black pepper,” says dietitian Cynthia Sass.<br />
“A natural substance in the latter spice<br />
helps boost turmeric’s absorption from the<br />

Roast chicken with lemon and garlic<br />

Ingredients<br />
1.8kg chicken, cleaned<br />
30g butter, softened<br />
6 garlic cloves, skin on<br />
1 lemon, zest finely grated<br />
2 tbsps chopped parsley<br />
2 tsps sea salt flakes<br />
cracked black pepper<br />
Method<br />
• Preheat oven to 200°C.<br />
• Using kitchen scissors, cut<br />
along both sides of chicken<br />
backbone and discard. Cut<br />
thigh, leg and wing portions<br />
from chicken. Slice breast<br />
either side of breastbone.<br />
Discard breastbone. You<br />
will have 8 pieces.<br />

• Rub chicken pieces with<br />
butter. Place thighs, wings and<br />
drumsticks, skin side up, in a<br />
greased baking dish. Place<br />
a garlic clove under each piece.<br />
Roast for 15 minutes. Refrigerate<br />
breasts until required.<br />
• Meanwhile, in a small<br />
bowl, combine zest, parsley,<br />
salt and pepper. Cut lemon<br />
into 6 wedges.<br />
• Place chicken breasts in the<br />
baking dish, skin side down.<br />
Roast for 10 minutes. Turn<br />
and baste with pan juices. Add<br />
lemon wedges and sprinkle<br />
chicken with zest mixture.<br />
Roast for a further 15 minutes<br />
until chicken is cooked through.
