Jainin’s Cake and Pastries<br />

A Hobby, Now A Business<br />

Since she was single, Josephine Chan was fond <strong>of</strong> baking. Her family and friends were the first<br />

satisfied customers <strong>of</strong> the cakes and pastries that she baked.<br />

In 2000, Josephine started Jainin’s Cakes and<br />

Pastries, named after her two kids, Jai-Jai and Niño.<br />

Her first product was tortalita, which she named after<br />

her mother, Lita. Macaroons, assorted bars and<br />

desserts, cakes and rolls followed.<br />

Josephine’s husband, Edgardo, is no stranger<br />

either to baking. As a boy, he helped in their<br />

bakery in Calamba, Laguna. He was later<br />

employed in Dunkin’s performing accounting tasks.<br />

Both skills came in handy in their own business.<br />

<strong>DOST</strong> was known to the members <strong>of</strong> the Siquijor<br />

Association <strong>of</strong> Food Entrepreneurs (SAFE) <strong>of</strong> which<br />

Josephine is a member. After identifying their needs,<br />

a proposal was submitted to <strong>DOST</strong> for <strong>SET</strong>-<strong>UP</strong> and<br />

in 2006, Jainin’s Cakes and Pastries became a<br />

recipient <strong>of</strong> a technology upgrade assistance.<br />

A 16-plate oven was added to Jainin’s 2-plate oven,<br />

increasing their production capacity, eight times. A<br />

planetary mixer replaced the manual mixing done<br />

which was not only tiresome but consumed a lot <strong>of</strong><br />

time. A heavy-duty blender increased efficiency.<br />

The ordinary working table made <strong>of</strong> wood was<br />

replaced by two stainless-topped tables. Unlike<br />

in the past where cakes could not be attractively<br />

displayed, a 7-foot chiller made this possible. The<br />

even and fine texture <strong>of</strong> icing on cakes, which could<br />

not be consistently done manually, can now be<br />

achieved through the <strong>DOST</strong>- acquired cake<br />

decorating set. <strong>DOST</strong> also assisted Jainin’s with<br />

improved packaging <strong>of</strong> their products. All these<br />

increased productivity and sales.<br />

The market for bakery products is good but owners<br />

are faced with the problem <strong>of</strong> increasing prices <strong>of</strong><br />

raw materials. <strong>Product</strong> innovations are underway<br />

using vegetable-based ingredients. A plan to supply<br />

eateries in Siquijor, to have a separate production<br />

and display area and the possible acquisition <strong>of</strong><br />

additional equipment are being considered.<br />

This business, that started only as a hobby, is<br />

paying <strong>of</strong>f. Jai-Jai and Niño are also learning.<br />

Who knows, this will also become their hobby.<br />
