2 T butter<br />

Sift together flour, salt and baking powder. Work in lard lightly.<br />

Add just enough cold water to make a dough. Chill. Roll out 1/4 inch<br />

thickness. On one half sprinkle 4 T of grated cheese, dash of<br />

paprika and dot with butter. Fold dough over, press edges together<br />

and repeat two times. Cut in straws or small shapes. Bake 15 minutes<br />

DOUGHNUTS<br />

2 eggs, well beaten<br />

1 1/2 C sugar<br />

2 T melted lard<br />

1 C buttermilk or sour milk<br />

1 level t soda<br />

1/2 t salt<br />

Nutmeg<br />

1 heaping t baking powder<br />

Combine all ingredients. Sift baking powder in enough flour to make<br />

rather stiff dough. Cut out and let stand fifteen minutes. <strong>The</strong>n fry<br />

in hot lard. Roll in sugar. --Christina D. Kern.<br />

Note: Mrs. Geo. Smith uses only 1 C sugar and 4 T melted lard.<br />

FRIED CAKES<br />

2 eggs<br />

1 C sugar<br />

2/3 C sour milk<br />

2 T melted butter or lard<br />

Flour<br />

1 1/4 t soda<br />

1 1/2 t cream tartar<br />

1 t salt<br />

1/2 t nutmeg<br />

Sift soda, cream tartar, salt and nutmeg with flour (about 4 cups).<br />
