SLOW COOKER LAMB TAGINE SERVES 4 Ingredients: 900g lamb shoulder, neck or leg (cut in chunks) 1 tbsp olive oil 1 onion chopped 3 carrots, chunked 2 tsp res-el-hanout 1 tsp cumin 1 tbsp tomato puree 1 chicken/lamb stock cube/pot 1 sweet potato, chunked 30g dried cherries ½ tsp honey ½ bunch coriander Method: Fry off the lamb and tip into slow cooker. Fry onion in same pan for 5 mins. Add carrots, spices, puree, stock and 250ml water. Stir and add to slow cooker. Add sweet potato, cherries, honey and another 500ml water. Cook on low for 8hrs or high for 4hrs. Stir in coriander before serving.
