Easter Chocolate Brownies

Ingredients
Makes 12
150g dark chocolate, chopped
100g butter
½ teaspoon vanilla extract
300g caster sugar
4 medium eggs
150g self-raising flour
Optional: 50g raisins or chopped stem
ginger
12 mini crème eggs or 12 mini Malteser
bunnies
Method
Preheat oven to 180C, 160 fan or gas 4
Base line a small swiss roll tin(27cm x 17cm x 3cm) with baking parchment
Place chocolate and butter in a basin and microwave for 30 second blasts until melted or place basin over a pan of hot water
and stir until melted.
Stir in the vanilla extract and caster sugar, mix well
Beat in the eggs one at a time and stir in the flour and ginger or sultanas
Pour into prepared tin and smooth surface. Place unwrapped chocolates neatly on top pressing in slightly.
Bake for 30 – 40 minutes until the mixture is set but still moist. Cool in the tin on a wire rack and cut into pieces.
Serving suggestion – warm slightly in the microwave and serve with ice cream as a dessert
