THE EVER POPULAR GRANNY FU DESSERT<br />
AT BANGKOK AIRWAYS LOUNGES<br />
The story started fifteen years ago when<br />
Dr. Prasert Prasarttong-Osoth (Chief<br />
Executive Officer) would go for a run in<br />
Bangkok’s Lumphini Park. Before heading<br />
home, he would stop to buy some sweets<br />
from Yai Fu (Grandma Fu), a vendor who<br />
sold home-made <strong>Thai</strong> desserts in a corner<br />
of the park. Among the variety of desserts,<br />
the coconut-based sticky rice pudding<br />
called Khao Tom Pad seemed to be the<br />
most popular – wrapped in bite-sized<br />
goodness, rich in flavour and sweet, but<br />
not too sweet. Now a regular customer,<br />
Dr. Prasert – in just a few months used<br />
his visionary business instincts and<br />
suggested to Yai Fu that she makes Khao<br />
Tom Pad to be served in the Bangkok<br />
Airways passenger lounges.<br />
The addition of this new item in the<br />
lounge – which usually offered cakes,<br />
pies and sandwiches – began a new era<br />
in a business partnership between the<br />
airline and Yai Fu. Dr. Prasert was quite<br />
confident that the sticky rice pudding<br />
would win the hearts of Bangkok Airways<br />
customers. Today, almost every passenger<br />
who comes into the lounge would never<br />
fail to pick up a piece of two from the tray<br />
of Khao Tom Pad. It marked a new chapter<br />
for Yai Fu and her business of sweets as it<br />
became a steady source of income for her<br />
family and benefitted three generations.<br />
Yai Fu’s Khao Tom Pad remains part of the<br />
Bangkok Airways success story based on<br />
the desire of each party to create the best<br />
product in a business partnership that’s<br />
based on mutual trust.<br />
And the secret to the special Khao<br />
Tom Pad? It’s about the great care taken<br />
in each and every step of its creation from<br />
beginning to end, particularly in the<br />
selection of ingredients. The leaf must<br />
come from the Namwa variety of banana<br />
trees because the gold colour of the young<br />
leaves when cooked does not darken. The<br />
banana for the filling must be seedless, ripe,<br />
firm but not too sweet; while the fragrant<br />
milk is squeezed from coconuts from<br />
Thap Sakae district. The sticky rice itself<br />
must be harvested during mid-season to<br />
ensure the highest quality in rice grains.<br />
Now the sticky rice with the banana<br />
centre, dotted with black beans and cooked<br />
in a creamy coconut milk, and wrapped<br />
in its golden banana leaf –still stands out<br />
among the snacks and sandwiches served<br />
in the lounges. It is a source of pride for<br />
one grandmother and for Bangkok Airways.<br />
In this prototype relationship, this success<br />
story can only be a win-win for both.<br />

ทุกครั้งที่คุณหมอปราเสริฐ ปราสาททองโอสถ<br />

สวนลุมพินี ก่อนกลับบ้านจะต้องแวะไปที่หาบขนม<br />
ของคุณยายฟู คงดั่น ที่ทำขนมไทยหลากหลาย<br />
ชนิดมาตั้งขายประจำที่นั่น มีทั้งข้าวต้มมัด ขนมเทียน<br />
ขนมใส่ไส้ ฯลฯ หมุนเวียนไป แต่ทั้งหมดนั้น ข้าวต้มมัด<br />
เป็นสิ่งที่ติดอกติดใจของทุกคน ด้วยขนาดพอดีคำ<br />
และหวานมันกำลังดี เมื ่อคุณหมอเป็นลูกค้าประจำ<br />
ได้ระยะหนึ่ง จากการเป็นนักธุรกิจที่เห็นการณ์ไกล<br />

การผลิตตั้งแต่ขั้นตอนการเลือกวัตถุดิบ ไม่ว่าจะ<br />
เป็นใบตอง ที่จะต้องเป็นใบตองน้ำว้า ผ่านการเลี้ยง<br />
แบบบำรุงใบ เพื่อให้ได้ใบตองสีทอง และไม่เปลี่ยน<br />
เป็นสีดำเมื่อนำไปนึ่ง กล้วยที่ใช้จะต้องไม่มีเมล็ด เป็น<br />
กล้วยกระดังงา คือไม่สุกหรือดิบจนเกินไป กะทิจะ<br />
ต้องเป็นกะทิทับสะแก 100% ข้าวเหนียวจะต้องเป็น<br />
ข้าวเหนียวกลางปีเท่านั้น เพื่อควบคุมคุณภาพของ<br />
ข้าวต้มมัดให้อร่อยเหมือนกันทุกชิ้นจะมีการสุ่ม<br />
ตรวจความพอดีในขั้นตอนการผัดก่อนที่จะนำไปนึ่ง<br />
ซึ ่งบางครั้งคุณภาพข้าวเหนียวไม่เป็นไปอย่างที่<br />
ต้องการ คุณยายฟูจะให้เททิ้งและทำใหม่ทันทีเพื่อให้<br />
ได้รสชาติคงที่และนำส่งได้ทันเวลา<br />
