A qualified Food Technologist, Oonagh Monahan is a high calibre food<br />
business specialist with extensive experience in managing the technical<br />
and business development aspects for food producers. Oonagh has<br />
specific experience in how to set up a food business from scratch, market<br />
development, working with the Environmental Health Officers, finding<br />
suppliers of packaging and ingredients, product development, food safety,<br />
food quality, sales routes, costs and pricing, labelling, compliance with<br />
legislation, dealing with retailers and branding. She has written five “How To”<br />
guides for dairy (ice cream, yogurt and cheese), value added meats, rural<br />
abattoirs, duck egg production and setting up a smokehouse.<br />
Since setting up Alpha Omega Consultants in 2008, Oonagh has<br />
worked with food producers across the island, including sheep farmers<br />
in Co.Wicklow (Feasibility Study), pig farmers in Fermanagh, bakers,<br />
jam makers, soup producers, ready meal producers, trout and salmon<br />
smokeries, boxty makers, and over 50 startup small food producers in the<br />
West of Ireland covering everything from wheatgrass and organic vegetable<br />
growers to microbreweries and cream liqueur blenders. She is also a food<br />
business mentor with Enterprise Ireland.
