />
‘When I am dead let this be said of<br />
me: “He belonged to no school, to<br />
no church, to no institution, to no<br />
academy, least of all to any regime<br />
except the regime of liberty.”’ No fi ner<br />
epitaph can there be.<br />

interdites. Lorsque Courbet se voit refuser trois toiles à<br />
l’Exposition universelle de 1855, dont l’allégorique<br />
Atelier du peintre, il fait un pied de nez à l’establishment<br />
en exposant 40 œuvres sous une tente baptisée Pavillon<br />
du réalisme, avec entrée payante. En 1874, un groupe de<br />
jeunes artistes imitera cette initiative osée en organisant<br />
une exposition rivale au Salon après le refus de leurs<br />
œuvres. C’est là que Monet, Renoir, Pissarro, Degas et<br />
Cézanne furent baptisés « impressionnistes ». Comme<br />
Courbet, ils peignent des scènes de la vie quotidienne, et<br />

Although his 1865 work Olympia was<br />
accepted, its brazen portrait of a courtesan<br />
horrified onlookers: ‘Only the precautions<br />
taken by the administration prevented the<br />
painting being punctured and torn.’<br />
Le Déjeuner sur l’herbe de Manet, avec<br />
sa femme nue, scandalise la société<br />
parisienne et est rejeté par le Salon. Bien<br />
que son Olympia de 1865 soit accepté,<br />
ce portrait effronté d’une courtisane<br />
horrifia le public. On dit que seules les<br />
précautions prises par les organisateurs<br />
empêchèrent que la toile soit vandalisée.<br />
Edgar Degas<br />
His Absinthe Drinker was clearly inspired<br />
by Courbet. Painted in 1876, this painting<br />
was still causing a scandal in 1892, when<br />
it was booed. Whereas Manet, like Courbet,<br />
was a Republican who relished the company<br />
of writers and philosophers, Degas was a<br />
reactionary and anti-intellectual with a<br />
penchant for ballet dancers.<br />

L’impressionnisme s’ancre dans la rébellion et sans<br />
Courbet, comme l’a fait remarquer un critique en 1949,<br />
le mouvement aurait pu débuter dix ans plus tard.<br />
Le déclin de Courbet fut, bien évidemment,<br />
spectaculaire. En 1871, lorsque Paris se soulève à<br />
nouveau, il est chargé de la politique artistique de la<br />
Commune et ordonne le démantèlement de la colonne<br />
Vendôme, monument dénué selon lui de toute valeur<br />
artistique. Après l’écrasement de la Commune, on<br />
l’enjoint d’en payer la reconstruction. Il s’enfuit en<br />
Suisse où sans rien perdre de sa rage contre l’autorité<br />
il se saoule jusqu’à en mourir en 1877.<br />
En 1869, il avait déclaré : « Quand je serai<br />
mort, il faudra qu’on dise de moi : ‘Celui-là n’a<br />
jamais appartenu à aucune école, à aucune église,<br />
à aucune institution, à aucune académie, surtout à<br />
aucun régime, si ce n’est le régime de la liberté.’ »<br />

Berthe Morisot<br />
Morisot was an innovator who balanced<br />
her career with marriage and pioneered<br />
outdoors painting (plein air). She married<br />
Manet’s brother, but before that Manet<br />
painted her numerous times. People still<br />
speculate about the symbolism of those<br />
paintings: do all those violets, letters and<br />
fans imply she was a closet lesbian?<br />
Morisot, l’une des quatre principales<br />
impressionnistes, était novatrice, alliant<br />
carrière et mariage, et lança la peinture en<br />
plein air. Avant qu’elle ne se marie avec le<br />
frère de Manet, celui-ci la peignit souvent<br />

From your Eurostar train,<br />
head to the quick connections<br />
exit between Eurostar coaches<br />
11 and 16 (see map). This is<br />
the quickest route to access<br />
the platforms for onward<br />
journeys. Just follow the<br />
‘Correspondances’ signs.<br />
There is another exit at the end<br />
of the platform leading to the<br />
main station area. Both exits<br />
lead to the ground fl oor.<br />
ON THE GROUND FLOOR<br />
From the quick connections<br />
exit, turn left out of the<br />
double doors and look for<br />
your connecting train on the<br />
departure boards (see green<br />
arrows on map).<br />
High Speed trains to various<br />
destinations, including<br />
Amsterdam and Cologne,<br />
normally depart from platforms<br />
3–6, but please do check the<br />
departure boards to be sure.<br />
For ‘Any Belgian Station’<br />
including Bruges and Ghent,<br />
remember to look out for the<br />
terminating station on the<br />
departure boards. For Bruges<br />
this tends to be either Ostend<br />
or Knokke/Blankenberge.<br />
For Ghent it can be Ostend,<br />
Knokke/Blankenberge or<br />
De Panne.<br />
~ CONNECTING IN LILLE ~<br />
For connections to French provinces, head upstairs from<br />
the platform to the main station. On the departure board,<br />
look for your train time and number to fi nd the platform<br />
for your onward train. Trains are normally displayed on<br />
the departure board around 15 mins before. There’s also<br />
a Railteam Information Point in the middle of the station<br />

OUR POLICY<br />
If you’ve got an adult ticket, it includes<br />
a maximum of 2 bags (each one needs<br />
to be smaller than 85cm at its longest<br />
length) and a small item of hand luggage.<br />
Anyone travelling with a child’s ticket<br />
can take 1 bag (again, smaller than<br />
85cm at its longest length) and a small<br />
item of hand luggage.<br />
Don’t forget, with Eurostar there’s no<br />
need to check in your bags. And, as long<br />
as you can carry your own baggage on<br />
board, there are no weight restrictions.<br />
So, go ahead. Throw in that extra pair<br />
